Nothing more comforting than a big heart bowl of grandma's noodle soup, this version with turkey.

7 cups turkey stock (or broth (chicken broth may be used))
3 cups turkey (cooked leftovers; shredded or diced)
1 cup carrots (sliced)
1 cup celery (sliced)
1 cup white onion (diced)
2 bay leaves
1/2 tsp. thyme
1/8 tsp. pepper
8 oz. fettuccine noodles (broken up, cooked separately )
1/8 tsp. salt (to taste)

Steps:

  • Add the stock or broth, turkey, carrots, celery, onion, bay leaves, thyme, and pepper to the slow cooker.
  • Cover, and cook on low for 8 hours.
  • After the 8 hours are up, cook the noodles for about 1-2 minutes shy of package directions in salted boiling water on the stove top.
  • Once the noodles are cooked, drain.
  • Add the noodles to the slow cooker with the soup, and continue to cook on HIGH for about an 1½ hours more, this will soften the noodles to perfection, and make the soup thicker.
  • Serve and enjoy.

2 quarts chicken broth
1 turkey carcass, skin and meat removed
1 onion, quartered
2 carrots, halved lengthwise
3 celery stalks, halved lengthwise
2 bay leaves
1 cup chopped carrots
⅓ cup chopped celery
¼ cup chopped onion
2 cups penne pasta
3 cups chopped cooked turkey
1 (10.75 ounce) can condensed cream of mushroom soup

Steps:

  • Combine chicken broth, turkey carcass, onion quarters, carrot halves, celery halves, and bay leaves in a slow cooker.
  • Cook on High for 4 hours. Carefully strain broth, discard solids, and transfer broth to a bowl. Rinse slow cooker.
  • Pour broth back into slow cooker; add chopped carrots, chopped celery, and chopped onion.
  • Cook on Low for 3 hours. Add penne pasta to slow cooker; cook for 2 1/2 more hours.
  • Mix turkey meat and cream of mushroom soup into soup and cook for 30 more minutes.

1 cup homemade turkey broth
2 cups diced cooked turkey
1/4 vidalia onion, chopped
1 cup celery, diced
1 cup carrot, diced
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
2 -3 cups chicken broth
2 cups diced potatoes
1/2 cup 2% low-fat milk
1/2 cup cream
1/2 cup flour

Steps:

  • Ingredients in turkey stock, besides the leftover turkey parts, were 1/2 Vidalia onion chopped, stalk of celery chopped and 1/4 cup chopped fresh parsley.
  • Combine all soup ingredients, except milk, cream and flour, in crock pot.
  • Use just enough chicken broth to barely cover meat and veggies.
  • Cook on low for 8 hours, or until potatoes and carrots are easily pierced.
  • Combine milk, cream and flour and add to soup.
  • Let cook for approximately 30 minutes more, stirring occasionally to thicken.
  • You can also add any leftover gravy you have.

Steps:

  • Note: The noodles are cooked separately in this recipe and spooned directly into serving bowls to ensure that they don't soak up too much broth. This is especially important if you anticipate leftovers.
  • Pro Tip: Measure out the seasonings in a pinch bowl ahead of time. The rest of the recipe will fly by.
  • Melt butter in a large soup pot over medium heat. Add the onions, carrots, and celery. Soften for 4 minutes, then add the garlic and cook for 1 more minute.
  • Add the seasonings, soy sauce, hot sauce, chicken, and chicken broth.
  • Bring the soup to a gentle boil and cover partially. Allow the chicken to slowly cook through (a rapid boil will make it tough). About 15-20 minutes. Remove the chicken and use two forks to shred. Return it to the soup. Add the lemon juice and simmer while you prepare the noodles.

2 Chicken Bouilllon Cubes or 1/3 cup granules

1/4 cup Dehydrated Carrots
1/4 cup Dehydrated Celery
2-1/2 cups Wide Egg Noodles
2 cups Cooked Chicken or canned chicken (add after the soup is made)
7 cups Water
Salt and pepper to taste

Steps:

  • Grab a quart (32-ounce jar) mason jar and layer the dried vegetables in order. Start with the onions, carrots, celery, and then the noodles. Place the sweet basil, garlic powder, one bay leaf, and the bouillon in a small bag. Seal the bag, it will go on top of the dry soup mix ingredients. Place a lid on and seal the jar with a FoodSaver. When ready to cook, place the dry ingredients in a soup pot, add the water, the seasonings, and bring it to a boil. After the soup comes to a boil, simmer for 20-30 minutes or until the vegetables and pasta are cooked to perfection. Remove bay leaves. Add the 2 cups of cooked chicken, stir until heated through.   • After your holiday meal, keep the bones, they will make the base for your soup. You will be shocked and amazed at how much turkey is actually left on the bones. I throw the bones into my Crockpot and fill it with water, add a few bay leaves and whole peppercorns. I let these simmer all night long on high, I also leave a little of the stuffing in there as well, as it adds flavor from the spices, but if you have other spices you like to use for chicken noodle soup, you can use those as well.
  • In the morning I turn off the Crockpot and remove the carcass and put the pieces either on a plate, in a bowl or a strainer.Because this has been simmering all night, it will be fall apart tender at this point, so a strainer may be your best bet. I strain the broth into a large stock pot, add more water and throw in your chopped carrots and celery and let it begin to boil again.
  • While it’s boiling, you can then start the process of removing any of the turkey from the bones and adding to the broth with veggies. You can also throw in several large pieces of turkey into your soup if you wish. Trash the remaining bones. Let simmer until the veggies are tender. Throughout the process I will skim it off any of the fat off the top, as dark meat turkey is fatty.
