1 cup whole milk
½ cup warm water
¼ cup unsalted butter, melted
¼ cup sugar
2 ¼ teaspoons active dry yeast, 1 packet
4 cups all-purpose flour, plus more for dusting
1 ½ teaspoons kosher salt
2 large eggs, room temperature
neutral oil, for greasing
sea salt, for sprinkling

Steps:

  • In a liquid measuring cup or small bowl, combine the warm milk, warm water, melted butter, and sugar.
  • Sprinkle the yeast evenly over the wet ingredients, stir to combine, and let stand for 5 minutes, until foamy
  • In a large bowl, combine the flour and salt, and stir to combine. Beat 1 egg, then add to the bloomed yeast mixture. Pour the wet ingredients into the flour and use a knife to stir until the mixture just comes together and forms a dough. Turn the dough out onto a lightly floured surface and knead for 5-10 minutes, or until the dough becomes smooth. Add more flour as needed to keep the dough from sticking. To test if it's done, tear off a small piece of dough and stretch into a thin layer. If the dough doesn't rip, it's ready. Or, press a finger into the dough to see if it bounces back.
  • Lightly grease a large glass bowl with oil. Add the dough, cover with plastic wrap, and let rest for 1 hour, or until doubled in size.
  • Punch down the dough, then turn out onto a floured surface. Knead for a few more minutes, just until the dough is smooth, about 2 minutes.
  • Divide the dough into 16 equal balls, roughly the size of tangerines.
  • Knead the balls, gathering the edges of the dough toward the center to make a taut, round ball with a smooth top.
  • Place the rolls on a parchment paper-lined baking sheet. Cover with plastic wrap and let rise for 30 minutes.
  • Preheat the oven to 375˚F (190˚C).
  • Beat the remaining egg in a small bowl. Uncover the rolls and brush with the egg wash. Lightly sprinkle the rolls with sea salt.
  • Bake for 25-30 minutes, or until the rolls have lightly browned and doubled in size.

2 tablespoons instant dry yeast
1/4 cup white granulated sugar
2 teaspoons salt
6 tablespoons salted butter (softened)
2 large eggs
6 cups all-purpose flour
1 tablespoon melted butter

Steps:

  • In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs.
  • Add in 5 1/2 cups of flour. Using a dough hook, turn the mixer on to a low speed. Once the flour starts to incorporate into the dough, increase the speed to a medium range. Slowly add the remaining 1/2 cup of flour until the dough pulls away from the sides of the bowl. The dough mixture should be slightly sticky and soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel.
  • Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise 90 minutes.
  • Lightly grease a baking sheet. Punch down the dough and form into 24 rolls. Place on the greased baking sheet in six rows of four. Cover and let rise 1 hour.
  • Preheat oven to 375 degrees. Bake the rolls for 12 to 14 minutes, until lightly browned.
  • Remove rolls from oven and brush with melted butter. Serve the rolls warm, or to cool, let rest on the pan for 15 minutes before transferring to a wire cooling rack. Once cooled completely, store in a plastic bag.

4 teaspoons active dry yeast
½ cup sugar
2 eggs
½ cup butter, softened

7 cups all-purpose flour, or as needed

Steps:

  • Pour milk into a large mixing bowl, and sprinkle yeast over the surface. Allow to rest for 5 minutes. Beat in the sugar, eggs, 1/2 cup butter, and salt; blend thoroughly. Gradually stir in the flour to make a soft dough. Cover bowl, and set in a warm place until dough doubles in size, about 1 hour.
  • Punch down the dough, cover the bowl, and allow to rise again. Repeat this step two more times.

4 1/2-5 cups bread flour
1/4 cup sugar
1 (1/4 ounce) package active dry yeast
1 1/4 teaspoons salt
1 cup milk
1/2 cup water
2 teaspoons butter
2 eggs
1 egg white
2 tablespoons grated parmesan cheese
1/2 teaspoon instant minced garlic
2 tablespoons finely chopped almonds
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon thyme
1/2 teaspoon dried oregano
1 teaspoon poppy seed
1 teaspoon salt
1 teaspoon dried garlic
1 teaspoon sesame seeds
1 teaspoon dried onion

Steps:

  • In a large bowl, combine 2 cups flour, 1/4 cup sugar, yeast and salt.
  • In a small saucepan, using a candy thermometer, heat the milk, water and butter to 120-130 degrees Fahrenheit. Add to dry ingredients. With an electric blender, beat on medium speed for 3 minutes. Add 2 eggs and beat on high speed for an additional 2 minutes. Gradually stir in remaining flour to form a soft dough (dough will be sticky).
  • On a lightly floured surface, knead the dough until smooth and elastic. (Kneading is a necessary step to ensure that bread dough rises properly.) Place in a greased bowl, turning once to grease the top end of the dough. Cover with plastic wrap and let rise in a warm place until doubled in size (about 1 hour). TIP: I heat the oven at 200 degrees Fahrenheit for 1 minute, turn off oven, and place the dough inside the oven to rise. (Don't forget to turn OFF the oven.).
  • Punch down dough in the bowl. Turn onto a lightly floured surface. Divide into 24 portions and shape into balls. Divide the balls between 2 greased 13-inch x 9-inch baking pans. OR, on one muffin tin, place 2 shaped balls next to each other into each greased muffin cup to make 12 rolls.
  • Cover with a clean, lightweight towel and let rise until doubled, about 30 minutes. Brush with lightly beaten egg white and sprinkle rolls with the topping of your choice (or all 3!),.
  • Bake at 375 degrees Fahrenheit for 10-15 minutes or until gold brown. Remove from pans to wire racks to cool.

Steps:

  • Note: Due to its sticky nature, this recipe is best made in a standing mixer with a dough hook; the truly persistent could probably make this by hand with a bowl and a wooden spoon-- these rolls are worth the extra effort.
