3 medium red, orange or yellow bell peppers, sliced
1 small shallot, chopped
1 clove garlic, finely chopped
1 jar Bertolli® Tomato & Basil Sauce
3 ounces goat cheese, crumbled
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.), pounded 1/4-inch-thick
1/3 cup all-purpose flour
2 Tbsp. olive oil, divided

Steps:

  • Season chicken, if desired, with salt and ground black pepper. Dip chicken in flour, coating well; shake off excess. Heat 1 tablespoon olive oil in 12-inch nonstick skillet over medium-high heat and cook chicken, turning once, 5 minutes or until thoroughly cooked. Remove chicken and keep warm.
  • Heat remaining 1 tablespoon olive oil in same skillet over medium heat and cook bell peppers, stirring frequently, 4 minutes or until crisp-tender. Add shallots and cook 2 minutes. Add garlic and cook, stirring frequently, 1 minute. Stir in Sauce and simmer 5 minutes or until slightly reduced.
  • To serve, spoon sauce over chicken and sprinkle with goat cheese.

A flavorful baked chicken dish stuffed with goat cheese. Try it for dinner tonight!

4 boneless chicken breasts
1 sleeve crushed butter crackers
1 teaspoon crushed red pepper
1 teaspoon salt
1/2 teaspoon black pepper
6 oz cut into 4 equal portions goat cheese
3 tablespoons honey
3 tablespoons melted butter

Steps:

  • Preheat oven to 350 °F.
  • Make a slit in the side of each chicken breast, being very careful not to go through the other side. In a medium bowl, add crushed crackers, red pepper, salt and pepper. Spray the bottom of a 9×13 baking dish with non-stick cooking spray. Stuff each chicken breast with equal amounts of goat cheese and place in baking dish. Press cracker mixture on top of each breast, coating evenly. Spray the top of each breast with non-stick cooking spray. In a small bowl, stir together butter and honey. Bake chicken breast for 10 minutes. Finally, spoon honey butter over chicken and return to oven for 25 minutes.

2 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons goat cheese
2 tablespoons part-skim ricotta cheese
4 tablespoons chopped shallots, divided
1 teaspoon olive oil
2/3 cup reduced-sodium chicken broth
2 tablespoons apricot spreadable fruit
1 tablespoon lemon juice
1 teaspoon spicy brown mustard
1 teaspoon minced fresh parsley

Steps:

  • Flatten chicken to 1/4-in. thickness; sprinkle with salt and pepper. Combine the goat cheese, ricotta and 1 tablespoon shallots; spread over the center of each chicken breast. Roll up and secure with toothpicks., In a small nonstick skillet, brown chicken in oil on all sides. Remove and keep warm., In the same skillet, saute remaining shallots until tender. Stir in the broth, spreadable fruit, lemon juice and mustard. Bring to a boil; cook until liquid is reduced by half., Return chicken to the pan; cook, covered until a thermometer inserted in chicken reads 165°, 6-7 minutes. Discard toothpicks. Serve chicken with cooking liquid. Sprinkle with parsley.

1 teaspoon olive oil
1 shallot, finely diced
1 cup balsamic vinegar
2 skinless, boneless chicken breast halves
2 ounces goat cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a skillet over medium heat; cook and stir shallot until translucent, about 5 minutes. Pour balsamic vinegar into skillet and bring to a boil. Reduce heat to low and simmer until balsamic vinegar mixture is reduced by half, about 10 minutes. Stir often.
  • Cut chicken breasts from one side through the middle horizontally to within one-half inch of the other side. Open the two sides and spread them out like an open book.
  • Spread half the goat cheese onto one half of each chicken breast and drizzle 1/3 of the reduced balsamic vinegar mixture over the goat cheese. Close the chicken breasts over the goat cheese and secure with toothpicks. Arrange chicken into a baking dish. Drizzle with remaining 1/3 of the balsamic reduction.
  • Bake in the preheated oven until the chicken is no longer pink inside, the filling is hot, and the juices run clear, 30 to 35 minutes. An instant-read meat thermometer inserted into the center of a filled breast should read at least 160 degrees F (70 degrees C).

