Steps:
- In a medium bowl, beat cream cheese, sugar, and almond extract until smooth.
- Spoon cream cheese mixture into a pastry bag fitted with a medium star tip.
- Chill 1 hour.
- Quarter strawberries from tip to stem end without cutting through stem end.
- Pipe cream cheese mixture into strawberries.
- Chill until ready to serve.
STUFFED STRAWBERRIES
Yum, yum! Sometimes I add some finely chopped semi-sweet chocolate. These are perfect for baby showers or wedding showers. A plastic sandwich bag can be used instead of a pastry bag by filling with the cream cheese mix and making a tiny cut in the corner.

Steps:
- Cut the tops off of the strawberries and stand upright on the cut side. Make a cut 3/4 of the way down from the tip of the strawberry towards the bottom.
- Beat together the cream cheese, sugar, and liqueur until smooth in a mixer or a food processor. Place into a piping bag with a star tip. Pipe into each strawberry and arrange on a serving platter.

LINDA'S CHEESECAKE-STUFFED STRAWBERRIES
OMG.. These are like heaven in your mouth! Talk about great taste sensations... I made these for one of my cooking and recipe events that I hold monthly, and these were a HUGE hit... A must try for sure! You can use low fat cream cheese to make these lighter if you like. You can also dip the ends with any kind of finely chopped nuts, mini chocolate chips, graham cracker crumbs, sprinkles, or dip the ends in chocolate or drizzle with chocolate. You might even try adding some cocoa powder to the cream cheese and make it a chocolate filling. The sky is the limit here, just use your imagination!

Steps:
- Place cream cheese in a bowl, and microwave for 30 seconds, so that it's soft.
- Whip together the cream cheese, vanilla, and sugar.
- In the center of each strawberry, using a sharp knife, make a hole in each one, as deep as you can without going out the bottom.
- Spoon or pipe the filling into each hole.
- Dip cheesecake end of strawberry into chopped almonds, making sure you completely cover the cheesecake filling with the nuts.
- Lay strawberries in a pretty serving dish.
- Sprinkle with any leftover nuts around the dish.
- Chill, and serve.
- Makes 24 servings.

STUFFED STRAWBERRIES ELEGANTE
These are absolutely wonderful little morsels. They never last long. The original recipe came from an old Roswell, GA cookbook. I've seen many variations, this recipe is very forgiving and can easily be lessened or increased. They travel well sitting upright in a clean styrofoam egg carton.

Steps:
- Slice off stem end of strawberries to form a flat base.
- Place berries on flat surface, with pointed end up.
- With a sharp knife, slice each berry in half vertically to within a 1/4 inch of base. Cut each half into three wedges to form 6 petals. Pull petals apart slightly.
- In a small bowl, combine cream cheese, powdered sugar and liqueur; beat until light and fluffy.
- With a pastry bag and star tip or small spoon, (if mixture thins too much after beating, place filled bag in the refrigerator for about 15-20 min.) then fill strawberries with cream cheese mixture.
- A plastic zipper sandwich bag can be used instead of a pastry bag by filling with cream cheese mixture, cut one corner off of the bottom of the bag and squeeze.
- For a beautiful presentation drizzle with melted slightly cooled dark chocolate.

- Remove stems from strawberries; cut a deep "X" in the tip of each berry. Gently spread berries open., In a small bowl, beat the cream cheese, confectioners' sugar and extract until light and fluffy. Pipe or spoon about 2 teaspoons into each berry; if desired, sprinkle with chocolate. Chill until serving.

Strawberries were on sale so I bought a bunch and have been trying lots of different ways to make them. The kids weren't sure what to make of these but in the end they enjoyed them. I actually couldn't get a picture of them because my 4 year old took the container out of the fridge (and knocked them about!) before I got a photo.
