TURKISH BULGUR PILAF RECIPE

Turkish style bulgur pilaf is a classic hearty and healthy side dish dish that is very easy to make. It's a great alternative to rice and can be served with many dishes.

2 cups bulgur (coarse)
2 tbsp olive oil
1 large onion (diced)
3 cloves garlic (minced)
1 green pepper (diced)
3 roma tomatoes (chopped)
1 1/2 tbsp tomato paste
1/2 tsp salt
1/2 tsp black pepper
3 1/2 cup water

Steps:

  • Place the bulgur in a bowl and rinse a few times. Set it aside.
  • Heat the olive oil in a pot over medium heat. Sauté the onion until translucent and then add the minced garlic. Cook for a minute.
  • Add in the diced green pepper and cook for a few minutes until it softens.
  • Add in the chopped tomatoes and stir well. Cook until they start releasing their juice.
  • Add the tomato paste and stir well so it combines with the other ingredients.
  • Add the salt and pepper and add in the rinsed bulgur. Stir well.
  • Turn the heat to medium high and add in the water. Once it comes to a simmer, lower the heat to medium, cover with a lid and cook for about 20-25 minutes until the water is almost completely evaporated.
  • Wrap the lid in a clean kitchen towel and place it on the pot. Turn the heat to medium low and cook for another 10 minutes.
  • Turn the heat off the let the bulgur sit for 5 minutes untouched, then fluff it with a fork and serve.

small handful pine nuts or flaked almonds
1 tbsp olive oil
1 large onion , halved and sliced
2 cinnamon sticks, broken in half
500g lean lamb neck fillet, cubed
250g basmati rice
1 lamb or vegetable stock cube
12 ready-to-eat dried apricots
handful fresh mint leaves, roughly chopped

Steps:

  • Dry-fry the pine nuts or almonds in a large pan until lightly toasted, then tip onto a plate. Add the oil to the pan, then fry the onion and cinnamon together until starting to turn golden. Turn up the heat, stir in the lamb, fry until the meat changes colour, then tip in the rice and cook for 1 min, stirring all the time.
  • Pour in 500ml boiling water, crumble in the stock cube, add the apricots, then season to taste. Turn the heat down, cover and simmer for 12 mins until the rice is tender and the stock has been absorbed. Toss in the pine nuts and mint and serve.

1 cup long grain rice
1 tablespoon butter
1 tablespoon oil
2 tablespoons vermicelli or 2 tablespoons orzo pasta
1 1/2-2 cups hot water (explained below) or 1 1/2-2 cups chicken stock (explained below)
also you can add 1 cube of chicken bouillon to hot water
1 teaspoon salt

Steps:

  • Wash the rice several times with warm water and drain. Cover the rice with warm water and leave it for 15-20 minutes and drain. If you do not have time for this, just wash the rice and then drain.
  • Place the butter and oil in a saucepan or pot and add the vermicelli or orzo. Over low-heat, fry until their color starts changing to golden brown. Do not over fry, take the pot from the stove as soon as you see the golden brown color and add the rice. Then, again place the pot on the stove and stir for 3-4 minutes over medium heat.
  • Finally, add the hot chicken stock / water (If you leave the rice in water before cooking, use 1 ½ cup hot water otherwise use 2 cups). Add the salt and close the lid and cook over low heat, until the rice absorbs all the water. Meanwhile you can stir once or twice.
  • Let the pilaf stand for about 5-10 minutes before serving.
  • Pilaf goes well with any kind of dish.
  • P.S: You can also add 1 tsp of lemon juice with the water, to make the pilaf shine.

