Turnip Pancakes Topped With Cod And Smoked Salmon image

Number Of Ingredients 12

8 medium turnips, peeled and cut into 1-inch cubes
4 nickel-size slices of fresh ginger, peeled and lightly smashed
2 teaspoons Oriental sesame oil
2 teaspoons unsalted butter
3/4 teaspoon salt
Freshly ground pepper to taste
6 tablespoons all-purpose flour
Cornmeal, for dusting
1 small cod fillet
Olive oil spray
1 thin slice smoked salmon, cut into 1/8-inch-thick strips
3 tablespoons minced scallions (green part only)

Steps:

  • Place the turnips and ginger in a large saucepan and cover with cold water. Add the sesame oil and bring to a boil over medium-high heat. Reduce the heat and simmer until the turnips are tender, about 20 minutes. Drain. Return the turnips to the pan and set over low heat until dry, 7 to 8 minutes, stirring often to prevent sticking.
  • Remove the turnips from the heat. Add the butter and mash with a hand masher until the turnips are slightly lumpy. Stir in the salt, pepper to taste and the flour. Set aside to cool.
  • Shape the turnip mixture into 8 3-inch-wide patties. Dust with cornmeal. Cover with a towel and refrigerate for 1 hour. Let stand at room temperature for 30 minutes. Meanwhile, steam the cod fillet until done, about 10 minutes. Cut into 1-inch pieces.
  • Spray a large nonstick skillet with olive oil. Heat over medium heat until hot. Add as many of the pancakes as will fit without overcrowding. Cook until browned on both sides, about 3 minutes per side. Transfer to a heated serving platter and keep warm until all of the pancakes are cooked. Top each cake with a piece of cod. Coil the strips of smoked salmon and set 1 atop each piece of cod. Sprinkle minced scallions over all. Serve immediately.

1 1/2 cups plain flour
2 teaspoons baking soda
2 teaspoons baking powder
1 egg
1 cup low-fat milk
1/2 cup light sour cream
1 teaspoon mustard
1 teaspoon horseradish cream
2 tablespoons chives, chopped (plus extra, to garnish)
black pepper
200 g smoked salmon, slices

Steps:

  • Combine sifted flour with baking soda and baking powder. In a separate bowl, lightly beat egg and add milk. Make a well in the centre of the flour mixture and pour in egg and milk. Stir with a whisk until smooth and thick.
  • Spoon a tablespoon of mixture into a lightly greased, non-stick frying pan. Cook over a medium heat for 3 minutes, until bubbles appear on the surface. Turn and cook for 1 minute. Repeat with remaining batter and set aside to cool completely.
  • Combine sour cream, mustard and horseradish. Stir in chives and season with pepper. Spoon onto cooled pancakes and top with slices of smoked salmon. Garnish with extra chives and serve.

I'm trying to come up with ways to cook turnips that don't involve roasting, stewing or mashing them, so I came up with this recently. It started as a potato pancake recipe from the Joy of Cooking, then changed when I tried it out. They came out rather sweet considering there's no sugar added... I'll definitely be eating these again. Good hot or cold.

2 cups turnips, grated
2 tablespoons flour
3 eggs, beaten
2 tablespoons onions, grated
2 tablespoons salt
1/4 inch vegetable oil

Steps:

  • Grate turnips into colander.
  • Sprinkle grated turnip with salt; turn & mix to evenly distribute salt. Allow to sit for 10 - 20 minutes.
  • After resting, squeeze out as much liquid as possible. Move drained turnip to bowl.
  • Sprinkle turnips with flour; toss turnip to distribute flour.
  • Add 3 eggs. Stir to mix well.
  • Heat oil in pan until hot enough for frying.
  • Drop large spoonfuls of batter into oil; should flatten out into 3" patties. Fry until browned; then flip & cook until set & browned.
  • Drain on paper towels. Enjoy!

The ingredients should yield you about 8 pancakes based on their small size. Crispy potato pancakes topped with caramelized onions, smoked salmon and dill sour cream. I would serve two of these as a first course per person, or serve 4 as a light lunch.

6 tablespoons sour cream
2 tablespoons fresh dill, minced
1 pinch salt
1 cup white onion, coarsely chopped
1 tablespoon butter
1 tablespoon brown sugar
2 medium white potatoes, peeled
1 egg
1 1/2 teaspoons fennel seeds, slightly crushed
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1 tablespoon flour
1/4 teaspoon baking powder
oil (for frying)
6 ounces smoked salmon, cut into thin strips

Steps:

  • Preheat oven to 250 degree F.
  • In a small bowl mix together sour cream, dill and salt until well blended and put in refrigerator.
  • Heat butter in large skillet over medium low heat. Add onions to pan, stirring occasionally until onions are softened, then sprinkle with brown sugar, and continue cooking, stirring until onions are tender and golden brown. If onions are cooking too fast, reduce heat to low. Remove to a bowl to cool.
  • While onions are cooking, grate potatoes. Squeeze potatoes in paper towels to release as much liquid as possible.
  • Place potatoes in medium bowl and stir in egg, fennel seed, flour, salt, pepper and baking powder until well blended.
  • Heat enough oil to cover bottom of large non-stick skillet over medium high heat. Scoop approximately 1/3 cup portions of potato mixture into hot oil, flattening with the back of a spatula into 4" pancakes.
  • Fry in oil until bottoms are golden brown, then flip over and fry until that side is done, keeping in mind that the first side will usually take longer to brown than the second.
  • Remove to a plate lined with paper towels and keep warm in oven, and repeat procedure until batter is gone, adding more oil as needed.
  • Place pancakes on plate, and divide sour cream mixture, then onions, then salmon evenly among pancakes.
  • Serve hot.

1 lb mealy potato, peeled and grated
2 scallions, chopped
2 tablespoons self-rising flour
2 eggs, beaten
2 tablespoons vegetable oil
salt and pepper
fresh chives, to garnish
2/3 cup sour cream
4 1/2 ounces smoked salmon

Steps:

  • Rinse the grated potatoes under cold running water, drain, and pat dry on paper towels. Transfer to a mixing bowl.
  • Mix the scallions, flour, and eggs into the potatoes and season well with salt and pepper.
  • Heat 1 tablespoon of the vegetable oil in a heavy skillet.
  • Drop about 4 tablespoons of the mixture into the skillet and spread each one with the back of a spoon to form a circle (the mixture should make 16 pancakes).
  • Cook for about 5-7 minutes, turning once, until golden. Drain well.
  • Heat the remaining oil and cook the remaining mixture in batches.
  • Top the pancakes with the sour cream and smoked salmon, garnish with fresh chives, and serve hot.
