4 swordfish steaks (7 ounces each)
1/2 teaspoon salt
1/2 cup minced fresh parsley, divided
1/3 cup olive oil
1 tablespoon lemon juice
2 teaspoons minced garlic
1/4 teaspoon crushed red pepper flakes

Steps:

  • Preheat oven to 425°. Place fish in a greased 13x9-in. baking dish; sprinkle with salt. In a small bowl, combine 1/4 cup parsley, oil, lemon juice, garlic and pepper flakes; spoon over fish. , Bake, uncovered, until fish just begins to flake easily with a fork, basting occasionally, 15-20 minutes. Sprinkle with remaining parsley.

2 large garlic cloves, chopped
1/4 cup chopped fresh parsley
1 tablespoon anchovy paste
2 teaspoons Dijon mustard
1 cup good mayonnaise
1 tablespoon grated lemon zest (2 lemons)
3 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
3 pounds center-cut swordfish steaks, 3/4 to 1 inch thick, cut into 6 portions
1/2 cup chopped scallions, white and green parts (4 scallions)
2 tablespoons good olive oil
3 tablespoons drained capers
Lemon wedges, for serving

Steps:

  • Preheat the oven to 500 degrees F. (Be sure your oven is very clean.) Line a sheet pan with aluminum foil.
  • For the Caesar sauce, place the garlic, parsley, anchovy paste, and mustard in the bowl of a food processor fitted with the steel blade and pulse until the garlic is minced. Add the mayonnaise, lemon zest, lemon juice, 1 teaspoon salt, and 1/2 teaspoon pepper and pulse to make a smooth sauce.
  • Place the swordfish steaks on the pan and sprinkle both sides generously with salt and pepper. Set aside one third of the sauce to serve with the cooked fish. Spread the fish on one side with half the remaining sauce, turn the fish, and spread the remaining sauce on the second side. Sprinkle with the scallions and allow to stand for 10 minutes.
  • Roast the fish for 10 to 12 minutes, until the center is just barely cooked. Cover the fish with aluminum foil and allow to rest on the pan for 10 minutes.
  • Meanwhile, heat the oil in a small saute pan until very hot, add the capers, and cook for 30 to 60 seconds, until they start to pop and are a little crisp. Serve the swordfish hot with the lemon wedges, frizzled capers, and the reserved Caesar sauce.

4 8-ounce swordfish steaks (each about 3/4 inch thick)
Fleur de sel or other salt
1-2 Tablespoons capers (optional)
Lemon wedges

Steps:

  • Combine parsley, lemon peel and garlic in small bowl. Mix in oil, lemon juice and 1 teaspoon sea salt. Season with pepper. Place fish in single layer in shallow dish. Spoon half of parsley sauce over fish. Turn fish over to coat with sauce. Cover and chill at least 1 hour and up to 3 hours, turning fish occasionally. Place oven rack in uppermost position and preheat broiler. Place fish, with sauce still clinging to it, on broiler pan . Broil until fish is opaque is center, about 3 minutes per side. Transfer to platter. Spoon remaining parsley sauce over (consider adding capers at this point). Sprinkle lightly with fleur de del (aka salt). Garnish with lemon wedges and serve.

Hot Smoked Swordfish with White Clam-Garlic-Parsley Sauce image

1 cup kosher salt
1 cup sugar
2 tablespoons black peppercorns
One 4-inch-thick chunk swordfish loin, skin removed
2 to 3 tablespoons canola oil
2 dozen littleneck clams
2 tablespoons canola oil
3 cloves garlic, mashed to a paste with a little salt
1 small serrano chile, finely diced
1 cup white wine
1 tablespoon cold unsalted butter
2 tablespoons finely chopped fresh flat-leaf parsley, plus a handful leaves for garnish
Zest of 1 lemon
Salt and freshly ground black pepper

Steps:

  • For the swordfish: Stir together 8 cups water, the salt, sugar and peppercorns in a deep pot. Bring to a boil just to dissolve the salt and sugar; cool completely. Submerge the swordfish in the brine. Refrigerate for 12 hours.
  • Remove the swordfish from the brine and rinse well under cold water. Pat dry and allow to air dry for at least 1 hour. The exterior of the fish should feel sticky to the touch before smoking.
  • Prepare a smoker with maplewood chips and to an internal temperature of 200 to 225 degrees F.
  • Brush the fish very lightly with canola oil and sprinkle with salt and pepper. Smoke the fish for about 2 hours, adding chips through the first hour as necessary. You can keep adding chips the second hour if you prefer a much smokier flavor. Transfer the smoked fish to a large platter.
  • For the clam sauce: Remove the meat from half the clams and chop roughly. Heat the canola oil in a medium saucepan over high heat. Add the garlic and chile and cook for a few seconds. Add the chopped clams and cook, stirring, for another minute. Add the wine, bring to a simmer and cook until reduced by half.
  • Add the whole clams, cover the saucepan and cook, shaking the pan occasionally, until the clams open, 5 to 10 minutes. Stir in the butter. Remove from the heat and stir in the chopped parsley and lemon zest. Taste, and season with salt and pepper. Pour the sauce over and around the smoked swordfish, and scatter the parsley leaves on top.

6 sprigs fresh dill, minced
1/2 cup unsalted butter
1 lemon, juice of

Steps:

  • Season swordfish with pepper and broil for 5 mins each side. Remove and keep warm.
  • In a medium skillet over medium heat, melt butter. Add lemon juice and white wine and dill. Season with pepper to taste.
  • remove some of the liquid and let cool. Add the cornstarch to cooled liquid and mix together until smooth. Add this back into skillet and simmer, stirring until slightly thickened.
  • Remove swordfish steaks and place on plates. Spoon sauce over each steak and garnish with dill sprigs.

Steps:

Steps:

  • Preheat the broiler.
  • In a small bowl, stir together first 7 ingredients.

1/3 cup fresh lemon juice
2/3 cup extra virgin olive oil
2 1/4 lbs swordfish fillets, cut into 1-1/2-inch cubes
salt
ground black pepper
1 tablespoon garlic, minced
2 teaspoons dried oregano
1 red onion, peeled and sliced
18 bay leaves (Slices of lemon may be substituted, if preferred)

Steps:

  • In a bowl, combine the lemon juice and olive oil.
  • Place the swordfish cubes in a shallow glass dish and sprinkle with salt and pepper to taste.
  • Pour about 1/3 cup of the olive oil and lemon mixture over the fish and toss to coat evenly.
  • Cover and refrigerate for 2 to 4 hours.
  • Add the garlic and oregano to the remaining olive oil and lemon mixture.
  • Set aside to use as a sauce.
  • Preheat the broiler or fire up the barbecue.
  • Cut the onion through the stem end into quarters and separate each quarter into individual pieces.
