BEST BREAKFAST CASSEROLE
This is my family's favorite breakfast recipe, always served on holiday mornings. It's great when complemented with fruit and resurrection cinnamon rolls. You can assemble this casserole, cover it with plastic wrap, and refrigerate it overnight before baking, if desired.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir sausage and water in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray. Spread crescent roll dough out into prepared baking dish to cover the inside of the dish completely. Prick dough all over with a fork.
- Bake in the preheated oven until slightly set, about 5 minutes.
- Beat eggs, milk, salt, and black pepper together in a bowl.
- Spray a large skillet with cooking spray and place skillet over medium heat. Cook and stir egg mixture in hot skillet until eggs are set, 3 to 5 minutes. Break up eggs into small pieces using a wooden spoon. Spread eggs evenly over crescent roll dough, spread sausage over eggs, and top with Cheddar cheese.
- Bake in the preheated oven until crust is browned and casserole is hot, about 25 minutes.

- Grease a 9x13 inch pan. Add the frozen and shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.
- In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
- Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
- Bake uncovered at 350 degrees for 90 minutes. Let rest for 10 minutes before serving.

This recipe is from Southern Living Magazine but tweaked a bit by me. It's great for an early-morning breakfast or brunch for a crowd, because you can do most of the work ahead of time and just throw it in the oven the morning you want to serve it.

Steps:
- Cook sausage in a skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
- Place bread cubes in a lightly greased 9" X 13" baking pan.
- Sprinkle bread evenly with cheese, and top with sausage (or ham).
- Whisk together eggs, milk, salt, pepper, dry mustard and Worcestershire sauce and pour evenly over sausage mixture.
- Cover and chill casserole for 8 hours (may be frozen at this point, and thawed before cooking).
- Let stand at room temperature 30 minutes.
- Bake at 350 degrees for 45-50 minutes, or until set.
- Let stand 5 minutes before serving.

Steps:
- Melt the first five ingredients (or six if you use the sour cream or onion dip) in the microwave, stirring every couple of minutes until cheese is melted and the mixture is smooth and creamy.
- Let the cheese mixture cool.
- In a extra large mixing bowl, add dry ingredients (Flour or baking mix and spices).
- When the Cheese mixture has cooled, add it to the dry mix.
- next add eggs, meat, mushrooms and peppers.
- Last add the potatoes (make sure they are not frozen and if they seem wet use a paper towel and pat them dry).
- When everything has been mixed, divide and pour the batter into two 9x13 sprayed or greased baking dishes. (I usually freeze 1/2 for a later date). This recipe freezes well.
- Top the batter with crumbled Ritz crackers or even Lay's potato chips.
- Bake on 375° to 400° (depending on how hot your oven gets) for 45 minutes or until done.
- Serve with Salsa, sliced tomatoes, or sour cream and enjoy!

- 1. Mix up the water and gravy mix and start it cooking, making sure to keep stirring it to prevent lumps or scorching.
- 2. You can deep fry the hash browns in oil until golden brown (I did this once and it turned out really well). Or in a skillet, add some butter and brown the hash browns really well. You have to cook the hash browns a little at the time to get an even browning. You could also do this in a large baking pan (you would have to just stir them to get them evenly browned).
- 3. Scramble cook the sausage. Set it aside in a strainer, inside a bowl if possible, to strain all the grease off the sausage.
- 4. Cook the bacon. Crumble it on a paper towel to absorb all the grease.
- 5. Cook the scrambled eggs and set them aside.
- 6. In a large deep dish baking pan, (I use the disposable foil pans for lasagna, works great and makes for quick and easy clean up), layer the hash browns, sprinkle a little salt and pepper to taste.
- 7. Sprinkle a fine layer of cheese on top of the hash browns.
- 8. Then a layer with half the scrambled eggs, sausage, and bacon. Top that with half of the gravy.
- 9. Repeat layers and top the gravy with a layer of cheese.
- 10. Place the casserole in the oven for about 20 minutes to melt the cheese and to bring everything together. Remove from oven and serve warm with your favorite toast, biscuit or bread.
- 11. Or you could cover the casserole and place it in the refrigerator till the next morning. Place in a 350 degree oven for 30 minutes to warm it up and melt the cheese.
FRENCH FRY BREAKFAST CASSEROLE
Steps:
- Begin by warming your French fries in your casserole dish until they are hot to the touch. If using frozen fries, bake them according to the package instructions. The fries work best when slightly crispy to start, so spray them with butter or toss with oil as they bake.
- In a mixing bowl, combine eggs, half and half, salt, pepper, and garlic powder. Whisk to combine. Pour on top of your warmed French fries.
- On top of your French fry and egg mixture, add your desired meats, tomato, and onion, etc. Bake at 400°F for 20 minutes, or until the center of your casserole appears to be done. Remove from the oven and add cheese to the top. Place back into the oven, and bake for an additional 10 minutes, or until cheese is melted and appears to start to turn golden in color. Remove from the oven, serve, and enjoy.

- Preheat your oven to 400F/200C and get a 9x13 casserole pan out. On one baking sheet pan, toss the diced sweet potato with olive oil, garlic powder, paprika, cumin, salt, and pepper. Set aside.
- On another sheet pan, add slices of bacon. Then place both the sweet potato and bacon in the oven and cook for 18-20 minutes, or until the bacon is done. The bacon will be done first, so keep an eye on it and remove it from the oven when it's done, and place on paper towels to dry. Stir the sweet potato and continue cooking it for another 15 minutes.
- While the sweet potato is cooking, cook the breakfast sausage in a pan on medium high heat. Once it's browned, remove it with a slotted spoon and place it in the casserole pan.
- Drain off all but a tablespoon of grease from the pan, then saute the onion and bell pepper for 4-5 minutes. Add the minced garlic and saute another 30 seconds. Transfer the onion and bell pepper to the casserole pan.
