1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, chopped
1 ¼ pounds ground turkey
1 (28 ounce) can enchilada sauce
1 (14.5 ounce) can diced tomatoes with lime juice and cilantro
1 (16 ounce) package small-curd cottage cheese
1 egg
1 tablespoon ground cumin
5 (6 inch) corn tortillas, halved
2 cups shredded Mexican cheese blend
cooking spray
1 green onion, diced

Steps:

  • Heat oil in a large pot over medium heat. Add onion and garlic; cook and stir until onion is translucent, about 5 minutes. Stir in ground turkey; cook until no longer pink, about 5 minutes. Drain excess grease.
  • Stir enchilada sauce and diced tomatoes into the pot. Simmer until flavors combine, about 20 minutes. Remove from heat.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix cottage cheese, egg, and cumin together in a small bowl.
  • Spread 1/3 of the turkey sauce in the bottom of an 8-inch baking dish. Cover with 1/2 of the corn tortillas. Spread 1/2 of the cottage cheese mixture on top. Sprinkle 1/3 of the Mexican cheese on top. Repeat layers once more, ending with remaining turkey sauce and Mexican cheese.
  • Spray a large piece of aluminum foil with cooking spray; cover baking dish with aluminum foil.
  • Bake in the preheated oven until bubbly, about 30 minutes. Remove aluminum foil and continue baking until top is browned, about 15 minutes. Cool for 15 minutes before serving. Garnish with green onion.

1 large onion, chopped
1 large green pepper, chopped
1 small sweet red pepper, chopped
1 package (8 ounces) fat-free cream cheese
1 teaspoon chili powder
1 can (10 ounces) enchilada sauce
6 whole wheat flour tortillas (8 inches)
1 cup shredded reduced-fat Mexican cheese blend
Optional: Salsa and sour cream

Steps:

  • Preheat oven to 400°. In a large skillet, cook turkey, onion and peppers over medium-high heat until turkey is no longer pink, 5-7 minutes, breaking turkey into crumbles. Stir in cream cheese and chili powder., Pour enchilada sauce into a shallow bowl. Dip tortillas in sauce to coat. Place 2 tortillas in a 13x9-in. baking dish coated with cooking spray; spread with half the turkey mixture. Sprinkle with 1/3 cup cheese. Repeat layers. Top with remaining tortillas and cheese., Bake, uncovered, until heated through and cheese is melted, 20-25 minutes. Let stand 10 minutes before serving. If desired, serve with salsa and sour cream. Freeze option: Cover and freeze unbaked lasagna. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 400°. Bake lasagna as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

2 cups shredded Cheddar and Monterey cheese blend
1 onion, chopped
1 (2 ounce) can sliced black olives
24 (6 inch) corn tortillas
1 (19 ounce) can red enchilada sauce
4 cups cooked turkey, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a small bowl, combine the cheese, onion, and black olives.
  • In a small skillet, heat enough oil to lightly coat one tortilla, and cook until soft. Remove and dip in enchilada sauce to coat.
  • Add turkey and cheese mixture to center of tortilla, roll and place in the prepared dish. Repeat until bottom layer of pan is covered with enchiladas. Spread enough sauce over bottom layer to cover.

1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 cup picante sauce or salsa
1 can (16 ounces) refried beans
10 flour tortillas (6 inches)

Steps:

  • In a skillet, cook ground beef, onion and garlic until the meat is browned and onion is tender; drain. Stir in tomato soup, picante sauce or salsa and refried beans. I love enchiladas, but I don't like the grease and excess fat when using ground beef. Nor does the fam like corn tortillas. So I swapped the beef for turkey, the corn tortillas for whole wheat tortillas and the sour cream to low fat sour cream. There is so much flavor in these, you won't miss the fat!

1 lb ground turkey
1 (1 1/2 ounce) package dry enchilada mix
1 (8 ounce) can tomato sauce
1 1/2 cups water
2 cups shredded reduced-fat cheddar cheese
3 tablespoons low-fat sour cream
8 multi-grain tortillas (I get the soft taco size, makes for really full enchiladas)
salt and pepper
salsa

Steps:

  • Preheat your oven to 350.
  • Brown ground turkey, season with salt and pepper.
  • While turkey cooks, prepare the enchilada sauce by combining the spice package with 1 8 oz. can of tomato sauce and 1 1/2 cups water.
  • Bring sauce to a simmer and allow to thicken.
  • Spray a 3 qt casserole dish with non-stick spray and line the bottom with a little bit of the enchilada sauce.
  • To assemble the enchiladas, in each tortilla you will place 1 1/2 teaspoons of low fat sour cream, and about 1 tablespoons cheddar cheese with 1/4 cup of the turkey. Roll tightly and place seam side down into the casserole.
  • Cover enchiladas with remaining sauce and cheddar cheese.
  • Cover casserole with foil and bake for 30 minutes, the last 15 min take the foil off to allow the cheese to melt.
  • Remove from oven and let sit for about 10 minutes.
  • Serve with salsa, sour cream and rice.

