BEST CHEESE BISCUITS
A rich, cheesy biscuit that is good with soup, chilli, or stew. Medium cheese can be used, but sharp cheese will give more flavour.

Steps:
- Measure first 4 ingredients into bowl.
- Add grated cheese.
- Stir.
- Add cooking oil and milk.
- Stir to form a soft ball of dough.
- Add more milk if needed to make dough soft.
- Turn out on lightly floured board and knead gently 8-10 times.
- Roll to 3/4 to 1 inch thick.
- Cut with biscuit cutter.
- Place on ungreased cookie sheet close together for moist sides or 1 inch apart for crisp sides.
- Bake in 425 degree oven for 15 minutes or until nicely browned.
- Serve plain or with butter.

- Preheat the oven to 425 degrees.
- Sift together the flour and salt. Add the butter, piece by piece, and the cream cheese. Mix until you have a dough that holds together.
- Do not overmix.
- Turn the dough out onto a lightly floured work surface and, with a rolling pin, roll it out to a thickness of about 1/2".
- Cut out rounds with a biscuit cutter and place on a lightly buttered baking sheet. Bake until pale brown, about 20 minutes.
- Serve warm.

- Mix baking mix, orange peel and orange juice till soft dough forms; beat vigorously 30 seconds.
- Turn dough onto surface generously dusted with baking mix; roll in baking mix to coat.
- Shape into ball; knead 10 times.
- Roll 1/2 inch thick.
- Cut with 2 1/2 inch cutter dipped in mix.
- Place on ungreased cookie sheet.
- Mix cream cheese and marmalade.
- Spoon 1 tsp onto center of each circle; srpinkle with sugar.

- Cut in butter and cream cheese until mixture is crumbly.
- Make well in center; pour in milk.
- Stir just until dough clings together.
- Knead gently 4 or 5 strokes on lightly floured surface.
- Roll to 1/2-inch thickness.
- Cut with floured 2-inch biscuit cutter.
- Place on baking sheet.
- Make indentation in each biscuit with thumb.
- Brush biscuits with additional milk.
- Spoon about 1/2 teaspoons jam into each indentation.
- Bake at 450 degrees for 10 to 12 minutes or until golden brown.

ORANGE PECAN CREAM CHEESE PULL-APART DANISH LOAF
This is one of my most treasured recipes. Flaky refrig biscuits are filled with cream cheese, dredged in butter, rolled sugar, pecans, orange zest. Baked in a bundt pan, the loaf is inverted and drizzled with a glaze. Pull off a danish and slip into bliss.

Steps:
- Combine sugar, pecans, orange zest.
- Separate each biscuit, (there shoud be 20 biscuts - so you will have 40 layers).
- Cut cream cheese into 20 pieces.
- Place one piece of cream cheese on each of 20 biscuit halves.
- Top with remaining biscuits halves and pinch the edges to seal them.
- Dip filled biscuits in melted butter.
- Dredge in the sugar mixture. I do have to make extra mixture sometimes.
- Stand each biscuit on it's edge in a lightly greased 12-cup bundt pan, spacing evenly, but together.
- Drizzle with remaining butter and sugar mixture.
- Bake at 350 degrees for 45 minutes, or until golden brown.
- Immediately invert onto a wire rack.
- Combine powdered sugar and orange juice, and drizzle over the danish.
- Serve immediately.

- Preheat oven to 325 degrees F (165 degrees C).
- Place chicken in a 9x13 inch baking dish and season with salt and pepper to taste. Cover each chicken breast with a slice of cheese.
- In a medium bowl mix together the soup, sherry and sour cream, and pour mixture over chicken. Soften dill in melted butter; toss croutons in butter, and sprinkle them on top of chicken.
- Bake in the preheated oven for 45 minutes, or until chicken is cooked through.

Steps:
- Combine the granulated sugar, pecans and orange rind in a bowl; set aside for future use.
- Separate biscuit dough into individual biscuits; then gently separate individual biscuits in half.
- Place a cream cheese square between the 2 halves and pinch sides to seal each back together.
- Dip in butter and dredge in granulated sugar mixture.
- Stand biscuits on edge in a lightly greased 12-cup Bundt pan, spacing evenly.
- Drizzle with remaining butter and sprinkle with remaining granulated sugar mixture.
- Bake at 350 degrees for 45 minutes or until golden.
- Immediately invert onto a serving plate.
- Glaze: Combine powdered sugar and orange juice; stir well.
- Drizzle over warm bread.
- Serve immediately.
- You may omit the cream cheese but still separate biscuits in half and dip as normal in sugar mixture.
- We do a half and half batch.
- There is not a strong orange flavor here.

I adapted this from a recipe in the King Arthur Flour baker's companion. It was originally for Herbed biscuits, but the little ones balk at green flecks in their biscuits. They are to die for!!

Steps:
- Preheat oven to 425 degrees.
- Measure dry ingredients into food processor and pulse until well combined. Add cheese and cut butter and cream cheese into small chunks and distribute throughout processor bowl.
- Hit pulse about 10 times for 1-2 seconds each pulse until course crumbs develop.
- Pour milk through feed tube in a slow stream while pulsing until cohesive but crumbly dough forms.
- Turn dough onto floured surface and gently squeeze it into a ball. Flatten and gently shape into an 8 by 8 inch square. Cut into 16 even squares.
- Place on ungreased baking sheet and bake 15-18 minutes until lightly browned.

- Preheat oven to 450°F. In bowl, stir baking mix, orange peel and orange juice until soft dough forms. Beat for 30 seconds. Place dough on surface that's been generously dusted with baking mix. Roll in baking mix to coat, knead 10 times. Roll dough 1/2" thick. Cut with a 2-1/2" cutter dipped in baking mix. Place biscuits on ungreased cookie sheet. Press thumb slightly in center of each biscuit.
- In small bowl, stir together cream cheese and marmalade. Spoon about 1 tsp. cream cheese mix into center of each biscuit, sprinkle with sugar.
- Bake for 7-9 minutes or until golden brown.
