Provided by Sarah Olson

Categories     Side Dish

Time 4h20m

Number Of Ingredients 10

8 cups collard greens ((2 large bunches, remove ribs and stems and discard, rip the greens into bite sized pieces))
2 ham hocks or shanks
12 oz. package bacon (sliced and cooked, drained (save the bacon drippings))
3 Tbsp. bacon drippings (grease) ((from above bacon) optional)
1 Tbsp. brown sugar
3 cups chicken broth

SLOW-COOKED COLLARD GREENS

Slow-Cooked Collard Greens image

Provided by Tyler Florence

Categories     side-dish

Time 35m

Yield 6 to 8 servings

Number Of Ingredients 10

2 large bunches collard greens
3 tablespoons olive oil
1 onion, sliced
2 garlic cloves, smashed
2 bay leaves
1 smoked ham hock
2 quarts chicken broth, warm
2 tablespoons cider vinegar
1 teaspoon sugar
Kosher salt and freshly ground black pepper

Steps:

  • To prepare the greens: cut away the tough stalks and stems from the collards, and discard any leaves that are bruised or yellow. Wash the collards thoroughly to remove the grit, 2 or 3 times, until the water runs clear. Dry thoroughly. Tear the leaves into large pieces.
  • Place a large pot over medium heat and add the olive oil. Add the onion, garlic, bay leaves, and ham hock. Cook until the onions are soft and starting to brown, about 8 to 10 minutes. Pack in the greens, pushing them down into the pot. Add the broth, vinegar, and sugar. Bring up to a boil turning the greens over occasionally with a wooden spoon as they wilt. Lower to a simmer, cover the pot, and let cook for 45 minutes. Taste the "pot liquor" (broth) and check the seasoning, add salt and pepper. Cover and let cook for 15 more minutes. Remove the bay leaves and serve.

CROCK POT GREENS AND CHICKEN

Crock Pot Greens and Chicken image

A simple light meal in the slow cooker that is bold in taste. Mustard greens, especially, have a bold, peppery flavor. I like to use the pre-washed, packaged greens that have the long, thick stems removed and have been coarsely chopped. The dish is low in fat and low in net carbs.

Provided by Red_Apple_Guy

Categories     Chicken

Time 6h10m

Yield 2 quarts cooked, 4 serving(s)

Number Of Ingredients 5

12 ounces spinach or 12 ounces kale
3 boneless skinless chicken breast halves or 24 ounces boneless skinless chicken breast halves
2 tablespoons apple cider vinegar or 1 ounce apple cider vinegar
6 ounces water or 6 ounces chicken broth
salt and pepper

Steps:

  • Spray a 4 quart slow cooker crock with vegetable spray.
  • Fill with greens that have been washed, destemmed and coarsely chopped or torn,
  • Cut chicken breast halves in large pieces and lay on top of the greens.
  • Add vinegar, water and seasonings.
  • Cook on low for 5 to 6 hours or until chicken is 170F internally and greens are tender.
