Real quick and easy to make! I got this recipe from an acquaintance at a boardgame night. The original recipe called for walnuts, but I think pecans are a more complementary flavor. These cranberry bars are delicious, with a delightful balance of sweet and tart. Don't count on leftovers - these moist squares get gobbled right up!

1 1/2 cups flour
1 1/2 cups sugar
1 cup butter, Softened
2 eggs, Beaten
2 cups raw cranberries, left whole
1 cup pecans, Chopped

Steps:

  • Preheat oven to 325 degrees.
  • Grease a 9" x 13" Pan.
  • Mix the butter with the sugar, and add the eggs and flour.
  • Stir in the cranberries and pecans.
  • Pour batter into greased pan, spreading out evenly.
  • Bake at 325 degrees for 45 - 50 minutes.
  • Cool. Cut into squares. At Christmas-time, you can add chopped green candied cherries. These also freeze well.

These squares are very yummy. Try different fruits or jams to change the flavour. Note, you may replace up to half of the flour with whole wheat flour.

¾ cup white sugar
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup butter or margarine
1 egg, beaten
2 cups cranberry sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together the sugar, flour, baking powder and salt. Cut in the butter or margarine until the lumps are no larger than peas. Stir in the egg just a little bit, but allow the mixture to stay somewhat crumbly.
  • Sprinkle half of the mixture in an even layer in the bottom of a 9x13 inch pan. Pack down into a solid crust. Spread the cranberry sauce over the crust. Crumble the remaining mixture over the cranberry sauce.
  • Bake for 40 minutes in the preheated oven, until the top is golden brown. Cool before slicing into bars.

2 cups all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon salt
2/3 cup cold butter, cut into squares
2 cups cranberries, fresh or frozen
2 cups shredded sweetened coconut
4 large eggs
2 cups granulated sugar
1/2 cup lemon juice, freshly squeezed
1/4 cup all-purpose flour
1 teaspoon baking powder

Steps:

  • BASE Preheat oven to 325 F.
  • Butter a 13" x 9" oven-proof baking dish.
  • In a food processor or blender, pulse flour, sugar, salt and butter and whirl until crumbly.
  • Spread into prepared baking dish and pat down lightly.
  • Bake uncovered in preheated 325 F oven for 20 minutes.
  • Scatter cranberries over warm baked base.
  • Sprinkle over with shredded coconut.
  • In a medium-size mixing bowl, whisk together eggs, sugar and lemon juice until well blended.
  • Gradually whisk in flour and baking powder.
  • Pour lemon mixture over top (it will spread to fill dish during baking).
  • Bake uncovered in preheated 325 F oven for about 55 to 60 minutes or until middle is set and edges are golden.
  • Cool before cutting.
  • Cut into 3" x 1 1/2" squares.
  • Store in an airtight container at room temperature for up to 4 days or you may freeze the squares.

1 cup butter or 1 cup margarine
4 large lemons
7 eggs
2 cups granulated sugar
1/4 cup butter or 1/4 cup margarine, melted
1/2 cup all-purpose flour
2 teaspoons baking powder
1 1/4 cups ground almonds
3/4 cup craisins

Steps:

  • CRUST: Combine 2 cups flour, icing sugar and 1 cup butter or margarine until crumbly.
  • Press firmly into a greased 13 x 9 inch cake pan.
  • Bake at 350 degrees for 15-20 minutes, until light golden.
  • TOPPING: Reduce oven temperature to 325 degrees. Grate rind from 2 lemons. Squeeze out 3/4 cup juice.
  • Beat eggs and sugar until light and thickened.
  • Stir in rind, juice and remaining ingredients. Mix well. Pour over baked crust.
  • Bake for 40-50 minutes, or until set and golden.
  • Cool then cut into squares.

1/3 cup granulated sugar
2 teaspoons finely grated orange rind
1/4 cup fresh orange juice
3 tablespoons vegetable oil
1 large egg
1 teaspoon vanilla
1 cup all-purpose flour
1/2 cup dried cranberries
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1 tablespoon granulated sugar
1/8 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350°F and spray an 8-inch square baking dish with vegetable spray.
  • Make squares: in a bowl and using a whisk or electric mixer, beat brown sugar, sugar, orange rind, orange juice, oil, egg and vanilla.
  • In another bowl, stir together flour, cranberries, baking powder and cinnamon. With a wooden spoon, stir the mixture into the orange mixture until mixed. Spread into a prepared dish.

I have been experimenting with cranberries to try and come up with a sauce that has some delightful flavors. I used various combinations of ingredients and woweee, this one so far is the best.

