This recipe originally came from Taste of Home magazine. I've tweaked it just a bit and love the result! Delicious, rich and flavorful cookies... gobbled up everytime!

1/2 cup butter, softened (no substitutes)
1 cup sugar
1 large egg
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
3 tablespoons butter, softened (no substitutes)
3 1/2 cups confectioners' sugar
1/4 cup milk
1 teaspoon vanilla extract
1/2 cup finely chopped walnuts (optional)

Steps:

  • In a mixing bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  • Combine flour, baking soda and salt; add to the creamed mixture alternately with buttermilk and mix well.
  • Drop by rounded tablespoonfuls 2-inches apart onto greased baking sheets.
  • Bake at 375° for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool.
  • For frosting, combine butter, sugar, milk and vanilla in a mixing bowl; beat until smooth. Frost cookies; sprinkle with walnuts if desired.

These are a soft, delicious, sugar cookie but with a hint of buttermilk. A friend of mine gave this recipe to me years ago and my family loves them so much that I have a hard time keeping them in the cookie jar! You can sprinkle the tops of these with a little granulated sugar just before baking or ice after completely cooled.

1 cup shortening
2 cups white sugar
4 eggs
4 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup buttermilk
4 teaspoons vanilla extract

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening, and sugar. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking powder, baking soda and salt, stir into the creamed mixture alternately with the buttermilk. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 6 to 8 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1/2 teaspoon baking soda

1/2 cup buttermilk
FROSTING:
3 tablespoons butter, softened
3-1/2 cups confectioners' sugar
1/4 cup whole milk
1 teaspoon vanilla extract
1/2 cup finely chopped walnuts, optional

Steps:

  • Preheat oven to 375°. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. In a separate bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. , Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake until edges are lightly browned, 10-12 minutes. Remove to wire racks to cool. , For frosting, combine butter, confectioners' sugar, milk and vanilla; beat until smooth. 2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 pinch salt
1/2 cup butter, softened
1 cup sugar
1 egg
1 teaspoon vanilla extract
1/2 cup buttermilk
1/4 cup butter, softened
1 cup powdered sugar
2 tablespoons buttermilk
1/2 teaspoon vanilla extract
finely chopped walnuts, for topping

Steps:

  • For the cookies: Preheat oven to 375 degrees and grease baking sheets. In a medium mixing bowl stir together flour, baking soda, and salt, set aside.
  • In a large mixing bowl with an electric mixer on medium speed cream butter and sugar until fluffy. Beat in egg and vanilla. Gradually add flour mixture alternating with buttermilk and mix just until blended.
  • Drop dough by rounded tablespoonfuls 2 inches apart onto prepared baking sheets. Bake for 10 to 12 minutes. Transfer cookies to cooling racks to cool completley.
  • For the icing: In a small mixing bowl on medium speed cream butter until smooth. On low gradually beat in powdered sugar, alternating with milk, adding more if needed. Add vanilla and beat until smooth and creamy.
  • Spread icing on cooled cookies and sprinkle with walnuts.

For cookies
3 cups all-purpose flour
1 teaspoon grated lemon zest
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
2/3 cup well-shaken buttermilk
For glaze
1 1/2 cups confectioners sugar
3 tablespoons well-shaken buttermilk
1/2 teaspoon pure vanilla extract

Steps:

  • Make cookies:
  • Preheat oven to 350°F with rack in middle. Butter 2 large baking sheets.
  • Whisk together flour, zest, baking soda, and salt.
  • Beat together butter and sugar in a large bowl with an electric mixer until pale and fluffy. Add eggs 1 at a time, beating well after each addition, then beat in vanilla. Mix in flour mixture and buttermilk alternately in batches at low speed, beginning and ending with flour mixture, until smooth.
  • Drop level tablespoons of dough about 1 1/2 inches apart onto baking sheets. Bake, 1 sheet at a time, until cookies are puffed and edges are golden, 12 to 15 minutes per batch. Cool cookies on sheets 1 minute, then transfer cookies to racks.
  • Glaze cookies:
  • Whisk together all glaze ingredients and brush onto tops of warm cookies.
  • Let stand until cookies are completely cooled and glaze is set.

1 tbsp lemon juice or vinegar

Steps:

  • Mix the milk and lemon juice in a jug. Leave at room temperature for 5-10 mins until the milk has thickened slightly. It won't thicken as much as traditional buttermilk, but it's a great substitute when making scones, soda bread or pancakes. Don't worry if the mixture looks curdled or has small white lumps in it, it will be fine once cooked.
