TURMERIC GOLDEN MILK WITH TURMERIC PASTE
Soothes a cold or sore throat, helps you to sleep better, etc.... Warm and delicious, great just before bed every evening. The recipe for turmeric paste yields enough for a few weeks. Store in the refrigerator; reheat it in small amounts as needed.

Steps:
- Combine 1/2 cup water, turmeric, and pepper in a small saucepan over low heat. Cook, stirring constantly, until thickened, 7 to 9 minutes. Stir in 1 teaspoon water. Continue cooking until thickened into a paste, 7 to 9 minutes. Cool completely, 15 to 20 minutes. Pour into an airtight glass jar.
- Whisk 1 teaspoon turmeric paste, almond milk, coconut oil, ginger, and cinnamon together in a saucepan. Heat over low heat until hot, about 5 minutes. Remove from heat; stir in honey.
- Strain milk mixture into 2 mugs.

- Whisk coconut milk, cinnamon, turmeric, ginger, honey, coconut oil, peppercorns, and 1 cup water in a small saucepan; bring to a low boil. Reduce heat and simmer until flavors have melded, about 10 minutes. Strain through a fine-mesh sieve into mugs and top with a dash of cinnamon.

- Golden milk can be made 5 days ahead. Store in an airtight container and chill. Warm before serving.

- If using dried turmeric: Measure all ingredients and add to a small pot. Stir well to incorporate- go to step #3.
- If using fresh turmeric & ginger, use a spoon to peel the skin then chop into 1″ pieces. Add to a blender with other ingredients and blend until smooth, then add to a small pot.
- With all ingredients in a pot, heat over medium low, stirring frequently. We don’t want this to boil, just simmer gently. The dried turmeric version will be quick to thicken- and can possibly burn, stir often.
- Simmer for 3-5 minutes, until combined and has slightly thickened to a paste. Turmeric paste will thicken substantially as it cools and is placed in the fridge.
