BEST TURKEY MEATLOAF

Best Turkey Meatloaf image

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

Time 1h15m

Yield 8

Number Of Ingredients 11

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
1 ½ teaspoons salt
2 cloves garlic, minced
¼ teaspoon ground black pepper
½ cup ketchup
¼ cup brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
  • Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
  • Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
  • Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids. Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Time 1h45m

Yield 4 to 6 servings

Number Of Ingredients 19

3 tablespoons extra-virgin olive oil
2 cloves garlic, smashed
1 large onion, sliced
One 10-ounce package frozen spinach, thawed and excess water squeezed out
One 10-ounce package frozen spinach, thawed and excess water squeezed out
1 cup 1-percent milk
1 tablespoon finely grated lemon zest
1 tablespoon dried mint
1 tablespoon kosher salt
2 teaspoons Worcestershire sauce
Pinch of grated nutmeg
1 large egg plus 1 egg white
1 cooked large baking potato, peeled (about 10 ounces)
Freshly ground black pepper
1 pound ground lean turkey
4 plum tomatoes
1 tablespoon extra-virgin olive oil
1 tablespoon chopped fresh flat-leaf parsley
1 teaspoon kosher salt

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F.
  • Heat the olive oil in a small skillet over medium-high heat; add the garlic and onions and cook, stirring occasionally, until soft and brown, about 8 minutes. Transfer to a food processor along with the spinach, milk, lemon zest, mint, salt, Worcestershire, nutmeg, eggs, potato and some pepper. Pulse until everything is finely chopped and evenly mixed together.
  • Use a rubber spatula to transfer the spinach mixture to a bowl. Add the turkey and stir everything together. Transfer the meatloaf mixture to a 9-by-5-inch loaf pan (1 1/2 quarts) and bake until the mixture is cooked through, 1 hour 15 minutes. Let rest for 5 minutes.
  • For the tomato salad: Meanwhile, chop the tomatoes and toss with the olive oil, parsley and salt in a medium bowl.
  • Slice the meatloaf and serve it with the tomato salad.

FIG CATSUP

Fig Catsup image

Provided by Damaris Phillips

Categories     condiment

Time 1h30m

Yield About 2 cups

Number Of Ingredients 11

1 pound fresh figs, quartered
8 ounces Roma tomatoes, quartered lengthwise
1 cup apple cider vinegar
1/3 cup sugar
1/4 cup sorghum syrup
1 teaspoon Thai-style chili paste
1 teaspoon coriander
1 teaspoon cumin
1/4 teaspoon cinnamon
1 fresh bay leaf
Salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Place the figs and tomatoes skin-side down on the prepared baking sheet. Roast until they start to brown and soften, about 40 minutes. Cool, and then remove the tomato skins.
  • In a food processor, combine the figs, tomatoes, vinegar, sugar, sorghum, chili paste, coriander, cumin and cinnamon and pulse until combined.
  • Put this mixture in a saucepan with the bay leaf and cook over medium-high heat until the mixture begins to boil. Reduce the heat and simmer, stirring often, until it thickens and reduces by a third, about 30 minutes--it will be thick enough so that when you stir it, you'll be able to see the bottom of the pot. Remove the bay leaf and discard. Season with salt.

TURKEY MEATLOAF (NO KETCHUP OR TOMATO)

Turkey Meatloaf (No Ketchup or Tomato) image

I LOVE this meatloaf!!! I finally found a turkey meatloaf that has great flavor and isn't dry! Love it in sandwiches too! I know it sounds strange to add stuffing and beef gravy to a turkey meatloaf, but it sure does work well for me. This came from somewhere on the web - can't remember where.

TURKEY MEATLOAF WITH KETCHUP GLAZE

Turkey Meatloaf with Ketchup Glaze image

The original recipe for this came from Joan Lunden's Healthy Cooking. I've changed a couple things to our tastes. This is a very moist, delicious meat loaf. Its my favorite. I leave the topping off as my family doesn't care for it.
