Steps:
- Prepare the wings: In a large bowl, combine the granulated garlic, cayenne pepper, mustard powder, black pepper, white pepper and cumin. Remove and reserve 2 tablespoons of the spice mixture for the sauce.
- Rinse the wings and pat dry. Add to the bowl with the remaining spice mixture and toss to coat well. Lay the wings on a baking sheet, loosely cover and refrigerate 1 to 2 hours.
- Preheat a grill to medium high with direct and indirect heat (on a gas grill, turn off the burners on one side; on a charcoal grill, bank the coals to one side). Cook the wings over direct heat, turning, until they are good and crispy on both sides, 20 to 25 minutes. Transfer to the cooler side of the grill and cook, turning frequently, until cooked through, 8 to 10 more minutes.
- Meanwhile, make the sauce: In a medium saucepan over medium-high heat, combine the olive oil, garlic and jalapeno. Saute 1 minute, stirring constantly. Add the reserved 2 tablespoons spice mixture and the hot sauce. Bring to a simmer, then add the butter, vinegar and lime juice and stir until the butter melts. Keep warm until ready to serve. Put the wings in a large bowl, pour in the sauce and toss.
SPICY BAKED HOT WINGS
These Buffalo-style hot chicken wings are made with a homemade spicy sauce, baked to perfection. Easy and delicious!

Steps:
- Gather the ingredients. Preheat the oven to 425 F.
- Line a large rimmed baking sheet with foil; spray with nonstick spray . Or, use a nonstick foil to line the pan.
- Combine the butter, hot sauce, Tabasco, vinegar, and brown sugar in a saucepan. Cook over medium heat, stirring, until butter is melted. Remove from heat.
- Cut wing tips off with kitchen shears or a very sharp chef's knife and discard. Cut the wings at the joint.
- Toss the wings in a bowl with about 3 tablespoons of the hot sauce mixture. Set the remaining hot sauce mixture aside.
- Combine the flour, cayenne, black pepper, and salt in a food storage bag or bowl. Toss the chicken wing pieces in the flour mixture, a few at a time, until lightly coated.
- Arrange the wings on the foil-lined baking sheet. Bake the chicken wings for 20 minutes.
- Turn the wings over and cook for 20 minutes longer.
- Put the chicken wings in a bowl if serving right away, or put in a slow cooker to keep warm if serving as a party snack . Add the sauce, toss to coat, and serve hot immediately or keep warm in the slow cooker.
- Serve with celery sticks and blue cheese or ranch dressing, or another dip, such as chipotle mayonnaise or spicy chili mayonnaise .

SPICY GARLIC CHICKEN WINGS WITH CHOW CHOW AND BLUE CHEESE DIP

- For the wings: Preheat the oven to 325 degrees F. Combine the wings, vinegar, salt, sugar and chile in a large pot. Cover with water and bring to a boil. Once at a boil, remove from the heat, strain the wings and pat them dry. Place the wings on a baking sheet. Bake until the wings are dry, about 15 minutes.
- While the wings bake, fill a large, deep pot with 3 inches of oil. Place over medium-high heat and bring to 350 degrees F on a deep-fry thermometer. Working in batches, fry the wings until crispy and cooked through, about 6 to 8 minutes per batch, raising or lowering the heat as necessary to keep the oil at temperature. Drain the wings on a wire rack set over a sheet pan.
- Meanwhile, combine the garlic and olive oil in a medium saucepan. Place over medium heat until the oil just simmers. Cover the pan, adjust the heat and simmer until the garlic is tender, about 15 minutes. Allow to cool slightly, then transfer the oil and garlic to a blender and blend until smooth. Add the hot sauce and pulse until combined. Add a little water if necessary so the mixture is about as thick as syrup. Pour the sauce into a very large bowl. Add the wings and toss to coat.
- For the chow-chow: Combine the celery, carrots, vinegar, sugar and salt in a medium saucepan. Bring to a boil over medium-high heat. Remove from the heat and let cool. Drain.
- For the dip: Combine the blue cheese, yogurt, mayonnaise, pepper and celery salt in a food processor. Blend until smooth.
- Serve the wings with the dip and chow-chow on the side.

- Preheat oven to 375 degrees F (190 degrees C). Grease a large rimmed baking sheet.

- Boil pasta according to package instructions.
- In a separate pan, cook shallots in butter until translucent.
- Add flour slowly and constantly stir to create a roux.
- Add heavy cream and stir to incorporate.
- Add garlic powder, Italian seasoning, reserved pasta water, and buffalo wing sauce until incorporated.
- Add blue cheese crumbles and cook until melted.

