XNI-PEC (DOG'S NOSE) - HABANERO SALSA RECIPE



Xni-Pec (Dog's Nose) - Habanero Salsa Recipe image

Xni-Pec is a Yucatan salsa made with fresh habanero peppers, tomato, onion, sour orange juice and more. It packs some heat, and as the name implies, might make you sweat like a dog's nose.

3 habanero peppers (chopped (or more, as desired))
1 medium tomato (chopped)
1 small white onion (chopped)
3 tablespoons fresh sour orange juice
¼ cup chopped cilantro
Salt to taste

Steps:

  • Combine all ingredients in a mixing bowl. Mix well. Taste and adjust for salt.
  • Cover and refrigerate overnight for the flavors to mingle and develop. Serve!

Shrimp Seviche

Number Of Ingredients 12

2 pounds small (41 to 50 per pound) shrimp, peeled and deveined, see Cook's Notes
3 lemons, juiced
3 limes, juiced
2 oranges, juiced
1 large tomato, seeded, and cut into medium dice (about 1 1/4 cups)
1/3 cup freshly chopped cilantro leaves
1/3 cup olive oil
1/4 cup finely diced Spanish onion
1 teaspoon finely chopped chile pepper, see Cook's Notes
1 lime, juiced
Salt and freshly ground black pepper
Good quality corn tortilla chips, for serving

Steps:

  • To make the seviche: Toss the shrimp with the lemon, lime and orange juices in a large non-reactive bowl. Refrigerate for a minimum of 3 hours or until the shrimp have turned opaque.
  • While the shrimp is "cooking," make the Xni Pec: Toss the tomato, cilantro, olive oil, onion, chile, and lime juice in a bowl to mix. Season with salt and pepper, to taste.
  • When the shrimp are ready, drain them and discard the marinade. Toss with the Xni Pec. Divide among martini glasses or other serving dishes and garnish each with a corn tortilla chip. Pass remaining chips separately.

This is a habanero Salsa. As with all recipes calling for chiles, feel free to substitute with whatever you have on hand. This recipe is from "The Habanero Cookbook" by Dave DeWitt and Nancy Gerlach.

2 habanero peppers, deseeded and destemmed, chopped (roasted or not)
2 tomatoes, chopped
1 medium purple onion, chopped
1/3 cup lime juice or 1/3 cup bitter orange juice
3 tablespoons chopped fresh cilantro
1/2 cup grapefruit juice
1/4 cup orange juice
3 tablespoons lime juice

Steps:

  • If using bitter orange juice, combine grapefruit juice, orange juice, and lime juice.
  • Combine chiles, tomatoes, onion, and juice in a nonreactive bowl.
  • Allow to sit for, at least 1 hour or at most 3 hours, to blend the various flavors.
  • Just prior to serving, stir in the chopped cilantro.

6 habanero peppers, roasted, peeled, stems and seeds removed, minced
3 plum tomatoes, finely diced
1/4 cup fresh cilantro, chopped
1/4 cup white onion, minced
1/4 cup sour orange juice or 1/4 cup lime juice

Steps:

  • Combine all the ingredients.
  • Let sit for 30 minutes at room temperature and serve!

2 Tbsp. KRAFT Zesty Italian Dressing
2 Tbsp. fresh cilantro, coarsely chopped
1 serrano chile, seeded, coarsely chopped
1 Tbsp. fresh lime juice
1/2 Pork Chops in Green Mole Sauce
8 tostada shells
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Combine first 5 ingredients.
  • Toss meat with mole sauce in microwaveable casserole; cover with lid. Microwave on HIGH 1 to 2 min. or until heated through, stirring after each minute.
  • Top tostadas with meat mixture, radish mixture and sour cream.
