THE ULTIMATE FILET O FISH SAMMIE

The Ultimate Filet O Fish Sammie image

Provided by Tyler Florence

Categories     main-dish

Time 25m

Yield 2 servings or 1 large sandwich

Number Of Ingredients 17

1 whole tail piece fresh halibut (1 1/4 inches thick, by about 1 foot long)
1 cup all-purpose flour
1 egg, beaten
1 cup milk
1 1/2 cups panko bread crumbs
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
1 cup mayonnaise, store-bought
1 lemon, juiced
1 handful fresh parsley leaves, finely chopped
1 handful fresh basil leaves, finely chopped
1 handful chives, finely chopped
2 tablespoons olive oil
1 foot long sourdough baguette
1 cup lightly packed hydroponic arugula (leafy variety, with stems)
1 ripe avocado, cut in thick slices
1 beefsteak tomato, cut in thick slices

Steps:

  • Preheat oven to 350 degrees F.
  • Put a large sheet tray in oven and heat it for 1/2 hour.
  • Begin by patting the halibut fillet dry. If you have a tail end piece cut the fillet down the middle so you can invert the 2 pieces next to each other to form a nice rectangular shape that matches the bread. Set up a breading station with flour, beaten egg and milk, and bread crumbs in separate containers. Season with salt and pepper. Dip each fillet into the flour, egg mixture, and then panko. Set aside on a tray at room temperature to let the coating set.
  • Pull out sheet tray from oven, add a 2-count of oil and transfer breaded fish to tray. Sprinkle with olive oil. Bake for 30 minutes or until golden brown.
  • Combine lemon herb mayonnaise ingredients in a bowl and blend until well combined. Season with salt and pepper, to taste. Split the baguette in half horizontally. Open it up and toast it in a hot oven until just warmed through. Smear each half with lemon herb mayonnaise and stack up arugula, tomato and avocado on 1 half. Top with crispy panko fish fillets and top with the other half of bread. Skewer in 2 places and cut across the middle. Serve with more lemon-herb mayonnaise on the side.

ULTIMATE FISH CAKES

Ultimate fish cakes image

Angela Nilsen went in search of perfection in her quest to pack flavour and texture into fish cakes.

Provided by Angela Nilsen

Categories     Dinner

Time 55m

Number Of Ingredients 18

125ml mayonnaise
1 rounded tbsp capers, roughly chopped (rinsed and drained if salted)
1 rounded tsp creamed horseradish
1 rounded tsp Dijon mustard
1 small shallot, very finely chopped
1 tsp flatleaf parsley, finely chopped
450g skinned Icelandic cod or haddock fillet, from a sustainable source
2 bay leaves
150ml milk
350g Maris Piper potatoes
½ tsp finely grated lemon zest
1 tbsp flatleaf parsley, chopped
1 tbsp snipped chives
1 egg
flour, for shaping
85g fresh white breadcrumbs, preferably a day or two old
3-4 tbsp vegetable or sunflower oil, for shallow frying
lemon wedges and watercress, to serve

Steps:

