2 rounded tablespoons tomato paste
1 medium onion, chopped
Salt and pepper
1 teaspoon sugar
4 tablespoons all-purpose flour
2 tablespoons butter, cut in pieces
1 stalk of celery, coarsely chopped
1 clove garlic
1/2 cup Watercress and Hazelnut Pesto or store bought prepared basil pesto, available on dairy aisle
12 ounces watercress, stems removed
1/2 cup hazelnuts, toasted
1/2 cup extra-virgin olive oil, eyeball it
2 cloves cracked garlic
1/4 teaspoon ground or grated nutmeg
Salt and pepper
1/2 cup grated Parmigiano-Reggiano
Extra-virgin olive oil, for drizzling, plus 1 tablespoon
4 sweet Italian sausage patties, 1/4 pound each, available in packaged meat case of the market
1 cubanelle long sweet Italian light green pepper, seeded and sliced
1 medium yellow skinned onion, sliced
Salt and pepper
8 slices Italian bread, or white bread
8 slices deli-sliced provolone

Steps:

  • Heat the milk over moderate heat in a medium pot. Put tomatoes, tomato paste, onions, salt and pepper, sugar, flour, butter, celery into a food processor and grind until smooth. Pour mixture into milk and raise heat to bring soup to a boil. Reduce heat and simmer 15 minutes. While soup cooks, make pesto and sammies.
  • Fill the food processor with watercress, loosely packed. Add hazelnuts, 1/2 of the oil and garlic cloves to the watercress in the processor. Add nutmeg, salt and pepper to the processor bowl, set lid in place and pulse grind the mixture into a thick paste. Add any remaining watercress to the processor and grind into the paste by pulsing the processor again. Transfer watercress paste to a bowl. Stir in the remaining oil and the cheese. Taste pesto sauce and adjust seasonings.
  • Heat a griddle over medium high heat. Drizzle the pan with extra-virgin olive oil and add the patties and cook 5 minutes on each side. Remove from the griddle and add another tablespoon extra-virgin olive oil and the peppers and onions. Season the peppers and onions and cook until just tender, 5 minutes. Remove them from the griddle. Wipe the griddle clean and reduce heat to medium low. Assemble sandwiches: place 4 slices of bread down, top with 1/4 each of the peppers onions, then a slice of cheese, a cooked sausage patty, another slice of cheese and then place bread on top. Add butter to griddle and cook sammy melts 2 or 3 minutes on each side until golden and cheese is melted. Press with spatula as sammies cook or set another heavy skillet on sammies to weigh them down.
  • Pour soup into shallow bowls and add a couple of rounded spoonfuls of pesto to each dish and stir it into the soup. Cut the patty melts corner to corner and dip in the soup as you eat.

HOMEMADE SWEET ITALIAN SAUSAGE (MILD OR HOT)

Homemade Sweet Italian Sausage (Mild or Hot) image

This is a very versatile Italian sausage which can be used in many different ways. You can take it from mild to hot and it's very easy to use. There are also different options for type of meat to use, like ground chuck or ground turkey (do not use ground beef). If using ground turkey, you'll have to coat your skillet with a little olive or veggie oil before cooking as it has very little fat and will stick to skillet.

  • 5. Place about 1 tablespoon butter in another skillet over medium to medium high heat. Swirl butter to coat bottom of skillet and add one slice of bread. Place sausage patty on top, then 1/2 the onion and mushroom mixture. Add a couple slices of mozzarella and continue cooking until bread is golden brown ( about 2 minutes ) Carefully , move sandwich enough to add another Tablespoon of butter and place top slice of bread on top of the mozzarella cheese.
  • 6. Carefully flip the sandwich over to brown the other side. Remain cooking until other side is crispy and brown and cheese is thoroughly melted.
  • 7. Cut sandwich in half and add your favorite condiments. I used mayonnaise and mustard. Repeat steps for other sandwich. Enjoy this yummy sandwich.

SAUSAGE MELTS

Sausage Melts image

Another open faced sandwich. The idea for this came from Bangers and Mash, one of DH favorite meals. Its too hot to make it durring the summer tho, so I thought this would cure the craving, at least until autumn. I got 6 melts out of this but felt that I stretched the sausage meat too far so I am suggesting that this makes 4. If your bread is small or if you need to stretch it, you can get 6 out of these. I used Jimmy Dean sausage, the kind you get in the tubular shaped package near the breakfast meats since I was shopping on a budget, but use whatever type you like best. I made these with Dijon mustard but we also thought Colmans mustard would be a nice touch. Use your favorite or whatever you have on hand. I served these with fries.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

1 tablespoon olive oil
1 large onion
2 tablespoons red wine vinegar
1 tablespoon brown sugar
1 lb ground sausage
4 slices rye bread, 1/4 inch thick
Dijon mustard, to taste
4 slices swiss cheese (to taste)

Steps:

  • Peel and slice onion into thin rounds (or half rounds)and cook in olive oil over medium heat, stirring frequently, until they are very soft.
  • Meanwhile, form sausage meat into 4 thin patties. Try to form them so that they are slightly bigger than the bread slices since they will shrink when you cook them.
  • When the onions are soft add the brown sugar and the vinegar. Stir and cook until the onions are browned.
  • Fry sausage patties in a pan (use a little extra oil if your pan isn't non-stick) for about 3 to 5 minutes per side until cooked through or to your desired doneness (we like them very brown).
  • Meanwhile, spread dijon mustard on each slice of bread in desired amounts.
  • Top each slice of bread with a cooked sausage patty, then the onions, then the cheese.
  • Place under the broiler (set to low so it won't cook too fast or burn) until cheese is melted and bubbling.
