I am always looking for ways to make food a little healthier. This is a good meatloaf with some fiber and a few other things that are good for you thrown in.

- Mix EVERYTHING together.

SPINACH STUFFED TURKEY MEATLOAF
This turkey meatloaf is filled with a spinach-mushroom mixture and topped with shredded mozzarella cheese for a delicious weeknight meal.

- Heat oven to 375 degrees F. Lightly spray medium skillet with cooking spray.
- Cook mushrooms and onion in skillet over medium-low heat 4 minutes or until onion is tender; remove from heat.
- Add spinach, 1/4 cup mozzarella cheese and Parmesan cheese; mix well. Set aside.
- In large bowl, combine turkey, oats, milk, egg white, Italian seasoning, salt and pepper; mix lightly but thoroughly.
- Spoon 2/3 of turkey mixture lengthwise down center of 11 x 7-inch glass baking dish.
- Form a deep indentation down middle of turkey; fill indentation with reserved spinach mixture.
- Top with remaining turkey, forming a loaf.
- Seal edges to completely enclose spinach filling.
- Bake 30 to 35 minutes or until thermometer registers 170 degrees F and juices show no pink color.
- Remove from oven; sprinkle with remaining mozzarella cheese.
- Return to oven 1 to 2 minutes or until cheese melts.
- Let stand 5 minutes before slicing.

TURKEY PINEAPPLE SPINACH MEATLOAF
This is very moist and highly seasoned from the spices and herbs you add and those in the breadcrumbs & sausage! You can make a small meatball and fry it to taste test for additional seasoning. This is the point where you can tell if you need to add salt as well as spice! But I doubt it! As for the parmesan, bread crumbs and sausage is salty.

- Preheat oven to 350 degrees.
- Heat olive oil in large skillet and cook onions and garlic until tender. Remove to large bowl.
- Add pinapples, spinach (squeezed dry), bread crumbs, cheese, eggs, basil, sage and pepper. Mix well.
- Add turkey and turkey sausage and mix gently.
- Form into round loaf and place in 2 quart casserole dish.
- Bake for 40 minutes, top with pineapple rings or mix the preserves and brown sugar spread on loaf, bake 15 more minutes or until internal temperature registers 160 degrees.

- For the meatloaf: Preheat the oven to 350 degrees F.
- Heat the olive oil in a small skillet over medium-high heat; add the garlic and onions and cook, stirring occasionally, until soft and brown, about 8 minutes. Transfer to a food processor along with the spinach, milk, lemon zest, mint, salt, Worcestershire, nutmeg, eggs, potato and some pepper. Pulse until everything is finely chopped and evenly mixed together.
- Use a rubber spatula to transfer the spinach mixture to a bowl. Add the turkey and stir everything together. Transfer the meatloaf mixture to a 9-by-5-inch loaf pan (1 1/2 quarts) and bake until the mixture is cooked through, 1 hour 15 minutes. Let rest for 5 minutes.
- For the tomato salad: Meanwhile, chop the tomatoes and toss with the olive oil, parsley and salt in a medium bowl.
- Slice the meatloaf and serve it with the tomato salad.

- In a large nonstick skillet, heat 1 teaspoon oil, ginger and garlic. Add turkey; stir-fry for 8-10 minutes or until no longer pink. Remove turkey and keep warm. Add remaining oil to the skillet; stir-fry cauliflower for 3 minutes. - Preheat oven to 350.
- Spray a muffin pan with cooking spray- I used a 12 muffin pan.
- Cook spinach as directed and drain well.
- In a large mixing bowl combine panko crumbs, egg substitute, pesto, sun dried tomatoes, onion and garlic powder and milk and mix well.
- Add ground turkey ( I used ground turkey breast) and mix well.
- Add drained and cooled spinach.
- If consistency is dry add a little more milk, if consistency is moist add a little more panko crumbs.
- Add pepper to taste.
- Divide mixture and place in muffin pan, approx 1/4 - 1/2 cup per muffin.
- Bake @ 350 for approx 30-45 mins or until a meat thermometer registers 160.

