1 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon salt
2 tablespoons olive oil
¾ cup hot water or as needed

Steps:

  • In a large bowl, stir together the whole wheat flour, all-purpose flour and salt. Use a wooden spoon to stir in the olive oil and enough water to make a soft dough that is elastic but not sticky. Knead the dough on a lightly floured surface until it is smooth. Divide into 10 parts, or less if you want bigger breads. Roll each piece into a ball. Let rest for a few minutes.
  • Heat a skillet over medium heat until hot, and grease lightly. On a lightly floured surface, use a floured rolling pin to roll out the balls of dough until very thin like a tortilla. When the pan starts smoking, put a chapati on it. Cook until the underside has brown spots, about 30 seconds, then flip and cook on the other side. Continue with remaining dough.

2 teaspoons baking powder
½ teaspoon salt
¾ cup cold water
1 tablespoon vegetable oil

Steps:

  • Combine flour, baking powder, and salt in a bowl. Stir in cold water and vegetable oil until dough comes together into a ball.
  • Set dough on a floured surface. Pinch off ten pieces the size of golf balls, roll into balls, and flatten each into a round. Make a small hole in the center of each round.
  • Fill a deep skillet with oil to 3/4 inch; heat over medium-high heat. Add dough rounds in batches and fry until golden brown, about 20 seconds per side. Drain on paper towels.

1/2 cup milk
2 tablespoons vegetable oil
1/4 cup yogurt
2 eggs
1 teaspoon salt
4 cups bread flour
4 1/2 teaspoons bread machine yeast

Steps:

  • Add ingredients to the bread pan according to the manufacturer's directions.
  • Set Cycle: dough; Loaf size: 2 lb.
  • After about 5 minutes, check the dough; add a tablespoon of water at a time if too dry, or a tablespoon of flour at a time if too wet.
  • Preheat oven to 450F, put 2 baking sheets in to heat for 10 minutes (this will help the naan to puff up and brown).
  • When dough cycle is done, turn dough onto a floured surface and punch down; Divide into 8 pieces.
  • Working one at a time, with the other pieces covered, roll dough out to a thickness of about 1/4 inch.
  • Bake for about 4 minutes, until puffed up.
  • Brown tops under the broiler, then wrap in a towel to keep warm while cooking the remaining naan.
  • These freeze very well.

If there's anything that will make you fall in love with Indian food, it's naan. This flatbread from the North of India is juxtaposition at its most beautiful: pillowy and elastic, with dark charred bubbles and a crispy bottom. It's usually made in a tandoor oven, a clay oven that can reach up to 900 degrees F! That's hard to replicate at home, but this stovetop version comes pretty darned close.

1 teaspoon active dry yeast
2 teaspoons sugar
2 cups all-purpose flour, plus more for rolling, see Cook's Note*
1 teaspoon fine sea salt
1/8 teaspoon baking powder
3 tablespoons plain yogurt
2 tablespoons extra-virgin olive oil
1 teaspoon kalonji (nigella seeds), optional, see Cook's Note**
1 teaspoon fennel seeds, optional, see Cook's Note**
Melted butter for slathering on the finished naans
Coarse sea salt for sprinkling

Steps:

  • In a large glass, dissolve the dry yeast and 1 teaspoon sugar with 3/4 cup warm water (about 100 degrees F). Let it sit on your counter until it's frothy, about 10 minutes.
  • Meanwhile, sift the flour, salt, remaining 1 teaspoon of sugar and baking powder into a large, deep bowl.
  • Once the yeast is frothy, add the yogurt and the olive oil into the glass, and stir to combine. Pour the yogurt mixture into the dry ingredients and add the kalonji and fennel seeds, if using, and gently mix the ingredients together with a fork. When the dough is about to come together, use your hands to mix. It will feel like there isn't enough flour at first, but keep going until it transforms into a soft, slightly sticky and pliable dough. As soon as it comes together, stop kneading. Cover the dough with plastic wrap or a damp tea towel and let it sit in a warm, draft-free place for 2 to 4 hours.
  • When you're ready to roll, make sure you have two bowls on your counter: one with extra flour in it, and one with water. The dough will be extremely soft and sticky-this is good! Separate the dough into 6 equal portions and lightly roll each one in the bowl of extra flour to keep them from sticking to each other.
  • Shape the naan. Using a rolling pin, roll each piece of dough into a teardrop shape, narrower at the top than at the bottom. It should be 8 to 9-inches long, 4-inches wide at its widest point and about 1/4-inch thick. Once you've formed the general shape, you can also pick it up by one end and wiggle it; the dough's own weight will stretch it out a little. Repeat this method with the rest of the dough. (If you're making the gluten-free version, you'll have better luck pressing the dough out with your fingertips, than rolling.)
  • Warm a large cast-iron skillet over high heat until it's nearly smoking. Make sure you have a lid large enough to fit the skillet and have a bowl of melted butter at the ready.
  • Dampen your hands in the bowl of water and pick up one of your naans, flip-flopping it from one hand to the other to lightly dampen it. Gently lay it in the skillet and set your timer for 1 minute. The dough should start to bubble.
  • After about 1 minute, flip the naan. It should be blistered and somewhat blackened, don't worry - that's typical of traditional naan! Cover the skillet with the lid and cook 30 seconds to 1 minute more.
  • Remove the naan from the skillet, brush with a bit of butter and sprinkle with a little coarse sea salt. Place the naan in a tea towel-lined dish. Repeat with the rest of the naans and serve.

