JALAPEñO HOT SAUCE
Learn how to make the best Jalapeño Hot Sauce! This recipe is super easy, requires only 5 ingredients and tastes so much better than store-bought hot sauce.

Steps:
- Remove the stems from the jalapeños and slice each in half lengthwise. Use a spoon to remove the seeds for less heat if desired *(see note).
- Add jalapeños to a blender along with the garlic, salt, 2 tablespoons vinegar and water.
- Blend on high until totally smooth. This may take several minutes depending on your blender. Taste and add more salt and/or vinegar if desired.
- Transfer hot sauce to a jar and refrigerate for up to 2 months.
- If desired, you can ferment the hot sauce by leaving the jar out at room temperature, covered, for about a day. This will give it a deeper, more interesting flavor. Refrigerate after fermenting.
- You can also cook the hot sauce for a milder, more mellow flavor. Pour the mixture into a sauce pan and cook, stirring constantly, over medium heat until the color changes to a deeper, duller green; about 2 minutes. Remove from heat and allow to cool before transferring to a jar.
- All three methods produce excellent results. Experiment with them until you find what flavor works best for you!

- In a medium glass or enamel lined sauce pan over high heat, combine oil, peppers, garlic, onion and salt; saute for 4 minutes. Add the water and cook for 20 minutes, stirring often. Remove from heat and allow mixture to cool to room temperature.
- Transfer the mixture to a food processor and puree until smooth. With the processor running, slowly add the vinegar.
- Pour into a sterilized jar with a tight lid. This sauce will keep for 6 months when stored in the refrigerator.

- Slice onion into 1/2 inch slices.
- Place peppers, onion slices and whole tomatoes on a foil lined baking sheet. Roast in a 300 degree oven for approximately 20 minutes or until items show browning or slight charring. Blend half of the peppers, 1 tomato and garlic cloves in a blender (low speed). Add remaining peppers, onion slices, tomato and salt. Use lowest blender speed to blend into a chunky salsa. Pour into bowl and serve with tortilla chips. Heat index will vary by strength of peppers. Very useful to spice up meat dishes or soups. Keeps well in fridge for 7-10 days.

- In a large skillet over medium heat, cook onions until brown and carmelized. Add ground beef and cook until brown.
- Add salt, pepper, garlic powder and beef broth to cover. Reduce heat to low and simmer, uncovered, until broth is gone, 15 to 30 minutes.
- Serve meat on buns topped with dill pickle slices and mustard.
- *We steam the buns on top of the meat (with lid on skillet) for a minute or two to get them nice and soft.

BARBECUE SAUCE - THICK AND SPICY
Oh man, are ya'll in for a treat! :) This Texas barbecue sauce is thick, semi-sweet and spicy. Not really hot spicy (just a little). If you are sensitive to spicy hot then omit the red pepper. This is pretty thick but can be thinned with additional broth or even beer. This is my signature sauce I made in my BBQ stand here in TX and it was a real hit, it took me around 6 months of trial and error to perfect it. I could have kept it a secret, but why. If you like really sweet and mild then this is not for you. This is a sauce you can use for mopping (basting) or as a dipping sauce or for sandwiches. Now.....Quit drooling and get to cookin! This sauce was made to compliment low and slow smoked meats, but hey, if you buy the stuff and you make it, it is your sauce, put it toast as far as I care! Ha ha. This recipe can easily be doubled or tripled for big parties!!

- Place all ingredients in a pot in order of list, stir with a whisk to blend, bring to a simmer and simmer very slowly for about an hour to an hour and a half. Watch carefully and stir so not to scorch the bottom. A slow cooker is perfect. I suggest serving warm, it is a thick sauce.
- You can taste this at any time but before making adjustments I recommend simmering for an hour before making adjustments to allow all the flavors to blend, you will not get the true finished flavor after just 5 minutes.
- If it is not sweet enough add more sugar, for thinner sauce add more broth, beer or water. Don't want little chunks of onion then sub a teaspoon or so of onion powder.
- This recipe can easily be doubled, tripled, etc. for bigger batches, I quadrupled it for the BBQ stand.
- This stores nicely in the refridgerator.
