I'd like to think that all the chicken coming off American grills this summer will be as tasty, juicy, and tender as these Turkish chicken kebabs. By using a flavorful, yogurt-based marinade, like the one seen herein, even inexperienced grillers can produce impressive results. I'm not sure how 'Turkish' this is--it's loosely based on a lamb marinade I've used for a long time.

1 cup whole-milk Greek yogurt
2 tablespoons freshly squeezed lemon juice, or more to taste
2 tablespoons olive oil
2 tablespoons ketchup
6 cloves garlic, minced
1 tablespoon Aleppo red pepper flakes
1 tablespoon kosher salt
1 ½ teaspoons ground cumin
1 teaspoon freshly ground black pepper
1 teaspoon paprika
⅛ teaspoon ground cinnamon
2 ½ pounds boneless, skinless chicken thighs, halved
4 long metal skewers

Steps:

  • Whisk yogurt, lemon juice, olive oil, ketchup, garlic, red pepper flakes, salt, cumin, black pepper, paprika, and cinnamon together in a bowl.
  • Place chicken thigh halves into the yogurt marinade and coat them thoroughly on all sides. Cover bowl with plastic wrap and refrigerate 2 to 8 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Using 2 skewers for each kebab, thread half of the chicken thighs onto each pair of skewers making a fairly thick "log" shape.
  • Place kebabs on grill. Do not try to turn them until they begin to unstick from the grill, 3 or 4 minutes. Turn kebabs and grill the other side 3 or 4 minutes; turn. Continue cooking and turning until chicken is no longer pink in the center and the juices run clear, about 6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Homemade Shawarma Ingredients
8 fresh boneless chicken thighs
1 TBL Tahini (sesame paste)
4 TBL goat yogurt
4 garlic cloves
1/2 tsp fennel
1/2 tsp cumin
1/2 tsp coriander seed
1/2 tsp ground cinnamon
1/2 tsp cloves
1/2 tsp smoked paprika
1/2 tsp freshly ground cardamom
1/2 tsp Cayenne pepper
1 tsp Kosher salt
2 lemons
4 to matoes
2 onions

Steps:

  • Ok, let's start blooming our shawarma spices. Blooming is a great way to intensify your flavors.
  • Grab a 1/2 tsp of fennel seed, cumin seed, coriander seed, ground cinnamon, allspice, cloves, smoked paprika and ground cardamom.
  • Grind them down with a mortar and pestle.
  • Roast (bloom) them in a non-stick pan or iron skillet. I prefer iron.
  • Get your exhaust fan on high and/or open the windows. The aroma will envelop the house. Not a bad thing though.
  • When everything is starting to smoke turn the heat off and remove the spices to a bowl.
  • Your should be getting excited at this point. The aromas are intoxicating and of course I missed this part in my travels to Turkey since the dish went straight from kitchen to my mouth. I wish I had some process shots of that old woman. Ugh.
  • Grab 4 TBL of goat or sheep yogurt and marry that with 1 TBL of tahini, 4 cloves of garlic, a couple bay leaves and a few drizzles of extra virgin olive oil.
  • Buzz that in a CuisinArt or you can use an immersion blender.
  • Pour the roasted spices into this mixture. Spin for a few seconds.
  • Add 1 tsp of fine Kosher salt and 1 tsp cayenne pepper.
  • Walaah. You have an authentic shawarma marinade / paste.
  • Coat the boneless chicken thighs with this little bit of heaven and put in the fridge for a full day.

2 garlic cloves
200g Greek yogurt
1 lemon , juiced
2 tsp tomato purée
2 tsp chilli flakes (Aleppo are nice)
2 tsp sumac
4 chicken breasts , cut into chunks
300g baby plum tomatoes
1 thumb-sized red chilli , stem removed
2 tbsp extra virgin olive oil
1 small red onion , sliced
1 tbsp pomegranate molasses
4 Middle Eastern flatbreads
long pickled chillis (guindillas)
a handful fresh coriander
a handful fresh flat-leaf parsley

Steps:

