This recipe for Traditional Newfoundland Baked Beans have been made by many people throughout Newfoundland and Labrador for generations. They also have cooked their baked beans in a cast iron pot or ceramic pot, plus they made it over night in a wood burning stove. This recipe for baked beans I have recreated to take you back to those earlier days, by baking your beans in a cast iron pot and locking in the aroma you remember has a child. Slow baked in a cast iron pot to make these baked beans taste so delicious.I will share with you more delicious meals that will make you feel so good. Steps:
- Pre-heat 325° bake for 3:30 to 4:00 hours, covered. 1. In a medium bowl with lid add 2 cups of white pea beans top with cold water then cover, 1/2 tsp sea salt, leave soaking over night. 2. When ready to start making baked beans, you will need a cast iron pot or ceramic pot with cover. ( Also you can cook these beans in your slow cooker ) 3. Start with chopping your onions and add to the bottom of your cast iron pot. 4. Next drain all water off beans then put beans in a medium boiler with cover and top with new cold water and boil for 1 1/2 hours on medium heat with cover part way opened. 5. When boiling have completed drain water into a container and keep for soup or your baking, then add the beans to your cast iron pot. 6. Then add 5 cups of cold water to your pot, in a small bowl mix together the remainder of your ingredients except your pork. 7. Mix together, then pour over onions and beans in pot, mix together then top with fat pork or bacon. 8. Put lid on bake pot then place in a 325° oven for 3:30 to 4:00 hours, check half way through the bake time add more water if needed then cover and continue baking. 9. This is a serving for eight people if you like more double recipe. Bake beans can take a long time to make, I reduced bake time by adding a extra hour on the boiling process. 10. When baked beans are done remove from heat, serve hot or cold. If you would like to bottle them just follow the canning process. Always label and date your bottles before storing them.

Steps:
- Pour beans into casserole dish and stir in ketchup, onions, Worcestershire, brown sugar, cayenne, Tabasco, salt and pepper.
- Cover top of beans with strips of bacon if desired.
- Sprinkle additional brown sugar on top.
- Bake at 350°F for 2 hours.

These are the tastiest, most satisfying, the easiest, and the meatiest. They not only make a great side dish, but if the budget's a little tight, these will absolutely work as a main course. - Add dry beans to a bowl, cover with water, and let soak for 8 hours, or overnight.
- Drain beans and transfer to a large pot filled with 3 quarts of cold, fresh water. Add bay leaf, pork shoulder, and onion. Bring to a simmer over high heat. Reduce heat to medium-low and stir. Skim off foam if desired. Let simmer until beans are just tender, about 1 hour.
- While beans simmer, combine barbecue sauce, ketchup, vinegar, brown sugar, molasses, mustard, Worcestershire, smoked paprika, cayenne, black pepper, kosher salt, and garlic powder in a bowl with a whisk. Set aside until needed.
- Preheat the oven to 350 degrees F (175 degrees C).
- Transfer tender bean mixture to a deep, 15x10-inch baking dish using a spider strainer. Pour in barbecue sauce mixture and 2 ½ cups of the bean cooking liquid. Place bacon slices on top.
- Bake uncovered in the center of the preheated oven until the liquids have reduced into a thick sauce, 2 to 3 hours.

- Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
- Preheat oven to 300 degrees F (150 degrees C).
- Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
- Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
- Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.

- Rinse escargot in a colander in order to remove any sand and set aside.
- Grind spices together in a mortar until fine.
- Clean mushrooms and completely remove stems, making sure to create a place for escargot.
- Place in a large skillet with 1 tablespoon of the butter and sauté over medium heat for 10 minutes, stirring often.
- Remove from heat and place mushroom caps on escargot dishes stem side up.
- Heat oven to 350 degrees F.
- Chop half of the mushroom stems up and place in small sauce pan with remaining butter, garlic and spices, discard the rest.
- Cook over medium heat for 3 minutes.
- Place one escargot on each mushroom cap.
- Spoon butter mixture over escargots and sprinkle with parmesan.
- Place escargot dishes onto a cookie sheet and bake in oven for 15 minutes or until cheese is browned and sauce is bubbling.
- Use bread for cleaning up the sauce.

This is a very simple old time family recipe. It was used at every family reunion and for all family gatherings. *** contemporary additions if desired *** add 3 tbs dry mustard, 3 tsp pepper, 6 cloves minced garlic, and 3 minced medium onions. - Rinse beans until water comes out clean, removing any "bad" looking beans.
- Soak beans covered in water at least 5 hours or overnight in a large pan.
- Boil in same water with 3/4 of salt pork (cut up either in chunks or slices).
- Bring pot to a boil with the salt pork. Reduce heat to medium, and simmer 1 1/2 hrs till tender. (However tender the beans are going into the pot is how they will be in the end).
- In a heavy baking pan sprayed with Pam, add beans, salt pork, salt (add contemporary additions if desired). Cover with water used to boil the beans. Add rest of salt pork in slices on the top.
- Bake at 200°F for 8 hours.
- Add water used from boiling when stirring to prevent sticking and for a moist bean. My family however, did not stir the beans, they just added the water every 30-s60 minute.