HONEY'S SPICY HONEY WINGS

- Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper or nonstick aluminum foil.
- To prepare chicken wings, cut off wing tips at the joint and discard the tips or reserve for another use. In a large bowl, combine flour, garlic powder, Essence, salt, and white pepper. Dredge the wings in the flour mixture, shaking off the excess and let set on a plate.
- In a large, deep-sided pot, heat several inches of vegetable oil to 350 degrees F. When the oil is heated, dredge the wings a second time, again shaking off the excess.
- Deep-fry the wings until crispy and golden brown, about 12 minutes. While wings are frying, mix the hot sauce, honey, and brown sugar in a large bowl until mixture is smooth. Remove the wings from the oil, pat dry and then dip in the hot sauce mixture to coat. Lay the wings on the baking sheet. Bake coated wings until the sauce is dry, about 12 minutes. Serve hot with blue cheese or ranch dressing.

SPICY GARLIC HOT WINGS
These are a family favorite! The wings turn out crispy every time. You can omit or add more garlic, depending on your taste.

- Thaw wings and pat dry, set aside.
- Preheat Oven to 350 Degrees.
- Combine flour, pepper, and seasoned salt in a medium-sized bowl.
- Add oil to large skillet and heat on medium-high.
- When oil is ready for frying, use tongs to coat wings in flour/pepper/salt mixture and add to pan.
- Be sure to add wings to pan slowly as to not bring doing the temperature of the oil too quickly.
- Fry wings until slightly golden on each side.
- You will move wings to a baking sheet with either a cooling rack or baking grid on top of the sheet. You can line with foil as well to minimize cleanup. Basically, you want the wings to cook and the oil to drip down to the pan, so whatever you need to use to do that will work!
- Place wings in oven for 30-40 minutes.
- You should remove when they are crispy enough for you--I like mine crispy so I tend to go for 40-45 minutes.
- While wings are in the oven, prepare the sauce.
- Melt 1/2 cup of margarine in a small saucepan.
- Add garlic, finely chopped.
- Sautee garlic in butter for 3-4 minutes on medium-low heat.
- Add hot sauce.
- When wings are done, remove from oven and let them rest for 5 minutes or so.
- Use tongs and coat wings in sauce and plate.
- Enjoy with ranch or blue cheese dressing!

- Put the chicken wings, buttermilk and 1/2 tsp salt in a bowl and toss together to coat. Cover and leave in the fridge overnight.
- Heat oven to 200C/180C fan/ gas 6. Put all the ingredients for the spice mix in another large mixing bowl with a pinch of salt and mix well. Remove the wings from the fridge and, one at a time, roll them in the spice mix. Once fully coated, tip onto a baking tray lined with baking parchment, and roast for 35 mins. Meanwhile, mix the ingredients for the glaze together.
- Once the wings have browned, remove them from the oven and generously brush with the glaze. Reduce oven to 180C/160C fan/ gas 4, put the wings back in and cook for a further 15 mins or until the glaze has gone sticky and is starting to caramelise. Remove the wings from the oven and rest for a minute or so. Serve with a blue cheese dip, if you like.

UNCLE MIKE'S HOT WING SAUCE
Make your own "fresher" version of wing sauce using simple ingredients. This recipe is customizable to suit individual tastes. You can make it mild or hot. You will arrive at a perfect balance - for you - and will really love the results! The quantities of ingredients listed are a guide and not an absolute. Vary amounts according to taste for each step, But start with the butter first!

- 1. Melt the butter in a 1 quart sauce pan. For 2 people, I generally use 2 sticks butter (8 oz) - melt the butter before adding anything else. This makes enough so you can coat the chicken while cooking and have some left over to dip with while eating.
- 2. Now add your hot sauce. Try to use fresh sauce as old sauce might not result in a smooth mix. How much? I recommend starting with 40% of your butter amount. That would be "very mild". Stir it in well. Taste it. Is it not "hot" enough? Add some more until it's warm enough for you. If you make it too hot, then you'll be adding more butter.
- 3. Add maybe 1 Tbsp sugar. This is only to offset the vinegar taste of the pepper sauce. If you can taste "sweet" then you added too much. All you are doing here is taking the edge off the vinegar. If you like the vinegar then don't add sugar. Remember, this is your custom made sauce.
- 4. Now, add just enough salt to bring up the flavors of the pepper sauce. If you taste "salt" then you added too much. All you are doing is bringing up the flavors and are not wanting to make it taste salty.
- 5. Lastly, add about 1/2 Tbsp garlic powder. Stir it all well. Taste it. Does it need a little more? You decide.
- 6. add a dash - 4-6 drops Worcestershire sauce without concerning yourself on how to pronounce it.
- You can now build you own "Buffalo style" sauce and use it on legs, wings etc. You can use Frank's, Texas Pete, or whatever. Your flavors and proportions will vary with which pepper sauce you use at the time. If you use a pre-made "wing" sauce, realize you will be using much less butter and will really be losing some cost and originality advantage.