Italian bread is surprisingly easy to make at home. This traditional recipe will yield two nice-sized loaves, chewy inside and crunchy outside.

1 tablespoon sugar
2 teaspoon salt
1 tablespoon active dry yeast
1 3/4 cups warm water (95 F to 110 F)
1 tablespoon butter (or margarine , softened)
5 cups bread flour (or high-gluten flour)
2 tablespoons olive oil
1 egg white
1 tablespoon cold water
Optional: cornmeal (for sprinkling on the baking sheet)

Steps:

  • Gather the ingredients.
  • In a large bowl, stir together the sugar, salt, yeast, and warm water.
  • Stir in the softened butter or margarine, whichever using.
  • Sift in one cup of flour at a time until you have a dough that can be easily kneaded by hand without sticking to your hands.
  • Turn the dough out onto a lightly floured surface and knead for 8 minutes, adding more flour if necessary, until the dough is soft and not sticky.
  • Lightly grease a medium-sized bowl with olive oil and flip dough over so that the top is also greased.
  • Cover with a clean kitchen towel or wrap paper and let rise for 30 minutes in a warm, draft-free place.
  • Grease a large baking sheet and sprinkle it with coarse cornmeal, if desired.
  • Remove the dough from the bowl, place onto a lightly floured table, and divide into two equal parts.
  • Roll each dough half into an approximately 15 x 9-inch rectangle.
  • Roll the dough tightly along the 15-inch side, pinch the seams, and taper the ends of each loaf with your hands at a 45-degree angle.
  • Place the loaves on the prepared baking sheet and cover. Let rise in a warm, draft-free place for 20 minutes.
  • Preheat the oven to 425 F. Make 3 deep diagonal slashes on each loaf.
  • Bake the bread for 20 minutes.
  • Lightly beat the egg white and cold water in a small bowl to create an egg wash . This step is key for a traditional Italian bread.
  • Remove the loaves from the oven and brush with the egg wash.
  • Return the loaves to the oven for another 5 minutes.
  • Serve bread warm or cold and enjoy.

2 teaspoons active dry yeast
2 cups bread flour
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon baking soda
1 tablespoon vegetable oil

1/2 cup milk
2 tablespoons unsalted butter
2 tablespoons black sesame seeds (you may find these in an Indian or Chinese shop, otherwise, use regular sesame seeds)

Steps:

  • Add all ingredients except the butter and black sesame seeds in the order recommended for your bread machine. Process using the dough cycle.
  • Preheat the oven to 450 degrees F. When the dough cycle ends, remove the dough from the machine and divide into 8 pieces. On a floured surface with a floured rolling pin, roll each piece into an 8-by-4-inch oval. Cover and let rise 20 minutes, or until doubled.
  • Melt the butter for the topping. Brush the top of each naan with butter and sprinkle witht sesame seeds. Bake 7 to 10 minutes, or until golden. Lightly brush the bottom of each naan with water, stack, and cover, or eat as soon as they are cool enough to handle.

1-1/2 cups water
4-1/2 teaspoons finely chopped onion
1 garlic clove, minced

Place in three greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. Bake at 375° for 35-45 minutes or until golden brown. Remove from pans to wire racks to cool.