  • Crush 1 garlic clove and mix with 3 tbsp yogurt, the lemon juice, 1 tsp tomato purée, half the spices, and some seasoning in a medium bowl. Add the chicken, toss, cover and chill in the fridge for at least 1 hr or overnight.
  • Make the chilli sauce. Put 100g of the tomatoes, the whole red chilli, the remaining spices, garlic clove and tomato purée, plus 1 tbsp olive oil, half the red onion and the pomegranate molasses in a food processor. Add some seasoning and pulse until puréed, then set aside.
  • Heat oven to 200C/180C fan/gas 6, and heat a griddle pan. Thread the chicken onto metal skewers or wooden ones that have been soaked, then wipe off the excess marinade. Skewer the remaining tomatoes on a separate skewer. Lightly oil the griddle with the remaining olive oil and brown the chicken on both sides, then transfer to a baking tray and bake in the oven for 10 mins, or until cooked through. Meanwhile, griddle the tomatoes for 1-2 mins, turning halfway through so they have griddle marks on both sides.
  • Serve the chicken and tomatoes on flatbreads with the remaining red onion, pickled chillis, the remaining Greek yogurt, parsley and coriander with the chilli sauce spooned over.

  • Prepare a charcoal fire in an outdoor grill, switch on the gas if you have an outdoor gas grill, or preheat the broiler to high.
  • Thread the meat onto 7 long skewers and the tomatoes onto an eighth one. Grill over high heat or broil 3 to 4 minutes on each side, or until the meat and tomatoes are done to your liking. Slip the meat and tomatoes off the skewers onto flatbread and serve immediately.

1-2 tsps honey
juice of 1 lemon

Steps:

  • To prepare this Greek beef souvlaki recipe, cut the beef into equal sized (3 cm/1 inch) cubes and set aside.
  • Prepare the marinade for the beef kabobs. In a large bowl add all the ingredients for the marinade and the meat and blend to coat. Cover the bowl with plastic wrap and let them marinade for at least 1 hour in the fridge. Preferably leave them to marinade overnight so they soak up even more all those wonderful flavours.

juice of half a lemon, approx 25ml
small sprig rosemary, leaves only, finely chopped
1 tsp dried oregano
1 tsp mild chilli flakes, or pul biber, see note
1 tsp paprika powder
½ tsp salt
freshly ground black pepper
2 Tbsp olive oil
1 Tbsp red wine vinegar
1 clove garlic, crushed
250 g thick Greek-Style yoghurt
½ a cucumber, skin peeled if very thick, finely diced
½ tsp salt
750 g chicken thighs, boneless and skinless, diced in bite-sized pieces
3 red onions, peeled and quartered
4 large flatbreads
2 red or green bell peppers/capsicums, in 2.5cm / 1in. dice
1 Tbsp runny honey
1 Tbsp pomegranate molasses

Steps:

  • Up to 24 hours before you want to cook the chicken, whisk together all marinade ingredients. Add the chicken, stir well to coat, then cover and refrigerate until needed. Even half an hour in the marinade is better than nothing at all, though several hours is better.
  • To make the Tzatziki/Cacık, stir together all ingredients and chill until needed. Can be made up to 8 hours in advance.
  • To prepare the kebabs, thread the chicken onto metal skewers, alternating with onion and bell pepper (if using). If you are using wooden skewers soak them in water for half an hour before using. Heat the grill or BBQ to medium-high, brush with oil and cook the chicken kebabs for 10 minutes, turning halfway, until charred and cooked through. If using, drizzle with a little honey and pomegranate molasses in the last 2 minutes of grilling.
  • Serve immediately with Tzatziki/Cacık, lemon slices, and flatbreads.

Instead of being grilled on a rotating skewer, the meat is first sautéed in a pan, and then cooked with water. This recipe suggests serving the shawarma in a classic pita bread, garnished with tahini-based sauce and fresh vegetables.