TURKEY-SPINACH MEATLOAF

- Place garlic cloves in small saucepan, add enough olive oil to cover them, and place over very low heat. Cook about 40 minutes, until garlic is tender but not browned. Drain garlic, and reserve oil. While garlic cooks, remove and discard stems and heavy leaf ribs from spinach.
- Place onion in nonstick sauté pan over low heat. Cook until translucent, about 2 minutes. Add spinach leaves and salt, and stir until spinach wilts. Line a small baking sheet with several thicknesses of paper towel, and spread spinach mixture on towel and refrigerate to cool.
- Heat oven to 375 degrees. In a mixing bowl or bowl of an electric mixer combine turkey, thyme, pepper, cayenne and cooked garlic cloves; mix well.
- Remove spinach from refrigerator, and chop. Add to mixing bowl, and mix well by hand or on low speed by machine. Form into loaf shape.
- Heat a heavy skillet, preferably oven-proof. Add a little of the garlic oil and sear loaf top and bottom until lightly browned. Sides can be seared but only if you have a very large spatula to turn loaf easily. Place skillet in oven or transfer loaf to shallow baking dish, then place in oven. Bake about 50 minutes, until a thermometer registers 160 degrees. Remove from oven and serve, or refrigerate and serve cold. Reserve remaining garlic oil for another use.

- Wash turkey and pat dry.
- If desired, rub cavity lightly with salt. Fasten neck skin to back and skewer.
- Fold wings across back with tips touching.
- Tuck drumsticks under band of skin at tail or tie together with heavy string, then tie to tail.
- Place turkey breast side up on rack in open shallow roasting pan.
- Brush with vegetable oil.
- Insert meat thermome- ter so tip is in thickest part of inside thigh muscle or thickest part of breast meat and does not touch bone. Roast uncovered in 325 degrees oven for 3 hours.
- Pare pineapple; cut lengthwise into halves.
- Remove core; cut each half crosswise int o 8 slices.
- Mix wine, honey, soy, ginger, paprika and garlic. Arrange pineapple on rack around turkey.
- Brush turkey and pineapple with wine mixture. Continue roasting uncovered, brushing turkey and pineapple frequently with wine mixture, until thermometer registers 185 degrees, about 1 hour longer, or move drumstick up and down (when done the joint should give readily or break). Remove turkey and pineapple, keep warm.
- Pour d rippings into 2 cup measuring cup; skim off any excess fat. Add enough water to drippings to measure 2 cups.
- Heat dripping to boiling in saucepan.
- Mix cornstarch and cold water; stir into drippings.
- Boil and stir 1 minute. Serve with turkey.
- Yields about 16 servings.

SPINACH - STUFFED MEATLOAF
This is a great tasting meatloaf that adds that important iron to your diet. This recipe was originally from the cookbook 1,000 Low Fat recipes by Terry Golson The preparation time does not include the resting time in the fridge. I like to get it ready the day before and then just pop it in the oven an hour before dinner.

- Mix together the beef, egg whites, breadcrumbs salt& pepper, shallots garlic, worcestershire sauce& oregano.
- Use your hands to really combine the mixture.
- After you have squeezed as much moisture as you can from the spinach combine it with the cheese, nutmeg& season with salt& pepper.
- On a piece of plastic wrap or wax paper spread out the meat mixture in a rectangle apprx 12 x 8".
- Spread the spinach mixture on top leaving apprx 1/2" clear all around the meat edges.
- Using the paper (plastic) to help roll up the loaf starting from the 8" side.
- Press gently as you go to make sure you have a firmly rolled loaf.
- Press the outside edges together.
- Tightly wrap the meatloaf in plastic wrap (or wax paper) and refrigerate for at leat an hour (I make the loaf the day before and leave it rolled in the fridge over night to be baked the next day).
- Place the meatloaf on a roasting rack in a roasting pan and bake in a 350F oven for 1 hour.
- If you are using the ketchup spread it on top of the loaf before putting it in the oven.
