A warming winter treat, this spicy turkey soup is a great use of Christmas leftovers - happy Boxing Day!

1 tbsp olive oil
1 large onion, halved and sliced into thin strips
1 red pepper, seeded and sliced into thin strips
2 tsp ground coriander
¼ - ½ tsp chilli flakes
3 tbsp basmati rice or long grain rice
1½ l hot turkey or chicken stock
250g/9oz turkey meat, cut into thin strips (leg meat will have the most flavour)
410g can chickpea, drained and rinsed
a handful of fresh coriander or flatleaf parsley, roughly chopped (optional)

Steps:

  • Heat the oil in a large pan, add the onion and fry for 5 minutes or so, stirring every now and then until it starts to soften.
  • To make the soup, add the red pepper, ground coriander, chilli and rice and stir round the pan for about a minute. Pour in the hot stock, stir in the turkey and chickpeas and season well. Bring to the boil, cover and simmer for 8-10 minutes, until the vegetables and rice are tender. Stir in the coriander or parsley and it's ready. (The soup may now be cooled and frozen for up to 1 month.)

1/2 cup farfalle (bow-tie pasta), uncooked

Steps:

  • Heat oil in large saucepan on medium heat. Add onions, carrots and celery; cook 3 to 5 min. or until crisp-tender, stirring occasionally.
  • Stir in broth, water and dressing mix. Bring to boil.
  • Add turkey and pasta; cover. Simmer on medium-low heat 10 to 12 min. or until pasta is tender.

Carcass from a 14- to 16-lb roast turkey, including skin
4 qt water
1/2 teaspoon dried thyme, crumbled
2 tablespoons vegetable oil
2 medium onions, chopped
3 medium carrots, chopped
3 celery ribs, chopped
6 oz medium dried egg noodles (about 3 1/4 cups)
1 cup frozen peas (from a 10-oz package)
2 to 3 cups coarsely chopped cooked turkey meat (without skin)

Steps:

  • Pull carcass into large pieces. Combine carcass, water, and thyme in a 7- to 10-quart pot and simmer, uncovered, skimming froth, 3 hours. Discard large bones with a slotted spoon or tongs, then pour broth through a large sieve into a large bowl.
  • If broth measures less than 12 cups, add water. If not, boil, uncovered, in cleaned pot until reduced to 12 cups. If using broth right away, let stand until fat rises to top, 1 to 2 minutes, then skim off and discard fat. If not using broth right away, cool, uncovered, then chill, covered, before skimming fat (it will be easier to remove when cool or cold).
  • Heat oil in cleaned and dried pot over moderately high heat until hot but not smoking, then cook onions, carrots, and celery, stirring occasionally, until onions are golden, 10 to 12 minutes.
  • Add broth and simmer, uncovered, until vegetables are just tender, about 10 minutes. Add noodles, peas, and turkey and simmer, stirring occasionally, until noodles are tender, about 10 minutes.

1 leftover turkey carcass (from a 14-pound turkey)
3 quarts water
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1/2 cup uncooked long grain rice
1 medium onion, finely chopped
4 celery ribs, finely chopped
2 medium carrots, grated
1 bay leaf
Dash poultry seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon pepper
Salt, optional

Steps:

  • In a stockpot, place turkey carcass, water and broth. Bring to a boil. Reduce heat; cover and simmer 4-5 hours. , Remove carcass from stock. Remove any meat; dice. Return to stock along with rice, onion, celery, carrots, bay leaf and poultry seasoning. Add remaining seasonings to taste. Cover; simmer over medium-low heat until rice is cooked. Discard bay leaf.

This is the turkey soup my grandma made, my dad made, and now I make after a holiday turkey meal. The only difference is now I roast my stock ingredients prior to simmering them courtesy of Kittencal's Homemade Deep Rich Turkey Stock/Broth recipe here on recipezaar.

1 leftover turkey carcass
2 carrots, peeled
1 celery rib
1 large cooking onion, chopped (or 2 small)
1 large parsley sprig
2 bay leaves
water, to cover carcass
salt & pepper
ground cayenne pepper (optional)
2/3 lb acini di pepe pasta
saltine, garnish
salt & pepper, garnish

Steps:

  • Throw carcass, carrots, celery, & onion into baking pan and roast about 40 minutes @ 400-degrees.
  • Remove carrots & celery stalk from pan and chop.
  • Put carcass, onions, carrots, & celery into large stock pot. Fill with water enough to just about cover carcass. Add parsley, bay leaves, cayenne, salt, & pepper.
  • Bring to a boil; Reduce heat to low and simmer 1-2 hours.
  • Using tongs remove the carcass & all bones to a separate plate. Remove parsley & bay leaves, and discard. Remove all the turkey meat from the bone & put back into pot. Pay particular attention to the neck meat & the meat around the upper spine - it is rich & delicious!
  • While picking the turkey meat, boil salted water & cook 1/2 to 3/4 box of acini di pepe in a separate pot. Strain.
  • Add pepe to turkey soup.
  • Serve with low-sodium saltines & salt & pepper to add to taste for each person's bowl. [hot sauce can also be a good garnish!].
  • I also fill 1 ice cube tray up of stock poured through a sieve before making the stock into soup & freeze. The individual turkey stock cubes can be used for cooking.
  • Freeze leftovers in plastic tupperware for up to 6 months.

1/2 onion, chopped
1 cup celery, chopped
1 cup carrot, chopped
1 sweet potato, chopped
1 -2 lb leftover cooked turkey, chopped
1 bay leaf
4 -6 leaves dried sage, crumbled (about a teaspoon)
1 teaspoon rosemary, crushed
1 quart broth or 1 quart water
salt and pepper

Steps:

  • Chop your veggies and turkey into roughly bite sized pieces.
  • Get a big soup pot and start heating the oil in it over medium high heat. Saute the onion for a few minutes, until transparent.
  • Add the celery, carrot, sweet potato, and turkey. Cook about five minutes.
  • Add seasonings and enough liquid to cover veggies and turkey. This might be a quart or it might not. Bring to a boil and then drop the heat to medium low. Simmer for an hour, checking occasionally to make sure everything stays submerged.