1 kg beef or mutton
4 cloves garlic, mashed
1/4 cup olive oil
1/3 cup vinegar
1 tbsp shawarma seasoning blend

¼ tsp black pepper
1 tbsp salt, adjust to taste
1 medium-sized tomato, sliced or diced
1/2 green pepper, cut into strips
1 large onion
4 tbsp sumac
1 cup chopped parsley
pickles, sliced
pita bread
FOR THE SAUCE
1 cup tahini
3 tbsp yogurt
1/4 cup lemon juice
2 tbsp vinegar
1 tsp salt
1/2 tsp crushed cumin

Steps:

  • Cut the meat into long, thin strips. Prepare the marinade by mixing garlic, oil, vinegar, shawarma seasoning blend, coriander, black pepper, turmeric, cinnamon, and salt. Rub the marinade into the meat, cover, and refrigerate overnight or at least for several hours.
  • In the meantime, prepare the sauce. Mix all the ingredients until the mixture becomes homogenous. If the sauce is too thick, add some more lemon juice.
  • Cook the meat in a pan over strong flame until the marinade evaporates. Then, pour in 1 cup of water and continue cooking until the meat is soft. Add tomato and pepper slices and stir until they fall apart. Set aside.
  • Spread the sauce over the pita bread. Top with sliced onion, pickles, sumac and parsley, and finish with shawarma. Roll and serve.

2 chicken breasts (boneless, skinless, or 4 to 5 boneless, skinless thighs)
1 medium onion
2 cloves garlic
1/2 cup plain yogurt (or milk)
3 tablespoons vegetable oil
2 tablespoons tomato paste
1 teaspoon ground black pepper
1 teaspoon paprika
1 teaspoon salt (plus more for seasoning)
Garnish: dried oregano, sumac, and paprika (optional)

Steps:

  • Gather the ingredients.
  • Pat the chicken breasts dry with paper towels.
  • Cut the meat into 1-inch pieces. Set aside.
  • Using the finest grater possible, grate the onion and garlic cloves over a medium bowl.
  • Pour the pulp and juice into a fine mesh strainer and, using a wooden spoon, press out the juice into a medium bowl. Discard the onion and garlic pulp; reserve the juice.
  • Stir together the onion-garlic juice, yogurt, oil, tomato paste, black pepper, paprika, and salt.

  • Prepare a medium (350°F to 375°F) gas or charcoal grill fire. If using bamboo skewers, soak skewers in water for 30 minutes so they don't catch fire on the grill.
  • Remove the chicken pieces from the marinade and thread them onto soaked bamboo kebab skewers or metal skewers. The chunks of chicken can touch each other, but don't put them too close together to ensure they cook through. Discard any remaining marinade.
  • Sprinkle the kebabs generously with salt and place on pre heated grill. Grill evenly on all sides, about 12 minutes total.
  • Garnish with sumac, dried oregano, and paprika, if desired, and serve.

3 pounds (1.4kg) chicken wings, cut at joints, wingtips discarded

Steps:

  • In a medium bowl, stir together pepper paste, olive oil, parsley, garlic, and pomegranate molasses with a rubber spatula until well combined. Stir in salt, isot pepper (if using), cumin, and paprika. Transfer 1/2 cup (120ml) pepper paste mixture to a small bowl and set aside. (If you're marinating the chicken wings overnight, cover and refrigerate this pepper paste mixture until you're ready to grill the wings.)
  • Combine chicken wings and remaining pepper paste mixture in a 1-gallon zipper-lock bag. Seal bag, pressing out as much air as possible. Massage bag until wings are evenly coated in marinade. Lay bag flat on a rimmed baking sheet and refrigerate, turning bag occasionally, for at least 1 hour and up to 24 hours.
  • Set up grill for skewers (see note), making sure to adjust distance between bricks to match the length of your skewers. Light 2/3 chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals over half the channel between the bricks, creating a modified two-zone direct fire .

Mix to coat chicken, either with a spoon or your hands. Marinate chicken for 30 minutes-24 hours. If you're cooking it within the hour, leave the marinating chicken outside of the fridge.
  • When ready to cook, line a rimmed baking sheet that is big enough so to perch metal skewers on top, with foil. My baking sheet and skewers are about 16 inches long.
  • Thread pieces of marinated chicken onto 2 long metal skewers and bake at 400 degrees until internal temperature reaches 165F (about 30 minutes). Flip chicken once during cooking, using tongs or hot pads. Chicken may also be grilled. If you like, broil chicken for the last 5 minutes of cooking for crispy yummy bits!
  • Remove from skewers and thinly slice for use in a sandwich wrap or over a salad. Serve with tahini dressing with parsley (linked above).