1 cup rice (- see note 1)
2 ½ cups vegetable broth (- see note 2)
1 tbsp oil
2 tbsp butter
½ cup orzo
1 onion (- see note 3)
1 garlic clove
1 tsp salt
¼ tsp pepper
2 tsp lemon juice

Steps:

  • Rinse the rice in cold water at least three times to remove any excess starch. (see note 4)
  • Pour your broth into a small pan and heat until simmering. Or microwave it until steaming hot.
  • Place a large skillet (one with a lid) or shallow pan (again with a lid) over medium heat.
  • Add the butter and oil to the skillet to melt.
  • Add in the orzo, stir to coat well, then cook the pasta for 4-5 minutes, stirring occasionally, until well browned.
  • While the pasta is cooking, peel and finely chop the onion and garlic.
  • Reduce the heat under the skillet, then add the onion to the pasta and saute gently for 4 minutes.
  • Add the garlic and the rice and stir together until the rice is bright white.
  • Add the hot broth, salt, and pepper and bring to a simmer.
  • Reduce the heat to low, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid has been absorbed.
  • Remove from heat, but don't lift the lid. Let the finished pilaf stand for 5-10 minutes, then fluff with a fork.
  • Sprinkle the finished pilaf with lemon juice and serve.

2 cups (400 g/12⅔ oz) long-grain basmati rice
90 g (3 oz) ghee
1 large onion, finely chopped
1 teaspoon cardamom seeds, lightly crushed
1 teaspoon cumin seeds, lightly crushed
6 whole black peppercorns, lightly crushed
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon salt
1 bay leaf
4 cups (1 litre) hot chicken stock
½ cup (65 g/2¼ oz) shelled pistachio nuts, chopped
½ cup (100 g/3⅓ oz) chopped dates
½ cup (100 g/3⅓ oz) chopped dried apricots

Steps:

  • 1. Wash and soak the rice for 1 hour. Drain in a sieve. Heat the ghee in a large heavy-based pan and add the onion. Cook, stirring, over medium heat for 2-3 minutes until the onion is soft. Add the cardamom, cumin seeds, peppercorns, turmeric, ground cumin, salt and bay leaf. Cook, stirring, for 2-3 minutes to coat the spices with ghee. 2. Stir in the drained rice and cook, stirring continuously, for 2-3 minutes until the rice is well coated with ghee. Gradually pour on the stock, stirring constantly, then bring slowly to the boil. Cook over medium heat for 8-10 minutes, or until almost all the liquid has been absorbed and holes begin to appear on the surface of the rice. 3. Cover with a tight-fitting lid and turn the heat to very low. Cook for 20-25 minutes, or until the rice is cooked. Remove the lid and leave to stand for 5 minutes to allow the steam to escape. Gently fork through the nuts and dried fruit and serve. Delicious with spiced lamb or beef kebabs.

Sehriyeli pilav (Turkish rice pilaf) is a simple and tasty recipe combining orzo and rice. It makes a fantastic side dish for any meat entrée.

1 tablespoon butter or margarine
1 tablespoon cooking oil
2 tablespoons orzo pasta
1 cup rice (baldo or Calrose)
2 cups chicken broth (or bouillon)
Salt to taste
Black pepper to taste

Steps:

  • Gather the ingredients.
  • In a shallow saucepan, melt the butter and oil together. Add the orzo and stir continuously over medium heat until the pasta turns a dark golden color. Be careful and keep stirring so the butter and orzo don't burn.
  • Add the uncooked rice and stir thoroughly until the grains are coated with the oil. Add the chicken broth, salt, and pepper, and then bring to a boil. If you are using chicken bouillon in place of stock, cut down on or omit the salt.
  • Cover and reduce the heat to low. Let the rice slowly simmer until the liquid is absorbed, 20 minutes.
  • Without removing the cover, take the pan from the heat and put it aside to cool down for 5 minutes, keeping the lid on at all times. If too much condensation forms on the inside of the lid, open it and cover the top of the pan with a few paper towels, then replace the lid. This will absorb excess moisture and allow the rice to continue steaming at an even pace.
  • Before serving, open the lid and gently stir the rice to loosen the bottom and separate the grains.
  • You can use a small dessert bowl or ramekin as a mold to ​give it that signature rice pilaf look. Fill the bowl with the rice and use the back of a spoon to pack it down tightly. Invert the bowl onto a serving plate. The pilaf will pop out and should remain in the molded shape.

1 cup diced green bell pepper
1 cup sliced mushrooms (about 4 oz.)
1 large tomatoes, cubed (about 1-1/4 cups)
