CHEDDAR, BACON, AND SCALLION CORNBREAD RECIPE

Bacon, cheddar, and scallions load this cornbread up with a salty, sharp, and smoky flavor that contrasts against the sweet and moist cornbread.

6 slice bacon, cut into 1/2-inch pieces
1 cup yellow cornmeal
1 cup all purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon Kosher salt
1/2 teaspoon baking soda
3/4 cup sour cream
1/2 cup buttermilk
2 large eggs
3 tablespoons melted butter, cooled slightly
6 ounces cheddar cheese, shredded
1/2 cup finely sliced scallions

Steps:

  • Preheat oven to 425°F. Cook bacon in a 10-inch cast iron skillet over medium-high heat until fat renders and bacon crisps, about 10 minutes. Transfer bacon to a paper towel lined plate. Pour bacon fat out into a small bowl. Return 2 tablespoons to pan and place pan in oven. Reserve an additional 2 tablespoons fat and discard the rest or save for another use.
  • In a medium bowl, whisk together cornmeal, flour, sugar, baking powder, salt, and baking soda. In a separate medium bowl, whisk together sour cream, buttermilk, eggs, 3 tablespoons melted butter, and 2 tablespoons reserved bacon fat. Pour wet ingredients into bowl with dry ingredients and whisk until completely combined. Stir in bacon, cheese, and scallions.
  • Using pot holders, carefully remove hot pan from oven. Pour in cornbread batter and place in oven. Bake until skewer inserted into middle of cornbread comes out clean, about 20 minutes. Let bread cool in pan for 5 minutes, then carefully turn out to wire rack and let cool an additional 10 minutes. Serve immediately. Reheat any leftover cornbread before serving again.

2 tablespoons chopped onion
4 tablespoons canola oil, divided
1 cup all-purpose flour
1 cup cornmeal
2 tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, room temperature
1 cup 2% milk
1/2 cup fresh or frozen corn, thawed
1/3 cup shredded cheddar cheese
1/4 cup salsa
2 tablespoons minced chives

Steps:

  • Preheat oven to 425°. In a small saucepan, saute onion in 1 tablespoon oil until tender; set aside. , In a large bowl, combine flour, cornmeal, sugar, baking powder and salt. In another bowl, whisk eggs, milk and remaining oil. Stir in corn, cheese, salsa, chives and reserved onion. Stir into the dry ingredients just until combined., Transfer to a greased 9-in. square baking pan. Bake until a toothpick inserted in the center comes out clean and top is lightly browned, 20-25 minutes. Cut into squares; serve warm.

1.5 cups cornmeal
1 cup flour
2 tsp baking powder
3/4 tsp salt
1/4 cup sugar
1 cup shredded cheddar cheese
6 strips bacon
2 jalapeños, seeds removed
1 cup milk
1/4 cup butter

Steps:

  • Preheat oven to 400°F.
  • Fry bacon in 8-10" cast iron skillet over medium heat. Turn occasionally and cook until crispy, about 10 minutes. Remove bacon to paper towel lined plate. Put skillet in oven.
  • Melt butter and mix with milk and eggs in a bowl.
  • In large bowl, mix cornmeal, flour, baking powder, salt and sugar. Chop jalapeños, crumble bacon and add to the mixture.
  • Add wet mixture to the bowl and mix well with a fork.
  • Remove skillet fro oven and place on a trivet. Pour cornbread mixture into hot skillet. Place in oven and bake 25 minutes. Test for doneness by sticking toothpick in to center of cornbread. If it is wet when you pull it out, bake an additional five minutes.
  • When done, remove cornbread from oven and let rest 5-10 minutes. Cut and serve with butter.
