A hearty comforting soup that is so easy to prepare. This Tuscan Bean Soup is loaded with bits of chicken breast, vegetables, pasta, beans and morsels of sausage.

2 Links (215 grams) Hot Sausage, (mild may be substituted)
1 Cup (155 grams) Onion, diced
1 Cup (105 grams) Celery, sliced
1/2 Cup (60 grams) Carrot, shredded
2 teaspoons (14 grams) Garlic, minced
15 ounce can Garbanzo Beans, drained and rinsed
15 ounce can Great White Northern Beans or Navy Beans, drained and rinsed
5 Cups Chicken Broth
6 ounce can Tomato Paste
1/4 teaspoon Red Pepper Flakes
3 ounces (86 grams) Baby Shells or other small pasta shape
1 Parmesan Cheese Rind
1/2 teaspoon (4 grams) Kosher Salt
2 Cups (266 grams) Roasted Chicken Breast, diced
Fresh Parsley, minced

Steps:

  • Heat a large soup pot over medium-low heat.
  • Remove casings from sausage and break up into pot. Brown sausage for about 4 minutes.
  • Once the sausage has begun to brown, add the onion, celery, carrot and garlic.
  • Continue to cook until sausage is completely brown and the vegetables have begun to soften slightly.
  • Meanwhile in a food processor or blender, add all of the garbanzo beans.
  • Reserve and set aside 1 cup of the white northern beans; and add the remaining beans to the food processor along with the garbanzo beans.
  • Process the beans until smooth using a little broth to help make a puree.
  • Add the tomato paste and bean puree, to the cooked sausage and vegetables.
  • Gradually pour in the broth, while stirring.
  • Add the red pepper flakes, cheese rind and reserved whole beans and bring up to a low boil.
  • Special Note: Once the bean puree has been added to the soup, it is important to stir the soup occasionally in order to keep the soup from burning on the bottom of the pot.
  • When the soup comes up to a boil, add the pasta.
  • Reduce heat to a simmer and cook until the pasta is tender about 12 to 15 minutes.
  • Meanwhile, cut chicken into small bite-size pieces.
  • Once the pasta is tender, add the cubed chicken and continue to cook for another 5 minutes, just until chicken is heated through.
  • Remove cheese rind and serve.
  • Garnish with chopped fresh parsley, if desired.

1 lb hot Italian sausage, substitute mild
1 small onion, chopped fine
1 stalk celery, chopped fine
1 carrot, chopped fine
1 tablespoon rosemary, fresh chopped or 1 teaspoon dried rosemary
4 garlic cloves, minced
14 ounces diced tomatoes, not in original recipe but great to add
6 cups great northern beans, canned, rinsed, approximately (3)
1 bay leaf
3 -4 cups low sodium chicken broth, divided

Steps:

  • In a soup pot, brown sausage until no longer pink.
  • Break up into small pieces while cooking.
  • Drain off excess oil. Return to pot.
  • In a food processor, chop onion, celery, carrot, rosemary, and garlic until fine; add to the soup pot.
  • In same food processor, puree 2 cups Great Northern beans with 1 cup chicken broth; add to the pot.
  • NOTE: I like to chop the diced tomatoes a little finer in the food processor before adding.
  • Combine remaining ingredients.
  • Bring to boil; lower heat and simmer for 60 minutes or until desired consistency.
  • Serve with your favorite sides and red wine.

2 1/2 lbs Italian sausage (removed from casings)
2 tablespoons olive oil
2 large carrots, peeled and coarsley chopped
1 large onion, finely chopped
2 tablespoons minced fresh garlic
2 teaspoons dried chili pepper flakes (optional or to taste)
3 teaspoons dried basil (or to taste)
2 -3 quarts chicken broth
2 (14 ounce) cans diced tomatoes
2 (15 ounce) cans cannellini beans, rinced and drained (white beans)
2 cups large uncooked shell pasta
12 ounces fresh spinach (can use frozen)
1/4 cup grated parmesan cheese (or to taste)
salt and black pepper

Steps:

  • Heat olive oil in a 8-10-quart pot over medium-high heat.
  • Add in the sausage meat; cook until browned (about 8-10 minutes) remove the meat to a plate or bowl.
  • Add in the onion, carrots, basil and dried chili flakes; saute for about 5-6 minutes adding in the garlic the last couple minutes.
  • Add in chicken broth, tomatoes with juice and drained beans; bring to a boil, cover with lid and cook at medium-low for about 30 minutes.
  • Add in pasta shells; reduce heat and simmer until the pasta is firm-tender (about 10 minutes, stirring occasionally.
  • Skim any fat that has accumulated on top of the soup, then stir in about 1/4 cup grated parmesan cheese and the fresh spinach; cook until the spinach is just wilted (about 1-2 minutes).
  • Season with salt and pepper.

