SUNNY'S HOLIDAY VIBE SWEET POTATOES

Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with nonstick aluminum foil.
- Break the frozen patties apart and place on the prepared baking sheet. Divide the brown sugar evenly over each patty. Sprinkle with nutmeg, cinnamon sugar, lemon zest, a pinch of salt and a grind or two of black pepper. Bake until golden around the edges, 20 to 25 minutes. Serve with a spritz of lemon juice.
HOLIDAY SWEET POTATO BAKE
Adapted from a Seminary wives, (Diane Wiebe's) recipe, my mother made in the early 90s. Here is the Original description from the recipe. "We had this at Christmas, and even those who hate sweet potatoes liked it and asked for seconds" You can use the coconut substitutes for a dairy free option, but the original recipe calls for dairy products, as listed. - Lightly grease an 8" square baking pan.
- Preheat oven to 350 degrees F.
- Boil water in a large stockpot, place cut and peeled sweet potatoes in boiling water carefully, and cook until soft about 10-12 minutes. uncovered.
- Combine the first seven ingredients, (including the cooked sweet potatoes), in a mixing bowl. Beat at low speed with electric mixer, until blended.
- STIR in crushed pineapple, 1/2 Cup of the chopped pecans, raisins, and coconut into the sweet potato mixture.
- Spoon mixed sweet potatoes into the lightly greased 8" square baking dish.
- Sprinkle with remaining 1/2 cup chopped pecans.
- Bake at 350 degrees for 25 minutes;.
- Sprinkle with miniature marshmallows and bake an additional 5 minutes.

Steps:
- Heat oven to 325 degrees.
- Arrange sweet potatoes and pineapple in a shallow 1-quart baking dish, sprinkle with cinnamon.
- In a small saucepan combine marshmallow fluff and butter or margarine.
- Heat to boiling over high heat, stirring constantly.
- Pour over sweet potatoes.
- Sprinkle with walnuts.
- Bake 15 to 20 minutes or until hot and bubbly.
- NOTE: To cook sweet potatoes quickly: arrange them on microwave-safe plate, cover with plastic wrap and cook on HIGH 10 to 12 minutes or until tender.

- Scrub and pierce sweet potatoes. Bake at 400° for 45-50 minutes or just until tender. Reduce heat to 350°. When cool enough to handle, peel and cut into 1/2-in. slices. Place in a greased 13-in. x 9-in. baking dish., Drain pineapple, reserving juices. In a small saucepan, combine cornstarch and brown sugar. Gradually stir in orange juice and reserved pineapple juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the pineapple, oranges and cranberries; heat through., Pour sauce over sweet potatoes. Bake, uncovered, at 350° for 35-40 minutes or until bubbly.

I served this New England recipe for Christmas dinner. The recipe adds a regional ingredient-cranberries- to a baked sweet potato dish. The combination of sweet and tart is great!

- Combine the flour, sugar, oats, sugar and cinnamon. Cut in the butter until the mixture resembles coarse crumbs.
- Toss 1 cup crumbs mixture with drained yams and 2 cups cranberries. Place in 1 1/2 quqart casserole. Top with remaining crumbs.
- Bake at 350 for 30 minutes.
- Sprinkle with 1 1/2 cup mini marshmallows. Bake 5 more minutes or until lightly browned.

- Preheat oven to 400 degrees F. Line a 2-quart rectangular baking dish with Reynolds Wrap® Pan Lining Paper, parchment side up. No need to grease dish.
- Add parsnips and/or carrots to a large microwave-safe bowl. Add 1/4 cup water and cover with wax paper. Microwave on high for 5 minutes. Uncover and add sweet potatoes. Cover and microwave 15 minutes more or until tender, stirring once. Drain and return vegetables to bowl.
- Pour broth and cream into the bowl with vegetables. Use a potato masher to mash to desired consistency. Stir in 3 tablespoons butter and 1/2 teaspoon salt. Transfer to prepared baking dish.
- Combine brown sugar, flour, rosemary, and 1/4 teaspoon salt in a medium bowl. Using a pastry blender, two forks, or your fingers, cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in pecans and maple syrup and sprinkle over sweet potato-mixture.
- Bake 20 to 25 minutes or until pecan mixture is just starting to brown.
