Steps:
- Pour the can of tomatoes into a bowl. If it is pomodorini or whole tomatoes, crush them with your hands, or you can roughly cut them with kitchen shears.
- Add the rest of the ingredients and mix well. Taste for salt and add if needed. (Don't add a lot of sauce to the pizza dough; you don't want to drown it.)

Steps:
- Preheat oven to 500 degrees F and place the pizza stone on the bottom rack.
- Crumble the yeast in a small bowl then add 1/4 cup of warm water and the syrup. Stir together and leave for 5 minutes to dissolve.
- Put the flour and salt in a mixer fitted with a dough hook and give it a quick spin to mix. Pour in the yeast mixture, the remaining warm water and the olive oil at the same time, see Cook's note*.
- Spin on low until the flour and water come together and the dough pulls away from the sides of the bowl. Put the ball of dough in a large bowl and drizzle a few drops of olive oil on top to keep it from forming a skin as it proofs. Cover with a towel and leave in warm place for 30 minutes to let the dough proof. When the dough has proofed it will double in size and look spongy.
- For the topping: Caramelize the onions in a frying pan over low heat with a little olive oil and one of rosemary sprigs. When the onions are golden season with sea salt and black pepper and a few drops of lemon juice to bring out the flavor.
- When the dough has proofed, roll it out onto to a floured surface and punch the air out with your hands, then start shaping it into a circle When it's stretched out, dust a pizza paddle with flour and place the dough on it.
- Cover with a generous splash of olive oil and scatter with pieces of Robiola. Shingle the pancetta slices around and add the caramelized onions, and the stripped needles of the remaining rosemary sprig. Drizzle with olive oil. Add salt and black pepper.
- Slide the pizza onto the stone in the oven (be careful the stone is 500 degrees F) and bake for 15 minutes. Shave white truffles over it. Eat immediately.
- Special equipment: Pizza stone and pizza paddle .
PIZZA PIZZAS
Alton Brown's Pizza Pizzas, from Good Eats on Food Network, are so easy and cheesy to make at home that you may never order or go out for pizza again.

Steps:
- Place the sugar, salt, olive oil, water, 1 cup of flour, yeast, and remaining cup of flour into a standing mixer's work bowl. Using the paddle attachment, start the mixer on low and mix until the dough just comes together, forming a ball. Lube the hook attachment with cooking spray. Attach the hook to the mixer and knead for 15 minutes on medium speed.
- Tear off a small piece of dough and flatten into a disc. Stretch the dough until thin. Hold it up to the light and look to see if the baker's windowpane, or taut membrane, has formed. If the dough tears before it forms, knead the dough for an additional 5 to 10 minutes.
- Roll the pizza dough into a smooth ball on the countertop. Place into a stainless steel or glass bowl. Add 2 teaspoons of olive oil to the bowl and toss to coat. Cover with plastic wrap and refrigerate for 18 to 24 hours.
- Place the pizza stone or tile onto the bottom of a cold oven and turn the oven to its highest temperature, about 500 degrees F. If the oven has coils on the oven floor, place the tile onto the lowest rack of the oven. Split the pizza dough into 2 equal parts using a knife or a dough scraper. Flatten into a disk onto the countertop and then fold the dough into a ball.
- Wet hands barely with water and rub them onto the countertop to dampen the surface. Roll the dough on the surface until it tightens. Cover one ball with a tea towel and rest for 30 minutes.
- Repeat the steps with the other piece of dough. If not baking the remaining pizza immediately, spray the inside of a ziptop bag with cooking spray and place the dough ball into the bag. Refrigerate for up to 6 days.
- Sprinkle the flour onto the peel and place the dough onto the peel. Using your hands, form a lip around the edges of the pizza. Stretch the dough into a round disc, rotating after each stretch. Toss the dough in the air if you dare. Shake the pizza on the peel to be sure that it will slide onto the pizza stone or tile. (Dress and bake the pizza immediately for a crisp crust or rest the dough for 30 minutes if you want a chewy texture.)
- Brush the rim of the pizza with olive oil. Spread the pizza sauce evenly onto the pizza. Sprinkle the herbs onto the pizza and top with the cheese.
- Slide the pizza onto the tile and bake for 7 minutes, or until bubbly and golden brown. Rest for 3 minutes before slicing.
- *This recipe's been on the web for some time now and although most of the reactions have been darned positive, some of you have commented that the dough was way too salty. At first we chalked this up to personal preference; some folks are just not as sensitive as others to this basic flavor. And of course salty toppings would definitley change the dynamic. Still, we didn't want to leave it at that. We went back to the lab and found that the flake size of kosher salt differs quite a bit from brand to brand. This could easily result in a too salty crust. So unless you've had success with the recipe in the past, we suggest you cut the salt by one teaspoon, from a tablespoon to two teaspoons. So that the yeast doesn't go crazy, you should also cut back on the sugar by half a teaspoon. Thanks, AB