Found this in Cooking Light and surprise, everyone liked it (that's rare in our house). My DS uses plain cream cheese instead of the goat cheese but my DH & I like the slight tang of the goat cheese.

1/2 cup balsamic vinegar
1/4 cup red wine
2 teaspoons brown sugar
1 teaspoon soy sauce
3 (6 ounce) boneless skinless chicken breasts
1/2 teaspoon salt
1/4 teaspoon pepper
cooking spray
1 tablespoon olive oil
1 large red onion, sliced
1 (3 ounce) package goat cheese (we like Chavrie)
3 kaiser rolls
1 cup arugula, trimmed (optional)

Steps:

  • Combine the vinegar, soy sauce, red wine and brown sugar in a small saucepan over medium heat. Bring to a boil, stirring until the sugar disolves. Cook until reduced to 1/2 cup (about 12 minutes). Remove from heat and cool slightly.
  • While the vinegar cooks, spray a large non-stick skillet with non-stick cooking spray and heat on med-high heat. Sprinkle the chicken with the salt and pepper and brown to desired doneness, at least 4 minutes per side. Remove form the skillet and cover, keeping it warm. Add the olive oil to the skillet and spread around to coat the bottom well, add the onion and cook, stirring often to prevent burning, till brown or carmelized. Remove from heat.
  • Thinly slice the chicken. Spread a thin layer of cheese over the bottom of each roll, divide the chicken between each roll and top with the onion. Drizzle each with a small amount of the vinegar mixture(about 1 Tbsp.) and top with the arugula, if desired.

1/3 cup honey
1 tablespoon balsamic vinegar
2 teaspoons dried thyme
Coarse salt and ground pepper
1 chicken, cut into 8 pieces (about 3 pounds)

Steps:

  • Preheat oven to 475. Line a rimmed baking sheet with foil. In a small bowl (or glass measuring cup), whisk together honey, vinegar, thyme, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper.
  • Place chicken pieces on prepared pan; brush with honey glaze to coat. Roast, brushing twice with glaze (do not baste during last 5 minutes of cooking), until chicken is deep brown on the outside and opaque throughout, 20 to 25 minutes.

1/4 c goat cheese
1/4 c fresh cilantro, coarsely chopped
1 whole chicken, 3 lbs (or substitute 4 skin on chicken breasts)
2/3 Tbsp olive oil
salt, to taste
freshly ground black pepper, to taste
2 clove garlic
1/2 lemon
1-3 red jalapenos, (optional)
1 1/2 Tbsp honey
1/3 tsp crushed red pepper flakes

Steps:

  • 1. Preheat oven to 375°F In a small bowl, combine the cheese and cilantro; set aside. Remove the neck and giblets from the chicken. One side at a time, slip your fingers between the skin and meat to loosen the skin. Once your entire hand is under the skin, free the skin around the thigh and leg area. Rub the cheese mixture under the skin of the chicken.
  • 2. Brush the chicken with olive oil and sprinkle with salt and pepper. Place the garlic cloves and lemon half in the cavity of the chicken. Fold under the neck skin and skewer to the back; tie the legs to the tail. Place, breast side up, on a rack in a shallow roasting pan. If desired, insert a meat thermometer into the center of the inside thigh muscle. Add the jalapeno peppers to the roasting pan.
  • 3. Roast, uncovered, for 60 minutes, spooning the juices over the chicken occasionally. after 60 minutes, combine the honey and crushed red pepper. Brush on the chicken. Roast for 10 to 15 minutes longer or until the drumsticks move easily in the sockets and the chicken is no longer pink (180°F). Remove the chicken from the oven. Brush with any remaining honey mixture. Cover; let stand for 10 minutes. Cut the chickens into quarters. Serve with the roasted jalapenos.
  • 4. To substitute chicken breasts, use 4 small bone-in chicken breast halves. Stuff the cheese mixture under the skin and brush with oil. Omit the garlic and lemons. Sprinkle with salt and pepper. Proceed as with the whole chicken.
