MAMA'S SPAGHETTI WITH MEAT SAUCE
This is adapted from my mom's spaghetti recipe. It's a family favorite that simmers while you prepare the pasta--great for busy nights. Leftovers make a great lunch. I usually serve this over spaghetti, but sometimes I use linguine, fettucine, or penne. Good with garlicky bread and a salad. You can also make the sauce ahead and freeze it (it freezes quite well); just thaw and heat.

Steps:
- Brown beef in a saucepot or large, deep skillet over medium heat; drain.
- Add garlic and saute until just turning white.
- Add onion, celery, and mushrooms. Saute until tender, about 5-7 minutes.
- Add tomatoes with juice and tomato sauce. Stir to combine. Add tomato paste and mix together. Stir in herbs and bay leaves. Season to taste with salt and pepper. Add a pinch of brown sugar, if desired.
- Bring sauce to a simmer; reduce heat and simmer, uncovered, for 15-20 minutes, stirring occasionally. Meanwhile, prepare pasta according to package instructions.
- Before serving, remove bay leaves and taste; adjust seasoning as desired. Serve over hot pasta, sprinkled with Parmesan cheese.

Steps:
- Pour the olive oil into a skillet and set over medium heat. Add the garlic clove, and cook until the clove is browned. Remove the garlic from the oil, and finely crumble the slices of bread into the skillet. Cook until nicely toasted, then scoop out the crumbs onto a paper towel. Reserve the oil.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add the spaghetti, and cook for about 8 minutes, until tender. Drain.
- Mix the reserved oil into the spaghetti, then place onto serving plates. Sprinkle with bread crumbs and freshly ground black pepper.

JO MAMA'S WORLD FAMOUS SPAGHETTI
My kids will give up a steak dinner for this spaghetti. It is a recipe I have been perfecting for years and it is so good (if I may humbly say) that my kids are disappointed when they eat spaghetti anywhere else but home! In fact they tell me I should open a restaurant and serve only this spaghetti and garlic bread. In response to requests, I have posted the recipe for Recipe #28559 that uses approximately 1/2 of the sauce from this recipe. Have spaghetti one night and lasagna later! Thanks to all of you who have tried my recipe and have written a review. I read and appreciate every one of them! Chef Note: After I posted this recipe I remembered a funny incident--my dear husband usually has a nice bottle of wine handy so when I make a batch of spaghetti I just help myself to a splash of it. On one occasion, there wasn't a bottle opened, but there was a bottle sitting on the counter so I got out the corkscrew and helped myself. For some reason, the spaghetti that night was the best ever. My husband asked what wine I put in it and I showed him the bottle. He nearly fell off the chair. I had opened a rather expensive bottle he had bought to give his boss. Goes to show you--don't use a wine for cooking you wouldn't drink. You get the best results from a good wine!

Steps:
- In large, heavy stockpot, brown Italian sausage, breaking up as you stir.
- Add onions and continue to cook, stirring occasionally until onions are softened.
- Add garlic, tomatoes, tomato paste, tomato sauce and water.
- Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper.
- Stir well and barely bring to a boil.
- Stir in red wine.
- Simmer on low, stirring frequently for at least an hour. A longer simmer makes for a better sauce, just be careful not to let it burn!
- Cook spaghetti according to package directions.
- Spoon sauce over drained spaghetti noodles and sprinkle with parmesan cheese.

- 1. Brown hamburger and onion. Season to taste.
- 2. Add tomato soup and 1 can of water.
- 3. Cover and simmer while cooking spaghetti.
- 4. Cook spaghetti according to package directions.
- 5. When spaghetti is done, drain and mix with meat/soup. Season to taste.
- 6. Let set about 10 minutes for noodles to absorb some of the sauce.
POOR MAN'S SPAGHETTI

- Cook noodles as directed. While noodles are cooking cut cheese (whole block) into small cubes & set aside.
- When noodles are done to your liking, drain & put back into pot. Pour tomato juice & all of cheese cubes into pot & warm on low/med.

Everyone makes spaghetti a little different, but this is the spaghetti I grew up with. It's my favorite!

Steps:
- Brown Ground Beef, drain.
- In separate pan, saute Onion and Garlic in olive oil.
- Combine Onion and Garlic with Ground Beef in stock pot.
- Salt and Pepper to taste.
- Over medium heat: Add spices and Bay Leaves.
- Add the rest of the Ingredients.
- Add water to taste (I use about a half to a whole can).
- Simmer on low - med for 1 hour, stirring occasionally. Break up whole tomatoes while cooking.
- Serve over your favorite pasta. We typically use vermicelli or angel hair.

MAMA'S CREAMY SPAGHETTI PIE
This is a creamy Spaghetti Pie that I created for my family. It serves 8 people so it's great for larger families.

Steps:
- Heat over to 350 degrees.
- Boil water and cook spaghetti as specified on package.
- Cook beef until done. (Season with Garlic Seasoning as preferred.).
- In a large mixing bowl add 1 cup mozzarella cheese, half of the Romano cheese, 3/4 of the Parmesan cheese, Ricotta cheese, and eggs. Mix together throughly. (Season with Garlic Seasoning as preferred.).
- Drain spaghetti and add to large mixing bowl.
- Mix spaghetti and cheese mixture throughly.
- Grease a large cooking pan and add spaghetti cheese mixture.
- Spread mixture to coat bottom.
- Spread ground beef on top of spaghetti mixture.
- Spread marinara sauce on top of spaghetti/beef mixture.
- Sprinkle additional mozzarella and Romano cheeses on top of mixture.
- Bake for 25 minutes.
- Let sit for 5 minutes to cool.
- Serve to your family sprinkled with left over Parmesan cheese!
MAMA'S CHICKEN SPAGHETTI
Steps:
- Turn crock-pot on to High heat. Dice up small onion and place into crock-pot. Cube both Velveeta blocks and place in crock-pot. Pour cream of mushroom soup, cream of chicken soup, and Ro*Tel into crock-pot.
- While the cheese and soup mix is cooking in the crock-pot, start boiling a pot for you spaghetti noodles. Cook as directed on package of noodles. Continue to stir off and on the cheese and soup mixture.
- Once all of the cheese has melted, add the chicken to the mixture in the crock-pot. Let cook with chicken for about 10-15 minutes. Turn the crock-pot to medium heat, and then add cooked noodles. Let stand in crock-pot for another 15 minutes, and then ready to serve.
