MANDARIN MOUSSE MOLD
Prep this Mandarin Mousse Mold in just 15 minutes! This mandarin mousse dish's layers create a pretty and refreshing mold for a salad or dessert.

Steps:
- Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in cold water. Place oranges in 6-cup mold; cover with 2 cups gelatin. Refrigerate 30 min. or until set but not firm. (Gelatin should stick to your finger.)
- Meanwhile, refrigerate remaining gelatin 30 min. or until slightly thickened. Whisk in 2 cups COOL WHIP until blended; pour over gelatin layer in mold.
- Refrigerate 4 hours or until firm. Unmold. Serve topped with remaining COOL WHIP.

This is a very refreshing dessert after a big meal or on a hot sunny day. The recipe says it serves 6 but when I made it I found that it serves 10. Great flavor

- In a large saucepan heat milk over medium heat until bubbles form around the edge of the pan (do not boil). Add butter,allow it to melt.
- Meanwhile in a bowl using an electric mixer at high speed beat eggs, egg whites, sugar & cornstarch until very light and fluffy, about 3 minutes. Mix in orange juice and orange peel.
- Beat in 1 cup of the hot milk into the egg mixture.
- Slowly whisk the egg mixture into the hot milk.
- Bring mousse to a boil whisking the entire time until the mixture is thick, about 2 minutes. Remove from heat and stir in the vanilla.
- Pour mousse into a bowl, cover and put in fridge until cold, about 2 hours.
- Fold in whipped topping, place in serving dishes (a large wine glass looks great) garnish with an orange and serve or you may cover and put in fridge until you are ready to serve, garnish just before serving.

- Stir boiling water into gelatin in large bowl 2 minutes until completely dissolved.
- Stir in cold water.
- Place orange segments in 6-cup mold, spoon 2 cups gelatin mixture into mold over oranges.
- Refrigerate about 30 minute or until set, but not firm (should stick to finger).
- Meanwhile, refrigerate remaining gelatin mixture about 30 minutes or until slightly thickened (consistency of unbeaten egg whites).
- Stir in 2 cups of the whipped topping with wire whisk until well blended.
- Pour over gelatin layer in mold.
- Refrigerater 4 hours or until firm then unmold.
- Serve with remaining whipped topping.
- Store leftover gelatin mold in refrigerator.

- Prepare the orange curd first as it needs to cool. In a large glass mixing bowl, combine the eggs, egg yolks and sugar. Whisk vigorously for 3 to 4 minutes, until the mixture is thick and more pale in color. It should ribbon off the whisk. Pour the mixture into a stainless steel pot and add the orange or mandarin juice; whisk to combine. The juice needs to be pulp-free; strain it ahead of time if necessary. Cook the orange curd over medium-low heat, stirring constantly along the bottom of the pan. Cook for 4 to 5 minutes, until the curd thickens and starts to bubble lightly. Remove from heat immediately. Add the unsalted butter and vanilla and whisk until the butter is completely melted. Cover the curd and place into the refrigerator to cool.
- Next, prepare the sponge cake. Preheat the oven to 350F/177C. Prepare a 9 or 10-inch springform pan by lining the bottom with parchment paper; do not grease the sides. (If you are not planning to use an acetate cake collar to assemble the cake, I recommend using a 10-inch pan; otherwise the jello will not fit) Place the eggs, sugar and vanilla extract into a stand mixer bowl, then whisk on high speed for 7 to 9 minutes. - Next, prepare the stabilized whipped cream but only once the curd has cooled. Pour the chilled heavy cream into a stand mixer bowl and add the confectioner's sugar. Meanwhile, in a small cup or bowl, combine the unflavored gelatin and water. - Place reserved mandarin orange juice in a 2-cup measuring cup. Add water to fill to the 2-cup line. Heat water/juice to boiling. Remove from heat and stir in gelatin powder, stirring until dissolved. Move mixture to a large measuring cup or bowl.
