BLUEBERRY, GOAT CHEESE AND BASIL PIE
This blueberry pie is anything but ordinary, it's made with goat cheese and basil and topped with a walnut crumble. It's bursting with fresh flavors, and it's easy to prepare.

- Place the pie crust in a butter pie pan, or similar. Rinse the blueberries and remove any remaining stems. In a large bowl, whisk the goat cheese, cream, 1/2 cup brown sugar, flour, egg, basil, and salt together. Add the blueberries to the goat cheese mixture. If you want to crush some of them, go ahead, otherwise, you can leave them whole. Pour the mixture into the pie crust. In a small bowl, mix the remaining brown sugar and the butter, walnuts, and granulated sugar together. Spread this mixture out on top of the pie. Bake at 350 degrees for 30 minutes.

- Put the softened butter in the bowl of a stand mixer fitted with a paddle attachment. Whip the butter until it's fluffy. Add the blue cheese, chopped chives, red pepper flakes and ground pepper. Mix until totally combined, scraping the sides as needed.
- Lay out a long piece of plastic wrap on top of a piece of aluminum foil and scoop the butter mixture in a long strip down the middle of it. Carefully pull one side of the plastic wrap and foil over the butter, squeezing it gently to form it into a log. Continue to roll the log of butter into a roll. When it's all rolled up, twist the ends (like a piece of candy) until they become very taut (this means the butter is pressing together inside the plastic and foil to form a cohesive roll). Place the roll of butter into the fridge so it will harden, at least 1 hour, or into the freezer if you need to speed along the process.

BLUEBERRY GOAT CHEESE PIE
I saw a similar recipe on Diners Drive-In's and Dives but was never able to find the recipe so I created my own version. It turned out so yummy. I have just revised this to extend the cooking time from 25 mins to 40 mins per the 2 reviews below. i have also found that cooking it longer helps to set it better. Chilling it also helps.
