1 cup uncooked rolled oats (instant or regular)
1 1/4 cups boiling water
1/2 cup butter
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup butter, melted
1/2 cup brown sugar
3 tablespoons canned evaporated milk
1/3 cup nuts, chopped

Steps:

  • Preheat oven to 350.
  • Cake:.
  • In a shallow bowl, combine rolled oats and boiling water. Let stand for 20 minutes.
  • Using a mixer, cream butter until creamy.
  • Gradually beat in sugars, and beat until light.
  • Blend in eggs and vanilla.
  • Mix flour, baking soda, salt, and spices.
  • Remove beaters from creamed mixture.
  • Stir in rolled oat mixture.
  • Fold in flour mixture. Blend well.
  • Pour batter into a greased and floured 9" square cake pan.
  • Bake for 45-55 minutes Remove from oven, but DO NOT REMOVE CAKE FROM PAN.
  • Topping:.
  • Combine all melted butter. brown sugar, canned milk and nuts. Spread over the hot cake.
  • Return the cake to the oven, under the broiler. Broil until the topping is bubbly and tinged with gold. Watch it as it will burn easily.

GRAMMIE BEA'S OLD FASHIONED CINNAMON ROLLS

These aren't a breakfast roll, but rather a DELICIOUS treat, and one that I often enjoyed when I was young. My grandmother always made her own pie crust, and she would always make extra, so we could have these yummy treats. This is great for using the extra dough you have from your homemade pie crusts instead of throwing it away. Today I usually use the 9" pre-made unroll and bake pie crusts, because it's quick and easy. You can sprinkle on finely chopped nuts of your choice before rolling up if you like. Walnuts and pecans are my favorite. This is my idea of a comfort dessert :) They were always made with lots of love in my house. I hope you will enjoy them as much as my family! The serving size here is for 2 pre-made 9" pie crusts.

2 (9 inch) pie crusts, unroll and bake (I use Kroger brand) or 2 (9 inch) pie crusts, homemade and rolled out
1/2 cup sugar
2 teaspoons cinnamon
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350.
  • Let the pie crust sit out for 1/2 hours if using the unroll and bake crusts, so they get soft enough to roll up without the crust cracking. (Make homemade pie crust if you are making your own. Roll out thin, just as you would to make a pie crust).
  • Melt butter in the microwave for 20 seconds, and brush onto top of pie crusts.
  • Mix cinnamon and sugar together and sprinkle on top of the butter.
  • Roll up crust dough jelly roll style, making into a long log. Crimp the edge of the pie crust so it holds together. (See picture).
  • Using a sharp knife cut dough into 3/4" pieces, and place cinnamon side down on a greased cookie sheet.
  • Bake for 20-22 minutes until a light golden brown. Take out of oven and let cool for a few minutes, then take off sheet, so they don't stick, and let cool.
  • Store in plastic container or Zip-Lock baggie, that is if you have any left!

1 cup sugar
1/2 teaspoon salt
3 tablespoons cocoa, heaping
1 1/2 teaspoons baking soda
3/4 cup mayonnaise
1 cup water
1 teaspoon vanilla

Steps:

  • Sift first 5 ingredients together.
  • Add mayonnaise, water, and vanilla. Beat together well.
  • Grease a 9x13" baking pan, and dust with flour.
  • Pour in cake mix, and bake at 375 for 30-40 minutes, checking at 30 minutes and every 5 minutes after, until toothpick inserted in middle comes out clean.

1 (9 ounce) package dry mincemeat
1/2 cup water
2 cups flour, sifted
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Crisco shortening
3/4 cup brown sugar, firmly packed
1 egg, well beaten
1 cup applesauce
1/2 cup walnuts

Steps:

  • Break mince meat into pieces, and put in a small sauce pan.
  • Add the water.
  • Place over med. heat, and stir lumps, until broken.
  • Boil briskly for 3 mins., until almost dry, and let cool.
  • Sift flour, salt, and soda.
  • Cream Crisco, and add sugar gradually, beating until fluffy.
  • Beat in egg.
  • Stir in mince meat.
  • Add dry ingredients with cooled apple.

  • Bake in a greased and floured 9x13" pan, in a 350 oven for 30-40 mins., checking every 5 minutes after 30 mins., until a toothpick comes.

1/2 cup butter or 1/2 cup margarine
1 1/4 cups boiling water
2 eggs, well beaten
1 cup sugar
1 cup brown sugar

1/2 teaspoon ginger
1/2 teaspoon allspice

Steps:

  • Combine oats, butter and boiling water. Set aside for 20 minutes.
  • Beat together the eggs, sugars and vanilla. Sift dry ingredients and add, along with the oats. to the sugar mixture. Beat well.

1 cup flour
1 teaspoon baking powder
3/4 teaspoon salt
2 eggs
1 cup sugar
1/2 cup milk
1 tablespoon butter
1 teaspoon vanilla
5 tablespoons brown sugar
3 tablespoons milk
3 tablespoons butter
1/2 cup coconut
1/2 cup chopped walnuts

Steps:

  • Beat eggs and add sugar until fluffy.
  • Sift flour, salt and baking powder.
  • Add to egg mixture and mix until well combined.
  • Heat milk and butter to boiling point, add to batter and add vailla.
  • Beat slightly.
  • Pour into a greased 8x8 pan. Bake at 350 for 30 minutes.
  • When done add topping right away.

  • Mix brown sugar, milk, butter, coconut and nuts in a pot on stove until suagr has dissolved.
  • Put on cake.
  • Put back in the oven on broil until very light brown on the top.
  • Remove from oven and cool completely before serving.

We used to go picking dandelions in the spring (May), using a V-shaped blade tool with a long handle on it... We just dug into the roots of the dandelions, and lifted down on the handle, and it cut the dandelion at the top of the root. Before the dandelions bloom is the best time to pick them, as they are sweeter.

3 lbs dandelion greens (or 2 lg. brown bags full)
1 piece salt pork, 1 3-inch piece, cut into slices
1 teaspoon salt
butter, as much as you like
cider vinegar, as much as you like
salt and pepper, to taste

Steps:

  • Pick 2 lg. brown bags full of dandelions, or buy 3 lbs., as they shrink a lot during cooking.
  • Wash dandelions well 2-3 times in changes of water, to remove bugs and dirt. Inspect leaves and stems as you go, to make sure they.
  • arent wilted or rotted or anything, and break off any that are.
  • Add about 6" of water to a lg. pot.
  • Add cut up pieces of salt pork into the water.
  • Once washed well, add the greens to the pot.
  • Add 1 teaspoons salt. on top of the greens.
  • Cook on high until water comes to a boil, then turn down to medium heat.
  • Let greens cook, until reduced, and tender.
  • Make sure salt pork is cooked through, at least 45-50 minutes.
  • Drain well, and serve with butter, vinegar, salt, and pepper.
  • Note: Preparation time varies, depending on how dirty the dandelions are and how well you clean them.
