These have been a family favorite for years. I always make them whenever I am making loads of cookies!

Number Of Ingredients 10

1 1/4 cups brown sugar, packed
1 cup butter, softened
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
1/2 teaspoon salt
2 eggs
3 cups oats (quick cooking or old-fashioned)
1 1/3 cups flour
1 cup raisins

Steps:

  • Preheat oven to 350F.
  • Mix together brown sugar and butter until smooth.
  • Stir in baking soda, cinnamon, vanilla, and salt.
  • Add eggs and stir until blended.
  • Stir in oats, flour and raisins.
  • Drop by rounded tablespoonfuls onto ungreased cookie sheet, about 2-inches apart.
  • Bake 9-11 minutes or until lightly browned.
  • Remove from cookie sheet at once and cool on wire rack.

2 cups raisins
2 cups water
½ cup packed brown sugar
2 tablespoons cornstarch
½ teaspoon ground cinnamon
¼ teaspoon salt
1 tablespoon distilled white vinegar
1 tablespoon butter
1 recipe pastry for a 9 inch double crust pie

Steps:

  • Combine raisins and water in a small saucepan. Boil 5 minutes. Blend brown sugar, cornstarch, cinnamon, and salt together; add to hot raisins. Cook and stir until syrup is clear. Remove from heat, and stir in vinegar and butter or margarine. Cool slightly.
  • Turn filling into a pastry lined pan. Cover with top crust. Seal edges, and cut slits in the top crust.
  • Bake at 425 degrees F (220 degrees C) for 30 to 35 minutes.

EASY RUM N RAISIN SLICE

Derived from my favourite fruitcake recipe, this is one I developed myself because I am currently very fond of the Rum N Raisin flavour. It was a big success with all my Tasters! I used Coke because cola and rum go well together, but ginger beer has been particularly successful for me in the past. If you wanted to modify it, a kilo of fruit mix or raisins could be used instead of a mix of both. I used chocolate coated peanuts/raisins instead of chocolate chips.

400 g dried fruit
400 g raisins
100 g chocolate chips
2 cups Diet Coke
2 teaspoons rum extract
2 cups self-raising flour
ground almonds

Steps:

  • Place dried fruit, raisins and chocolate goodies into a bowl.
  • Add rum extract to coke and pour over the fruit mixture.
  • Leave to marinate for at least 4 hours or overnight.
  • Stir in 2 C of self-raising flour (sifted).
  • Line baking tray with baking paper and pour in mixture. If you want a slice, spread it thinly (it's BIG), or if you'd prefer a fruitcake, use a lined loaf tin.
  • Sprinkle with ground almonds.
  • Bake at 160 degrees centigrade for around 45 minutes, or until cooked in the middle (if making it in a loaf tin).

Do you adore all those Cinnamon & Raisin combinations but the caloric allowance doesn't stretch that far as often as you'd like ? (At least without endless mental guilt-trips :) Do you love cinnamon and raisin bagels and loaves but want some now - right this instant, but all the stores are 20 miles away, and closed ? This almost instant snack tastes wonderful, is almost guaranteed to get you to make a second cup of coffee to go with a second slice and it's so healthy you can have another slice without feeling guilty for anything except the sheer sensual pleasure of eating it!

1 slice white bread
1 dash ground cinnamon
2 1/2 teaspoons granulated artificial sweetener (to taste)
3 teaspoons natural nonfat yogurt
2 teaspoons raisins (to taste) or 2 teaspoons sultanas (to taste)

Steps:

  • place slice of bread on plate it's to be served on.
  • Quickly spread a couple of teaspoons of fat-free natural yoghurt over the slice so it's generously thick.
  • Sprinkle very generously with granulated sweetener.
  • using back of spoon smooth the sweetener into the yoghurt.
  • Sprinkle fairly generously with ground cinnamon (to taste).
  • Quickly strategically place raisins onto the slice - about as many as you'd get in a slice of cinnamon and raisin bread works well - or a few more! - to taste.
  • Lightly press the raisins so they get a moment or two to soak a bit of the yoghurt.
  • SERVE -- Goes great with a nice cup of coffee! Yummy!
  • Optionally you might like to strategically add a very few drops of lime juice or lemon juice.
  • pleasing note for us dieters --
  • This is where granulated sweetener really comes into it's own -- this just would not be the same with sugar. Granulated sweetener dissolves instantly even when the liquid is very cold whereas made with sugar this would be all crunchy and probably nothing like as nice!

  • In a saucepan, combine first three ingredients.
  • Stir in water, raisins, vinegar, lemon juice until blended.
  • Bring to a boil; cook and stir for 2 mins or until thickened.
  • Stir in butter until melted.
  • Serve warm over sliced ham.
