EASY LEFTOVER HAM AND BEAN SOUP
A quick and easy Leftover Ham and Bean Soup that is healthy and filling, just perfect for a chilly day. The soup takes about 25 minutes to cook, and it's a great way of using up any ham leftovers you have after a big celebration like Thanksgiving, Christmas or Easter or just a good Sunday Roast. A hearty midweek meal for the whole family, this ham and bean soup is the perfect comfort food. Kids will love it too, as it's so tasty and colourful.

Steps:
- Peel and chop the onion and carrots, and chop the red pepper and celery stalks.
- Add the stock to a pot together with the vegetables, and cover the pot with a lid.
- Leave to cook for about 15 minutes or until the the veggies are tender.
- Add the beans (drained and rinsed) and cooked ham, tomato puree, salt, pepper and thyme, and leave to cook for a further 5 minutes.
- Remove the pot from the heat and garnish with chopped parsley.

LEFTOVER HAM AND BEAN SOUP
Steps:
- In a large soup pot, heat olive oil. Add onion, celery and carrot and cook for about 5 minutes until onion is tender.
- Add garlic, ham, ham bone, parsnip, bay leaves and the broth. If you don't have a ham bone, just skip it. Bring to a boil and lower heat to medium. Let cook for about 30 minutes.
- Add rinsed beans, cumin, thyme and season with salt and pepper. Continue cooking for another 30 minutes.
- Remove ham bone, bay leaves and parsnip. Garnish with parsley and serve.

- Empty one can of drained and rinsed Great Northern beans into a large bowl or flat baking dish. Mash the beans with the back of a fork or a potato masher. Set aside.
- Heat a large saucepan or stockpot over medium high heat while you chop the garlic, carrots, and onion.
- Melt the butter into the pan and immediately add the chopped onion, and carrot. Once the onion has started to soften, add the garlic.
- Let these sauté in butter until the onions are translucent and the carrots have started to soften. Make sure to move on to the next step before the garlic starts to brown.
- When the veggies are ready, stir in water, ham, thyme, salt and pepper, and the whole and mashed Great Northern beans. Stir gently to combine - you want the non-mashed beans to retain their shape in the final soup.
- Once the soup is simmering, ladle into dishes and call the crowd to the table!

LEFTOVER HAMBONE SOUP
Use up your leftover hambone to make this cozy, hearty soup loaded with tons of veggies and chunks of sweet ham!

- Place leftover hambone in a large stockpot or Dutch oven and add enough water to cover the bone halfway, about 6-7 cups. Bring to a boil; reduce heat and simmer until very fragrant, about 30 minutes to 1 hour; set aside ham stock and discard hambone. Heat olive oil in a large stockpot or Dutch oven over medium heat. Add garlic, onion, carrots and potato. Cook, stirring occasionally, until onions have become translucent, about 2-3 minutes. Stir in ham stock, beans, corn, thyme and bay leaves; season with salt and pepper, to taste. Bring to a boil; reduce heat and simmer until potatoes are tender, about 10-12 minutes. Stir in ham until heated through, about 1-2 minutes. Serve immediately.
HAM AND 15 BEAN SOUP
This recipe is a combination of two different bean soup recipes. I always use the quickcooking method to soak my beans since I have very little patience, but over-night soaking probably leaves the beans with a slightly better texture.

- Soak beans overnight or by the "quicksoak method" as listed on the back of most bags of beans.
- Drain the beans and place in large pot with 2 quarts of water.
- Add the ham hock and bacon and bring to a boil.
- Reduce heat and simmer uncovered for 2 1/2 hours add water as necessary.
- Remove hamhock and shred meat from the bone, returning meat to the pot.
- Add the remaining ingredients and simmer for another 45-60 min or until beans are cooked to your liking.