PIZZA ESSENTIALS: THE ULTIMATE SWEET PIZZA SAUCE
I have two favorite pizza sauces, one is a tart sauce that I have already posted, and this one is more of a sweet sauce. Not a sweet, sweet sauce but just enough sweetness to let you know that it is there. It was used quite a bit at the mom-and-pop Italian pizzerias that I grew up with. This is my go-to sauce whenever I am...

Steps:
- 1. PREP/PREPARE
- 2. A good solid saucepan, without any hotspots, is essential to this recipe.
- 3. What gives this sauce its unique flavor is not just the honey, but the proper cooking of the tomato paste. We are going to cook it, almost to the point of caramelization. One minute it will be nice and brown, and the next it will be a burned mess. Once that process is started, you will never leave the pan unattended.
- 4. One of my favorite brands of tomatoes is Cento. I think that they have the perfect balance of tomato flavors to compliment this recipe.
- 5. Gather your Ingredients (mise en place).
- 6. Add the olive oil to a saucepan, over medium-low heat.
- 7. When the oil heats up, add the chopped garlic.
- 8. Cook until it turns a golden brown, about 2 - 3 minutes.
- 9. Use a strainer to remove the garlic from the oil, and then return the oil to the saucepan.
- 10. Add the tomato paste, and red-pepper flakes, if using.
- 11. Raise the heat to medium, and cook until the tomato paste begins to turn brown, and almost caramelizes, about 5 - 7 minutes.
- 12. Add the tomatoes, dehydrated onions, basil, oregano, and parsley.
- 13. Bring up to a light boil, then lower the heat, and lightly simmer for 20 - 30 minutes.
- 14. Chef's Note: Give the sauce a swirl with a spoon, about every minute or so.
- 15. Remove from the heat, and add the honey, and salt, to taste.
- 16. Add to a blender or food processor, and blend until smooth.
- 17. Allow to completely cool, place in a jar, with a tight-fitting lid, and place in the fridge until needed.
- 18. PLATE/PRESENT
- 19. Use whenever you are looking for an awesome, slightly sweet pizza sauce. Enjoy.
- 20. Keep the faith, and keep cooking.

- Iron Mike’s Sweet Pizza Sauce. No, it’s not that Iron Mike, but this sweet pizza sauce still packs a punch. The secret is brown sugar. It brings out the saccharine flavor without overpowering your others herbs and spices.
- Ultimate Savoury and Sweet Pizza Sauce. When you can’t decide between the sweet and the salt, try both! This sauce balances the two taste elements beautifully.
- Oh Sweet Basil Pizza Sauce. This sweet pizza sauce has the standard basil, oregano, and olive oil. But it adds brown sugar, parmesan, and butter, so the sauce feels extra creamy and luxurious.
- Susan’s Sweet Pizza Sauce. Olive oil is a common base for pizza sauce. It’s healthy and it gives that authentic Italian feel. It also uses tomato paste – which is drier and more concentrated than fresh or canned tomatoes.
- Senior Skillet Sweet Pizza Sauce. Tomato puree is a convenient starting point for red pizza sauce recipes. It already has the right consistency so all you’re doing is adding flavor.
- Chef John’s Secret Pizza Sauce. Here’s another recipe that sneaks some fish into your marinara. It’s just a dash though – no one will know it’s in there unless you tell them.
