UPSIDE-DOWN OOEY GOOEY CHOCOLATE CUPCAKES



Upside-Down Ooey Gooey Chocolate Cupcakes image

These are so good. When inverted onto a rack, all the gooey good stuff is on the top. This recipe makes 12 cupcakes, but my advise is make a double recipe of these delicious cupcakes, they will be gone in a flash!

Number Of Ingredients 16

1/4 cup butter or 1/4 cup margarine, melted
1/2 cup brown sugar, firmly packed
1 tablespoon water
36 -48 walnut halves
1 cup cake flour, sifted
1/3 cup baking cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup margarine, softened or 1/4 cup shortening, melted
3/4 cup white sugar
1 egg
1 teaspoon vanilla
1/2 cup water or 1/2 cup 1% low-fat milk
2/3 cup sweetened condensed milk
1 cup semi-sweet chocolate chips
2 tablespoons butter

Steps:

  • Set oven to 350 degrees.
  • Grease very well, 12 muffin cups.
  • In a small saucepan, combine the 1/4 cup melted butter, brown sugar and 1 Tbsp water; simmer for 1 minute.
  • Place 3-4 walnut halves in the bottom of each of prepared muffin cups.
  • Evenly divide, and pour the cooked mixture over the walnuts in the muffin cups.
  • In a bowl, sift together flour, baking cocoa, baking soda and salt; set aside.
  • Cream 1/4 cup butter (or shortening if using).
  • Gradually add 3/4 cup sugar, and continue creaming until light and fluffy.
  • Beat in egg and vanilla.
  • Blend in dry ingredients alternately with the 1/2 cup water (or milk if using), beginning and ending with the dry ingredients.
  • Fill the muffin cups 1/2 full with the batter.
  • Bake for 20-25 minutes, or until the cupcakes test done.
  • Remove from the muffin tins, let cool INVERTED on wire racks.
  • In a small saucepan, combine the sweetened condensed milk and the chocolate; cook over very low heat until smooth and thickened, stirring constantly (about 10 minutes).
  • Stir in 2 Tbsp butter; keep warm.
  • Spread on the sides of cup-cakes.
  • ENJOY!

The name says it all. And the thicker you spread the mixture the more ooey and gooey it gets, which is my own personal preference. This makes for a nice picnic or in my case a potluck in which everyone enjoyed. The spread doesn't have to be eaten all at once, so refrigerate whatever is leftover or want for later on.

1/2 cup strawberry jam
1/4 cup sugar-free chocolate syrup
1 1/2 tablespoons Splenda granular, sugar substitute
1 large banana, mashed
2 tablespoons liquid honey
12 slices whole wheat bread
6 slices tomatoes (optional)

Steps:

  • In a medium bowl mix everything, except the bread and tomatoes together.
  • Spread generously over one slice of bread and top it with a second slice of bread to make a sandwich.

6 tablespoons butter
1/2 cup milk
1 cup flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
3/4 cup sugar
1/2 teaspoon vanilla extract
6 tablespoons butter
3/4 cup brown sugar, packed
6 maraschino cherries
1 (20 ounce) can pineapple rings

Steps:

  • Heat oven to 350 degrees. Place butter and milk for the batter in a small saucepan over medium heat. Warm the mixture, stirring occasionally, until butter melts, the transfer to a small bowl to cool.
  • Meanwhile, prepare the pineapple topping. Into each cup of a 12 cup muffin pan, add 1/2 tablespoon of unmelted butter, the evenly sprinkle 1 tablespoon of brown sugar over the bottom. Place the pan in the oven until butter melts, about 3 minutes.
  • Halve each maraschino cherry, then cut the pineapple rings into quarters. Place a cherry half, sliced side up, in the center of each cup and lay pineapple quarters on each side. Press the fruit down gently into the butter/sugar mixture, then set prepared pan aside.
  • Finish making the batter. In a medium size bowl, combine the flour,baking powder, salt and stir the ingredients with a fork until they are evenly blended. In a large bowl, whisk together the eggs, sugar, and vanilla extract until smooth. Add the flour mixture to the egg mixture until the flour is fully incorporated. Add the milk-butter mixture and stir well to combine the ingredients into a smooth batter.
  • Pour the batter into the muffin pan, dividing it evenly among all the cups. Bake the cupcakes until they're lightly browned, dry around the edges, and pulling away from the pan a little, about 25 minutes.
  • Transfer the pan to a rack to cool for 5 minutes. Use a butter knife to carefully loosen each cupcake from the edges and bottom of the pan, then place a cookie sheet over the top. Invert the pan, turning the cupcakes onto the cookie sheet, then transfer them back to the rack to cool completely. Serve the cupcakes at room temperature. Make 12 cupcakes.

2 large purple yams (ube)
1 (6 ounce) jar macapuno coconut, chopped
4 large eggs, room temperature
2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup evaporated milk

Steps:

  • Peel and slice the yams into inch thick slices. Transfer into a medium pan, rinse, then cover with cool water. Bring to boil and simmer until tender. Mash with a fork.
  • Crack eggs into a large bowl. Beat with a whisk until yellows and whites are combined.
  • Gradually add sugar and whisk until combined.
  • Add oil and whisk until combined. Add chopped macapuno, mashed yams and vanilla and stir with a wooden spoon to combine.
  • Sift together flour, baking powder, baking soda, and salt in another bowl.
  • Add about a third of the flour mixture to the wet mixture and mix to combine.
  • Add about one half of the buttermilk and mix to combined.
  • Repeat above, alternating flour and evaporated milk and ending with the flour mixture.
  • Scoop into cupcake papers about half to two-thirds full (depending on whether you want flat or domed cupcakes. Note that these cupcakes will don't shrink. Two-thirds full will result in domed cupcakes.).
  • Bake for 22-25 minutes until a cake tester comes out clean.

These are, unfortunately, not my own creation. I got this off a series called Cupcake Diaries. The book is called Cupcake Diaries: Katie and the Cupcake Cure. I made these with my grandma once and I absolutely loved them! Baking them were so fun! I hope you have fun making them!

15 1/4 ounces yellow cake mix
1 cup sour cream
1/2 cup pineapple juice (use juice from canned pineapples, see topping)
1/3 cup vegetable oil
4 large eggs (room temperature)
1 teaspoon pure vanilla extract
8 tablespoons unsalted butter (melted)
3/4 cup light brown sugar (firmly packed)
1 (20 ounce) can crushed pineapple (drained -- set aside 1/2 cup of the pineapple juice for batter)
1 (16 ounce) jar maraschino cherries (optional)

Steps:

  • Center baking rack in oven and preheat to 350 degrees Fahrenheit. Grease cupcake tins well with butter or cooking spray.
  • Cupcakes: In a large mixing bowl combine all of the batter ingredients. With an electric mixer on medium speed, mix the ingredients together until there are no lumps in the batter. Spoon the batter into the cupcake tins so that each tin is about halfway full.
  • Topping: Mix the melted butter and brown sugar together with a spoon. Sprinkle about a teaspoon of the mixture on top of the cupcake batter in the tins. Now add a layer of about a tablespoon of pineapple. If you'd like, put one cherry on top, pressing it into the pineapple layer so it's level.
  • Bake the cupcakes about 18 to 20 minutes or until toothpick inserted into the center of a cupcake comes out clean. Remove from oven and place on a wire rack to cool for about 5 minutes. CArefully run a dinner knife around the edges of the cupcakes and invert the cupcake pan onto the wire rack. Let the cupcakes cool for about 20 minutes; and then enjoy!