  • Mix together 125ml mayonnaise, 1 rounded tbsp roughly chopped capers, 1 rounded tsp creamed horseradish, 1 rounded tsp Dijon mustard, 1 small very finley chopped shallot and 1 tsp finely chopped flatleaf parsley. Set aside.
  • Lay 450g skinned Icelandic cod or haddock fillet and 2 bay leaves in a frying pan. Pour over 150ml milk and 150ml water.
  • Cover, bring to a boil, then lower the heat and simmer for 4 mins. Take off the heat and let stand, covered, for 10 mins to gently finish cooking the fish.
  • Meanwhile, peel and chop 350g Maris Piper potatoes into even-sized chunks. Put them in a saucepan and just cover with boiling water. Add a pinch of salt, bring back to the boil and simmer for 10 mins or until tender, but not broken up.
  • Lift the fish out of the milk with a slotted spoon and put on a plate to cool. Drain the potatoes in a colander and leave for a min or two.
  • Tip the potatoes back into the hot pan on the lowest heat you can and let them dry out for 1 min, mashing them with a fork and stirring so they don't stick. You should have a light, dry fluffy mash.
  • Take off the heat and beat in 1 rounded tbsp of the sauce, then ½ tsp lemon zest, 1 tbsp chopped flatleaf parsley and 1 tbsp snipped chives.
  • Season well with salt and pepper. The potato should have a good flavour, so taste and adjust to suit.
  • Drain off liquid from the fish, grind some pepper over it, then flake it into big chunks into the pan of potatoes.
  • Using your hands, gently lift the fish and potatoes together so they just mix. You'll only need a couple of turns, or the fish will break up too much. Put to one side and cool.
  • Beat 1 egg on a large plate and lightly flour a board. Spread 85g fresh white breadcrumbs on a baking sheet. Divide the fish cake mixture into four.
  • On the floured board, and with floured hands, carefully shape into four cakes, about 2.5cm thick. One by one, sit each cake in the egg, and brush over the top and sides so it is completely coated.
  • Sit the cakes on the crumbs, patting the crumbs on the sides and tops so they are lightly covered. Transfer to a plate, cover and chill for 30 mins (or up to a day ahead).
  • Heat 3-4 tbsp vegetable or sunflower oil in a large frying pan. To test when ready, drop a piece of the dry breadcrumbs in - if it sizzles and quickly turns golden brown, it is ready to use.
  • Fry the fish cakes over a medium heat for about 5 mins on each side or until crisp and golden. Serve with the rest of the sauce (squeeze in a little lemon to taste), lemon wedges for squeezing over and watercress.

THE ULTIMATE FISH FILLET SANDWICH

The Ultimate Fish Fillet Sandwich image

This recipe was inspired to me by Tyler Florence from the Food Network show. I wanted to share the recipe here but with a few changes that suits our families taste. Only changes that I made was replacing the tarter cream sauce he made, which was made up of mayonnaise, lemon juice, fresh parsley, basil, and chives, black pepper and olive oil and replacing it with my recipe for Recipe #114732 and replacing romaine lettuce for the arugula he used on the sandwich.

Provided by Marsha D.

Categories     Lunch/Snacks

Time 1h

Yield 2-4 serving(s)

Number Of Ingredients 14

1 (12 inch) tail piece fresh halibut (a foot long)
1 cup flour
1 egg, beaten
1 cup milk
1 1/2 cups panko breadcrumbs, breadcrumbs
kosher salt
fresh ground black pepper
olive oil
1 loaf French bread
1 avocado, ripen, peeled and sliced
1 beefsteak tomato, sliced
romaine lettuce
1/2 cup tartar sauce
butter, soften to taste

Steps:

  • Preheat oven to 350'.
  • Place a baking sheet in oven and let heat up for a good 20-25 minutes while.
  • (this is to help keep the fish crispy on bottom of the fish fillet) while preparing the fillets.
  • Set up a breading station with 3 separate deep bowls or containers.
  • Add flour, kosher salt and black pepper to one containter and set aside.
  • In the 2nd containter, add egg and milk , whipped up together and adding a touch of salt and black pepper , and set aside.
  • In the 3rd containter add Panko breadcrumbs with more salt and black pepper.
  • Cut halibut tail into 2 pieces.
  • Dip each halibut fillet into the flour mixture first than into the egg mixture, and than into the panko breading.
  • Set each fillet onto a cutting board or a plate to let rest 5 minutes.
  • (this is to let the breading mixture settle on the fish fillet).
  • Bring out baking sheet from oven and sprinkle some olive oil over the pan.
  • Place halibut fillets on hot baking sheet ( it should sizzle when placing on sleet).
  • Bake 30 minutes or until a golden brown.
  • Split open the french bread and spread butter over each slice of french bread.
  • Toast bread in oven until a light golden brown.
  • Add tarter sauce to each toasted side of bread.
  • Add the fish fillet to one side of bread.
  • Add avocado, tomato and romaine lettuce on top of fish.
  • Top with other side of bread and serve.
