COUNTRY TURNIP GREENS

Steps:
- Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
- Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
- Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.
GINA'S TURNIP GREENS

- Heat olive oil in Dutch oven over medium heat.
- Add shallot, garlic and red pepper flakes and saute until tender and fragrant. Add the washed and cleaned turnip greens. Mix together. Cook until they have wilted down, about 3 minutes. Add pepper to taste.
- In a small bowl, whisk the Dijon mustard with the chicken stock. Add to the wilted greens and cook until the liquid has all but evaporated. Add the toasted pecans and serve immediately.
PAN-ROASTED TURNIPS WITH GREENS
Steps:
- Remove the greens from the turnips and reserve. Peel and cut the bulbs into 1/4-inch wedges. Remove and wash the tender leaves from the stems of the turnip greens. Chop the leaves and set aside.
- Heat the butter and oil in a large cast-iron or other heavy-bottomed large skillet over medium heat. Add the turnip wedges and sprinkle with salt and pepper, stirring to coat with the butter and oil. Cook, stirring and flipping occasionally, until they are caramelized and tender, about 5 minutes per side. Add the honey, vinegar and pomegranate seeds, then cook until the mixture is combined and syrupy, 2 to 3 minutes. Add the turnip leaves and saute until they are wilted and darken in color, another 2 to 3 minutes. Transfer to a serving dish and serve immediately.

Steps:
- Cook bacon in a Dutch oven over medium-high heat 5 to 6 minutes or until crisp; remove bacon, and drain on paper towels, reserving 1 tablespoons drippings in Dutch oven.
- Sauté onion and garlic in hot drippings 3 to 4 minutes.
- Add wine, and cook 1 to 2 minutes, stirring to loosen particles from bottom of Dutch oven.
- Stir in turnip greens, next 4 ingredients, and 1/2 cup Parmesan cheese.
- Cook, stirring often, 6 to 8 minutes or until cream cheese is melted and mixture is thoroughly heated.
- Transfer to a lightly greased 1 1/2-qt. baking dish.
- Sprinkle evenly with remaining 1/4 cup Parmesan cheese.
- Broil 6 inches from heat 4 to 5 minutes or until cheese is lightly browned.
- Sprinkle evenly with bacon.
SAVORY TURNIP DIP
I stumbled upon this recipe when I was both desperate for some dip and looking for a way to use up some frozen turnip greens I had in the freezer. I am not normally a huge turnip fan, but this recipe is so incredibly delicious, I even prefer it to spinach dip. I make this recipe with beef soujouk (beef sausage) from the Middle Eastern foods store instead of bacon because of a pork allergy, but it tastes great either way.

- Wash greens thoroughly, removing any grit and large stems.
- Place greens in dutch oven with water and salt.
- Bring to a boil and cook for 30 minutes uncovered.
- Add vinegar, sugar, and bacon drippings.
- Reduce heat to simmer and cook at least 1 hour covered.
- Fry bacon and crumble.
- Saute chopped onion until tender.
- Add bacon and onion and cook an additional 10 minutes.
- Serve with vinegar flavored with whole red pepper.