12 ounces fresh cranberries or 12 ounces frozen cranberries
1/2 cup frozen concentrated orange juice
1/2 cup cold water
1/2 cup granulated sugar
3/4 cup pineapple-orange marmalade
3 inches cinnamon sticks
1/4 teaspoon freshly grated nutmeg
1 tablespoon lemon zest
2 teaspoons orange zest

Steps:

  • Wash the cranberries thoroughly in cold water. If using frozen cranberries, thaw first.
  • In a medium size saucepan, add cranberries, orange juice, water, sugar, orange-pineapple marmalade, cinnamon stick, nutmeg, lemon zest and orange zest.
  • Bring mixture to boil.
  • Reduce heat and simmer for about 10 minutes or until most of the cranberries pop, stirring occasionally.
  • When cooked, discard cinnamon stick.
  • Let cool and then store in a glass container with lid or a dish covered with plastic wrap.
  • Keep refrigerated.
  • Use as required.
  • NOTE: If desired, add 1 1/2 ounces of Light Bacardi Rum when cooking the sauce.
  • This is for ADULTS only who accept liquor.
  • This gives the cranberry sauce a whole new taste. This is YUM, YUMMY good.

6 cups fresh cranberries
1 cup chopped onion
2 cups chopped peeled and cored apples
2 medium navel oranges, zest grated,pith discarded and the fruit coarsely chopped
1 cup golden seedless raisins
1 cup chopped pecans
1 cup frozen orange juice concentrate
2 cloves garlic, finely chopped
2 cups packed light brown sugar
1/2 cup tarragon vinegar
1/4 cup finely chopped fresh tarragon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon

Steps:

  • Wash and rinse cranberries well in cold water.
  • In a large heavy bottom saucepan, combine all ingredients.
  • Bring to a boil over medium heat, about 10 to 15 minutes, stirring constantly.
  • Reduce heat and simmer, uncovered for 20 to 25 minutes or until slightly thickened, stirring frequently.
  • Prepare 7- 1/2 pint jars by washing with soap and hot water.
  • Rinse well with clean hot water.
  • Preheat oven to 300 degrees F.
  • Place clean jars upside down on oven rack and heat for at least 15 minutes.
  • Ladle hot chutney into hot jars, leaving 1/2" headspace.
  • Wipe rims clean.
  • Apply lids according to manufacturer's directions.
  • Apply screw tops just finger tight.
  • Place jars on a towel and cover with another towel until cooled.
  • Jars are sealed when you hear each jar"pop", and lids should be concave (depressed down.) Label jars and store in a cool, dry place.

A lovely cranberry salad for the Thanksgiving table. The combination of cream cheese, toasted pecans and cranberry is delicious.

1 (13 1/2 ounce) can crushed pineapple
2 (3 ounce) packages lemon Jell-O gelatin
7 ounces ginger ale
1 lb jellied cranberry sauce
1 (8 ounce) container whipped topping
1 (8 ounce) package cream cheese, softened
1/2 cup chopped pecans
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Drain pineapple, reserving syrup.
  • Add water to syrup to make 1 cup. Heat liquid in a small saucepan until mixture is boiling. Dissolve gelatin in liquid and cool.
  • Pour liquid into a mixing bowl and gently stir in Ginger Ale; chill til partially set.
  • Meanwhile, mix pineapple and cranberry sauce. Fold into gelatin mixture.
  • Turn mixture into 9x9x2 dish. Chill until firm.
  • Fold cream cheese and whipping topping together until blended. Spread over firm gelatin.
  • Toast pecans in butter in a 350 oven for about 10 minutes. Cool and sprinkle over top of salad.
  • Chill. Cut into 9 squares to serve.

1 (12 ounce) package fresh cranberries
1 large granny smith apple, peeled, cored and cut into chunks
1/2 large sweet red pepper, seeded and cut into chunks
1/2 medium red onion, cut into chunks
3/4 cup granulated sugar
1/3 cup apple juice
3 tablespoons chopped fresh cilantro
2 tablespoons chopped pickled jalapeno peppers or 2 tablespoons use 1 medium fresh jalapenos
1 teaspoon grated lime zest
1 (14 ounce) package spinach tortillas

Steps:

  • Rinse cranberries in cold water.
  • In a food processor, add cranberries, apple, red pepper and onion and pulse until coarsely chopped.
  • Transfer to a mixing bowl and set aside.
  • In a separate mixing bowl, stir together sugar, apple juice, cilantro, Jalapeno pepper and lime zest; mix well to blend.
  • Add this mixture to the cranberry mixture and mix well to blend.
  • Spoon into jars with a cover and refrigerate.
  • To prepare Tortillas:.
  • Heat oven to 375°F.
  • Using a tree-shaped cookie cutter, cut 6 trees from each tortilla, or cut the tortillas into wedges.
  • Place cut tortilla on an ungreased cookie sheets.
  • Bake in preheated 375 F oven for 8 minutes or until crisp.
  • You may also place the cut tortillas on parchment paper and microwave on HIGH (full power) for 1 1/2 to 2 minutes or until nice and crisp.
  • Store tortilla chips in a plastic bag.
  • Serve cranberry salsa with tortilla chips.
  • Frozen cranberries can also be used to make the salsa.
