Steps:
- In a small saucepan combine the sugar and vinegar and heat, stirring occasionally, until sugar is dissolved. Set aside to cool completely before proceeding.
- Assemble remaining ingredients in a large, non-reactive mixing bowl and pour cooled sugar-vinegar mixture over all. Toss well to combine, cover with plastic wrap, and refrigerate overnight before serving.
- When ready to serve, season with salt, freshly ground black pepper, and Essence, to taste, and toss thoroughly to combine.

SWEET AND TANGY PORK KABOBS

Steps:
- Skewer ingredients, alternating the pork, pineapple, peppers, and onions onto metal BBQ skewers. Sprinkle skewers with salt and pepper and brush with half of the BBQ sauce. Preheat grill to high heat for 10 minutes. Reduce temperature to medium/high and place skewers on grill, sauce side down. Brush remaining sauce onto skewers. Grill skewers for 5 minutes. Turn, and grill for an additional 5 minutes or until pork reaches an internal temperature of 145°F. Remove from grill and allow skewers to rest for 3 minutes before serving. Serve grilled skewers on their own or over a bed of rice. Enjoy!

These are great for Summertime cookouts at tailgate partys or just for get-togethers. The sauce is fairly versatile and can be used for an array of different meats and applications (I originally used the sauce for chicken wings). For people such as myself who have acid reflux I have indicated some ingredients that can be left out in order to help curb the heartburn.

- Make the marinade by whisking the brown sugar, honey, lime juice, lemon juice, maraschino cherry juice, garlic powder, ginger, black pepper, cayenne pepper, pineapple juice, wine, hot pepper sauce, and soy sauce together in a large, non-metallic bowl. Toss the mushrooms, onion, bell pepper, tomatoes, and chicken in the marinade; cover and refrigerate at least 1 hour.

- In large saucepan, combine all ingredients and bring to a boil over medium heat.
- Reduce heat and simmer, uncovered, for about one hour. Stir occasionally.
- *For ribs: Boil ribs with some salt & pepper and a quartered onion until tender. Then drain and place on broiler pan. Baste with sauce, broil 5 minutes, turn ribs over and baste other side. Broil 5 minutes longer. Serve.
- *For shredded pork sandwiches: Put sauce and pork loin in crock pot on low for 5-6 hours or until pork begins to shred itself when poked with a fork.
- *For barbecue ham sandwiches: Put sauce and thin, deli sliced ham torn into 2 inch pieces into crock pot and heat on low for 2 hours or until hot.

- Pace meat on a glass baking dish.
- In a bowl mix together the HERDEZ® Salsa Verde, garlic, oregano, nutmeg, salt, and mango nectar. Pour mixture over the meat and allow it to marinate for 1-2 hours in the refrigerator covered.
- In the meantime, cut mango, and onion into 1" chunks.

- In a medium sauce pan bring sambal oelek, honey, rice vinegar, water, and soy sauce to a boil. Stir together cold water and corn starch and stir into boiling sauce. Reduce heat to medium low and stir until thickened. Transfer to a heat-safe bowl and place in the fridge to cool for 5-10 minutes. .
- In a large plastic bag or bowl, combine chicken, pineapple, and half of the marinade. (Reserve remaining marinade for later.) Toss to combine, seal the bag or cover the bowl tightly, and chill for 30 minutes.

- To prepare the marinade:.
- Mix all of the marinade ingredients together. Pour into a large plastic storage bag. Add the chicken and place into the fridge to marinate for at least 3 hours, overnight is ideal.
- To prepare the kabobs:.
- When you're ready to prepare the kabobs, remove the chicken from the marinade. Alternate the peppers, chicken, pineapple and onion chunks onto the skewers. Season everything lightly with salt and pepper. Oil the grill grates and heat the grill to medium-high heat. Cook the kabobs rotating as needed so they will cook evenly. About 4 minutes on all sides. You want the kabobs to char, but, not burn. A few minutes before removing from the grill, reduce the heat to medium and begin to baste the kabobs with the glaze until they are lightly charred It will take the kabobs around 16-18 minutes {maybe less} in total cooking time depending on the size of the chicken pieces.
- Warm the glaze slightly in the microwave just until the jelly has melted so it will be easier to brush onto the kabobs. Using a pastry brush baste the kabobs with the glaze at the end of grilling.
- Serve hot over rice pilaf.

- Start by combining all the ingredients for the marinade in a large bowl (olive oil, brown sugar, balsamic vinegar, crushed red pepper flakes and garlic salt) and whisk.
- Cut the beef into 1-inch size cubes and place into the marinade.
- Cut peppers and onion and put them in the marinade, put the cherry tomatoes and mushrooms in the marinade and stir to combine so that marinade is covering all the vegetables. Let marinate for 15 minutes, or overnight (with plastic wrap covering in the fridge if marinating overnight).
- Turn searing grill to SEAR setting (or use your gas or charcoal grill!)
- Take a skewer and arrange marinated beef and vegetables in alternating order on the skewer. (I like to start with beef and then do onion, pepper, tomato, beef, mushroom, pepper, onion, beef, etc.) Repeat until skewers are full and all meat and vegetables are used.
- Place skewers on the searing grill and close the lid. Let grill for 5 minutes, then with tongs flip the kabob, cook for another 5 minutes. Flip, and cook for another 5 minutes.
- Remove from grill and let sit rest/cool on a plate for 5 minutes before serving.
