This is a nice soup recipe with a lot of texture and flavor. It is a welcome change for those weeks when there doesn't seem to be a lot of variety... and all 3 of my kids even loved it. This can also be cooked in a pan on the stove until the barley and carrot are tender, but I prefer the slow cooker method. The flavors seem to blend better.

1 pound Italian sausage
½ cup diced onion
1 tablespoon minced garlic
½ teaspoon Italian seasoning
1 (48 fluid ounce) can chicken broth
1 large carrot, sliced
1 (10 ounce) package frozen chopped spinach
¼ cup uncooked pearl barley

Steps:

  • In a skillet over medium heat, cook the sausage, onion, and garlic until the sausage is evenly brown. Season with Italian seasoning. Remove from heat, and drain.
  • In a slow cooker, mix the sausage mixture, chicken broth, carrot, spinach, and barley.
  • Cover, and cook 4 hours on High or 6 to 8 hours on Low.

1 tablespoon olive oil
1 large onion, diced
¾ pound bulk turkey sausage
1 clove garlic, crushed
1 (32 fluid ounce) container chicken stock
6 ounces frozen chopped spinach
2 teaspoons kosher salt
ground black pepper to taste
⅓ cup barley

Steps:

  • Heat olive oil in a large pot over medium heat. Cook and stir onion in hot oil until soft, about 5 minutes. Add turkey sausage and garlic, breaking sausage into small pieces with a wooden spoon; cook and stir until sausage is browned, about 5 minutes. Pour chicken stock over the sausage mixture. Stir spinach into broth; bring to a simmer and season with kosher salt and black pepper. Bring the soup to a boil, reduce heat to medium-low, and cook at a simmer for 20 minutes.
  • Stir barley into the soup and continue to cook until the barley is tender, about 1 hour.

1 tablespoon olive oil
1 lb turkey sausage or 1 lb chicken sausage, cut into 1/2 inch rounds
6 cups shredded cabbage
1 onion, sliced
1 garlic clove, minced
1/2 teaspoon caraway seed
2 cups low-sodium low-fat chicken broth
1 tablespoon cider vinegar
1 tablespoon whole grain mustard
3/4 cup barley

Steps:

  • In deep non stick frying pan, heat oil over medium high heat. Add sausage and brown on all sides, about 5 minutes. Add cabbage, onion, garlic, and caraway seeds; cook, stirring, until cabbage has wilted slightly, about 3 minutes.
  • In bowl, whisk together stock, vinegar and mustard. Add to frying pan along with barley; stir. Bring to simmer; cover and cook, stirring occasionally and adding more water if too dry, for 40 minutes or until barley is tender.

There are lots of turkey sausage recipes here on 'Zaar, I couldn't find any like this. This is the sausage recipe that I used to make when my daughter was little and had severe food allergies. The mixture needs to be refrigerated over night to blend the flavors. I still use it to this day.

1 1/2 pounds hot or mild (or a combination) Italian turkey sausages (4 to 6 sausages)
1 1/2 tablespoons unsalted butter
1/4 teaspoon caraway seeds
1 large bulb fennel, trimmed, quartered and thinly sliced, plus 1 tablespoon fronds for topping
1 Gala apple, cored and thinly sliced
1 pound sauerkraut, well drained
Kosher salt and freshly ground pepper

Steps:

  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the sausages and cook, turning, until browned all over, 6 to 8 minutes. Add 1/4 cup water, cover and cook until the sausages are just cooked through, about 2 minutes. Transfer to a plate to cool, then slice into 2-inch pieces.
  • Reduce the heat under the skillet to medium; add the butter and caraway seeds and cook, stirring, until the butter is melted. Add the fennel and apple and cook, stirring, until slightly softened, about 3 minutes. Add the sauerkraut and sausage slices and cook, stirring, until the sauerkraut is warmed through, about 3 more minutes. Season with salt and pepper. Top with fennel fronds.

Steps:

  • Heat oven to 400ºF.
  • Combine cabbage, onions and carrots in medium bowl.
  • Mix sugar, vinegar and mustard until blended. Add to cabbage mixture; mix lightly. Spoon onto centers of 4 large sheets heavy-duty foil sprayed with cooking spray.

3 tablespoons minced fresh thyme
1 teaspoon salt
1/4 teaspoon pepper
1 turkey (12 to 14 pounds)
STUFFING:
1 pound bulk Italian sausage
3 cups chopped cabbage
1 large carrot, shredded
1 celery rib, chopped
1 small onion, chopped
2 tablespoons half-and-half cream
3/4 teaspoon poultry seasoning
1/4 teaspoon salt
1/8 teaspoon pepper
3 cups seasoned stuffing cubes
1 egg, lightly beaten
2/3 to 3/4 cup chicken broth

Steps:

  • In a small bowl, mix the butter, thyme, salt and pepper. Place turkey on a rack in a shallow roasting pan, breast side up. With fingers, carefully loosen skin from the turkey breast; rub half of the butter mixture under the skin. Rub remaining butter mixture over turkey. Tuck wings under turkey; tie drumsticks together. , Bake at 325° for 3 to 3-3/4 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°. Baste occasionally with pan drippings., For stuffing, in a Dutch oven, cook sausage over medium heat for 6-8 minutes or until no longer pink, breaking into crumbles. Remove with a slotted spoon; drain on paper towels. 1 teaspoon garlic powder
1 teaspoon pepper
1-1/2 pounds lean ground turkey
3 Italian turkey sausage links (about 4 ounces each), casings removed
1 bottle (46 ounces) V8 juice

  • In batches, cook cabbage leaves in boiling water until crisp-tender, about 5 minutes. Drain; cool slightly., In a large bowl, combine rice mix, onion, red pepper, parsley and seasonings.
