THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

Steps:
- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

From Cottonwood, Arizona, Mary Ann Gove shares her special recipe for no-cook applesauce. "It's extra-healthy since no nutrients are lost in cooking," she notes. "Honey makes it sweet enough to satisfy as dessert."

QUICK HOMEMADE APPLESAUCE - NO SUGAR ADDED
A quick, easy homemade applesauce recipe that I served with potato latkes this year. It has no added sugar, which makes it a better option for diabetics and low-carb people and others who avoid cane sugar. But if you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). Don't leave out the salt, it's a necessary ingredient for a good applesauce!

Steps:
- Peel and core apples (I prefer to leave the skin on a few of them because I like the taste and texture). Cut apples into approximately 1 inch cubes.
- Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly.
- Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more water if necessary. Remove lemon slices.
- Mash with a potato masher or use a food mill for a smoother consistency. Serve warm or at room temperature.

APPLESAUCE FOR THE FREEZER
There is nothing better than homemade applesauce with hand-picked apples, and it is so easy to do! If you want chunky applesauce, use a potato masher to mash the cooked apples. If you prefer smooth apple sauce, run the cooked apples through a food mill. The key is adding a few strips of lemon peel to the apples while cooking. The lemon heightens the apple flavor. Make sure you use a good cooking apple like Golden Delicious, Granny Smith, Fuji, Jonathan, Mcintosh, or Gravenstein. Ready to serve as soon as you're done, either hot or refrigerated. Delicious with vanilla ice cream or vanilla yogurt. Freezes easily, lasts up to one year in a cold freezer.

RAW APPLESAUCE
Applesauce, raw & fresh! This simple recipe comes from the Honey Acres Beekeeper's Best Honey Cookbook. Although any type of apple could be used here, I prefer either the gala or fuji. And, instead of apple juice, one could substitute orange juice or pineapple juice.

ALMOST UNSWEETENED APPLESAUCE ( HOMEMADE )
Very tasty applesauce that's easy! Why buy processed when you can make it? I often make this up and freeze in small containers to use up those apples that are just past their prime. This recipe has very little sugar in it and you can always use Splenda instead if you like.

Steps:
- core apples.
- you may peel them if you'd like, i personally like the skins on.
- dice into bite-sizeish pieces.
- add enough water to cover about half the apples (you can always add more, but once it starts cooking it's hard to remove it, so err on the side of too little).
- add cinnamon and cloves.
- cook on high until the apples start to mush down.
- turn to low and let simmer until it seems done.
- don't forget to sample liberally.

- Add lemon juice or ACV and medjool date or maple syrup and spices if using and process until your desired consistency.
- This will keep in your refrigerator for about a week if you add lemon juice or ACV. If you don't, use it right away as it will start to brown and "turn".