This is a really easy Tuscan style white bean and spinach soup. I prefer it meatless, but mini meatballs can be added.

1/4 cup olive oil
1 medium onion, chopped
4 garlic cloves, minced
2 carrots, chopped
2 stalks celery, chopped
1/4 teaspoon dried thyme
1 bay leaf
3 (14 ounce) cans chicken broth
1 (14 ounce) can diced tomatoes, undrained
2 (15 ounce) cans white beans, any variety
1 (10 ounce) packaged frozen chopped spinach, thawed
3/4 cup macaroni, uncooked
salt and pepper
grated parmesan cheese, and or pecorino romano cheese, to serve

Steps:

  • Heat the oil in a 4 quart soup pot over medium heat.
  • Add the onion, garlic, carrots, celery and thyme and cook until the vegetables are tender, about 10 minutes.
  • Add the chicken broth, tomatoes and bay leaf.
  • Drain the beans and roughly mash 1/2 a can of beans. Add the beans and mashed beans to the pot.
  • Squeeze the water from the thawed spinach and add to the pot.
  • Season with salt and pepper and simmer for at least 10 minutes and up to 30 minutes.
  • Add the macaroni and cook until tender according to package directions. (About 10 minutes.).
  • Serve sprinkled with grated parmesan and/or pecorino romano.

1 medium onion, diced
2 garlic cloves, minced
4 tablespoons chicken base
2 quarts water
1/2 teaspoon dried thyme
1 bay leaf
4 cups coarsely chopped potatoes
6 cups chopped fresh kale
5 ounces evaporated milk
parmesan cheese

Steps:

  • In some olive oil sauté the onion and garlic until transparent.
  • Add water and chicken base or 2 quarts chicken broth.
  • Add the potatoes (I like to use frozen hash browns that I always have on hand).
  • Add the seasonings.
  • Bring to boil. Cover with lid and simmer.
  • Brown the sausage, breaking up into small pieces, and drain in a stainer.
  • Wash the kale, remove the stems/rib. Slice across you can add fresh or thawed frozen spinach squeezed dry).
  • Add the sausage and kale to your saucepan and cook until potatoes are tender.
  • Add the can of evaporated milk and heat through.
  • Check to see if you want to add any salt.
  • Serve with freshly grated Parmesan cheese. Enjoy.:-).

It has a brothy tomato base that's loaded with rich Italian sausage, sweet carrots, caramely onions, tender cannellini beans, silky spinach and just the right amount of pasta. Top it off with a handful of garlicky butter-toasted Progresso™ bread crumbs and a handful of Parmesan, and you've got dinner. Extra credit if you serve it alongside a green salad and loaf of crusty bread.

1 lb chicken sausage or 1 lb turkey sausage
2 teaspoons olive oil
1/2 cup white wine
1 (9 ounce) package frozen artichoke hearts
1 medium onion, cut in wedges and separated
1 red bell pepper, cut in 1 1/2-inch squares
1 yellow bell pepper, cut in 1 1/2-inch squares
1 lb cremini mushroom, cleaned and quartered
1 teaspoon dried thyme
1 teaspoon dried rosemary
kosher salt, to taste
fresh ground black pepper, to taste
1 (15 ounce) can low sodium chicken broth

Steps:

  • Cut the chicken into 1½" cubes. Cut the sausage into similarly-sized pieces.
  • In a skillet, heat the olive oil over medium-high heat until it shimmers. Working in batches, brown the chicken and sausage in the olive oil. Transfer to a crockpot as they are finished.
  • Pour the wine into the skillet to deglaze, scraping up any browned bits on the bottom of the pan, then add to crockpot.
