Time 15m

Number Of Ingredients 16

1 Tbsp vegetable oil (or other neutral cooking oil)
1/2 medium onion (sliced or diced)
1 medium carrot (spiralized and chopped or grated)
1 cup green onion (sliced diagonally (green part only))
3 cups baby spinach
14 oz soft vacuum-packed udon noodles (or see Notes for other types of udon you can use(400g))
1-2 tsp Sambal Oelek (or Asian Chili Garlic Sauce/Sriracha, to taste)
1/4 cup soy sauce
2 tsp rice wine vinegar
1 tsp sesame oil
2 Tbsp brown sugar
2 cloves garlic (minced)
1 Tbsp fresh ginger (minced)
Sesame seeds
Additional sliced green onion
1/4 cup chopped parsley or cilantro

Steps:

  • Prepare your vegetables and set aside. Mix up the sauce by combining all the ingredients in a small bowl. Set aside. If you like, you can fill a large bowl with hot tap water and add udon noodles to the bowl to soak, so they can be separated before adding to the wok This isn't necessary though, as you can add fresh udon noodles directly from the package to the wok. I just find it easier to stir fry them having them separate before the go in to the wok.
  • In a large frying pan or wok, heat oil over medium-high heat until very hot. Add carrots and cook, stirring for a minute or so. Add onions and cook, stirring, until onions are soft and carrots are tender. Add green onion and cook, stirring, for 30 seconds or so.
  • If soaking udon noodles, gently stir to loosen udon noodles and separate, then drain. Add drained noodles (or unsoaked noodles)to the wok and cook, stirring, for 30 seconds or so. (Stir fry a little longer is soaked, to cook off any extra water before adding the sauce). Add sauce and cook for another 30 second, stirring to combine well. Scatter baby spinach over top and cook, stirring constantly, until spinach is wilted.
  • Remove stir fry to a bowl or plate and garnish with sesame seeds, additional sliced green onion and parsley/cilantro.

SHRIMP AND PEANUT BUTTER NOODLES

Shrimp and Peanut Butter Noodles image

A staple for me in college, this is a sweet, salty, nutty dish that can be cooked up in less than 15 minutes. Measurements for the sauce can be adjusted for your taste, but with these ingredients, you can't go wrong! I use pre-washed, pre-cut broccoli florets to cut down on prep time as well.

Categories     World Cuisine Recipes     Asian

Time 12m

Yield 4

Number Of Ingredients 9

¼ cup peanut butter
2 tablespoons light soy sauce
2 tablespoons Chinese black vinegar
2 tablespoons white sugar
1 tablespoon sesame oil
10 ounces dried Japanese udon noodles
20 uncooked large shrimp - peeled, deveined, tails left intact
1 cup broccoli florets
¼ cup chopped roasted peanuts

Steps:

  • In a small bowl, mix together the peanut butter, soy sauce, black vinegar, sugar, and sesame oil. Set aside.
  • Bring a large pot of water to a boil. Stir in the udon noodles and cook for 5 minutes. Add the frozen shrimp to the pot of boiling noodles and cook for about 3 minutes, until the shrimp are pink and opaque. Turn the stove off, but do not remove pot from the heat. Stir in the broccoli, cover, and let sit for 2-3 minutes.
  • Drain the noodles, broccoli, and shrimp. In a large serving bowl, toss together the noodles, broccoli, shrimp, and the peanut butter sauce. Garnish with chopped peanuts.

  • In a hot wok, heat cooking oil over medium heat. Add garlic, ginger, most of the red chilli and green onion slices (reserve a bit of both, for garnish). Cook, stirring, until fragrant and just beginning to soften, 30-45 seconds. Add sauce and cook until warmed. Add udon noodles. Stir to combine. Cook, adding additional 1-2 Tbsp. hot water as needed, to loosen the sauce so it coats the noodles well.
  • Spoon noodles in to bowl. Garnish with reserved green onion and red chilli slices, additional chopped peanuts and/or sesame seeds.

  • First make the Thai Peanut Sauce. Gather all ingredients and whisk together in a medium sized bowl. This recipe makes 1 cup Thai Peanut Sauce. Set aside.
  • Then, in a wok or large frying pan heat avocado oil over medium high heat. Once hot, add in carrots & bell pepper. Cook for about 5 minutes, stirring occasionally. I like to add in a little Thai peanut sauce in here with the veggies too!
  • Then add in shrimp and noodles, and cook for another 4-5 minutes. Once shrimp is cooked, add in 1/2 cup sauce and peas! Start with 1/2 cup of sauce, and continue to add more sauce until the noodles are coated with as much sauce as you'd like.
