This cookie is BY FAR my family's favorite cookie that always disappears first on the Christmas cookie tray! They are very simple, but kids and adults alike love this chewy, chocolaty cookie. I usually double the recipe, which will use one 12 oz. bag of M&M's. You can make these festive by using holiday M&Ms, which I love to do at Easter and Christmas

- Cream together shortening and sugars until light and fluffy.
- Add eggs and vanilla and beat until combined.
- Add combined flour, salt, and baking soda and mix until well combined.

- Preheat the oven to 350 F.
- Microwave the butter for about 40 seconds. Butter should be completely melted but shouldn't be hot.
- In a large bowl, mix butter with the sugars until well-combined.
- Stir in vanilla and egg until incorporated.
- Add the flour, baking soda, and salt. Mix until just combined. Dough should be soft and a little sticky but not overly sticky.
- Stir in M&Ms and chocolate chips, if using.
- Scoop out 1.5 tablespoons of dough (medium cookie scoop) and place 2 inches apart on the baking sheet.
- Bake for 7-10 minutes, or until cookies are set. They will be puffy and still look a little underbaked in the middle.

- Position an oven rack in the center of the oven and preheat to 350 degrees F. Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on both sides. Butter the foil.
- Pulse the graham crackers into fine crumbs in a food processor. Add the melted butter and pulse to combine (the mixture should hold together when squeezed). Transfer the mixture to the prepared baking dish and press it into the bottom in an even layer, using the bottom of a measuring cup to help. Pour the sweetened condensed milk over the crumbs. Sprinkle the chocolate chips, peanuts, marshmallows, M&M's, candy canes and sprinkles over the condensed milk.
- Bake until the sides are golden brown and begin to pull away from the baking dish, 30 to 35 minutes. Let cool completely, about 1 hour. Using the foil liner as handles, lift the bars out of the baking dish; remove the foil. Cut into 24 bars.

- Preheat your oven to 350ºF and line two cookie sheets with parchment paper.
- Cream the softened butter, white sugar and brown sugar together in the bowl of your stand mixer with the paddle attachment until light and fluffy. About 2 minutes.
- Add in your egg, egg yolk and vanilla and cream on low until combined. Scrape the bowl to make sure everything is combined evenly.
- Add in the flour, baking powder, baking soda and salt and mix on low until combined.
- Scoop the dough onto your cookie sheet using a #20 scoop (about two tablespoons per scoop) and place a few M&M's on top so you can see the colors when they bake.
- Bake for 10-12 minutes or until the center of the cookie is no longer shiny. Cookies will be pale.
- Allow your cookies to cool on the pan for 5 minutes before transferring them to a wire rack to cool the rest of the way. Store at room temperature in an air tight container for up to two weeks.

- In a large bowl, whisk together the flour, cornstarch, baking soda, and salt until well-combined.
- In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, cream cheese, brown sugar, and granulated sugar together until smoothly combined, wiping down the bowl and beater as needed. - Sift the flour, baking powder, baking soda and salt into a large bowl.
- Beat the butter, brown sugar and granulated sugar in a bowl with a mixer on medium-high speed until pale and fluffy, about 4 minutes. Beat in the eggs one at a time until smooth, then beat in the vanilla. Reduce the mixer speed to low. Add the flour mixture and beat until combined. - Preheat oven to 350°F. Line two baking sheets with silicone mats or parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
- Using a hand mixer or stand mixer fitted with the paddle attachment, beat butter and both sugars for 2 minutes, until light and fluffy. Add egg and vanilla extract, mixing until combined, scraping the sides of the bowl as needed. On low speed, add in flour mixture and mix until just combined.
- Gently stir in M&M's/chocolate chips - I usually add about 3/4 cup into the batter, the rest get pressed on top of the cookies before baking.
- Scoop balls of dough, between 1.5 and 2.5 tablespoon portions (a little smaller or a little larger than a golf ball). Drop dough onto prepared baking sheets leaving an inch or two for spreading. I like to mound the dough balls so that they're higher rather than wider (for thicker cookies). Using the remaining M&M's/chocolate chips, nestle several (5 or so) onto the top of each mound of dough. Keep in mind that the cookies will spread out while baking, so be generous.
- Bake for 8-11 minutes (see note), until the edges of the cookies are set but the center is still slightly underdone, this will create a soft cookie. For a crispier cookie, continue baking for another minute or two. See note about getting perfectly round cookies.
- Place the baking sheets on wire racks and allow the cookies to cool completely. They will firm up as they cool.

Something i found from the kahlua website (www.kahlua.com) which turned out really well. And man...who can refuse M&Ms and kahlua!! Turns out a nice brown colour, with brightly coloured candy bits. I think the wonderful texture came from the grounded oatmeal. Try this for something different.