3/4 lb turkey sausage
1 tablespoon olive oil
1 garlic clove (minced)
1 cup onion (chopped)
1/2 lb fresh mushrooms (thinly sliced)
1/2 teaspoon dried oregano flakes
1 pinch fennel seed
1/2 teaspoon dried red pepper flakes
1/4 cup fresh Italian parsley (coarsely chopped)
4 ounces tomato paste
2 (14 ounce) cans Italian-style diced tomatoes (drained)
1 lb lasagna noodle
1/2 lb fresh shredded parmesan cheese
1/2 lb shredded mozzarella cheese
1 lb small curd cottage cheese

Steps:

  • Put olive oil and sausage in large pot and brown the meat.
  • Add garlic, onion, dried seasonings, and mushrooms. Simmer until onions are softened, about 4 minutes.
  • Add tomato paste, diced tomatoes, and parsley. Simmer, uncovered, for about 1 1/2 hours.
  • While sauce is simmering, cook lasagna noodles according to package directions. Rinse with cold water.
  • Preheat oven to 350°F.
  • Spread thin layer of sauce on the bottom of a 13x9-inch non-stick baking dish.
  • Lay 3 noodles evenly over the sauce.
  • Spread about half of the cottage cheese onto the noodles.
  • Sprinkle about 1/3 of the mozzarella and parmesan evenly into the pan.
  • Spread another thin layer of sauce.
  • Repeat steps 8-11.
  • Lay 3 more noodles evenly over the sauce.
  • Spread out the rest of the remaining sauce.
  • Sprinkle the rest of the parmesan and mozzarella.
  • Bake, covered with aluminum foil, for about 45 minutes.
  • Uncover, and continue to bake for 15 more minutes.
  • Allow to cool for 10 minutes before cutting into squares.

1/2 cup chopped onion
1 can (4 ounces) chopped green chilies, drained, divided
3 tablespoons butter, divided
1/3 cup taco sauce
1 cup sour cream, divided
1/8 teaspoon chili powder
2-1/2 cups cooked cubed turkey
2 cups shredded cheddar cheese, divided
10 flour tortillas (8 inches)
2 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup chopped fresh tomatoes

Steps:

  • In a skillet, saute onion and 2 tablespoons green chilies in 1 tablespoon butter until onion is tender. Remove from the heat. Add the taco sauce, 1/4 cup sour cream and chili powder. Stir in turkey and 1/2 cup cheese. , Divide the mixture evenly among tortillas. Roll up and place seam side down in greased 13x9-in. baking dish., In a small saucepan, melt remaining butter. Stir in flour until blended; gradually stir in broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat and cool slightly. Stir in the remaining sour cream and remaining peppers. , Pour sauce over enchiladas. Bake, uncovered, at 325° for 40 minutes. Sprinkle remaining cheese, then tomatoes over top. 1 tbsp sunflower oil
500g turkey mince (2% fat)
1 medium onion, finely chopped
1 yellow pepper, deseeded and thinly sliced
400g can chopped tomatoes
400g can red kidney beans in chilli sauce
1 tbsp fresh lime or lemon juice
2 heaped tbsp roughly chopped coriander, plus extra to garnish
6 regular or 8 mini flour tortillas
50g reduced-fat mature cheddar, coarsely grated
large mixed salad, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat most of the oil in a large non-stick frying pan. Fry the turkey, onion and pepper for 5 mins, stirring regularly and breaking up the mince with a wooden spoon. Add the chopped tomatoes and kidney beans.
  • Bring to a gentle simmer and cook for 10 mins, stirring regularly. Remove from the heat and stir in the lime juice and coriander. Season well.
  • Lightly grease a shallow ovenproof dish with the remaining oil. Put 1 tortilla in the dish and top with a couple of generous spoonfuls of the turkey mixture. Roll up and push to one side of the dish. Repeat with the other tortillas, then spoon any remaining turkey mixture down the sides of the dish.
  • Sprinkle the tortillas with the cheese and bake for 15 mins. Scatter coriander over the enchiladas and serve with a salad.

This recipe takes the main ingredients of classic enchiladas and bakes them into a layered casserole reminiscent of lasagna. Mexican cheese blend, pickled jalapeños and cumin gives the creamy, cheesy béchamel sauce that ties it together a nice kick. You can tailor the recipe to what you have on hand (chicken instead of beef, or Cheddar in place of Mexican cheese blend), and make and bake it in advance if you like: Store it in the fridge for a few days or freeze it for a few months.

2 tablespoons unsalted butter
1 1/2 tablespoons minced red onion
2 tablespoons minced pickled jalapeño peppers, optional
2 tablespoons all-purpose flour
1 1/2 cups whole milk (or an unsweetened dairy-free alternative)
1 1/2 cups shredded Mexican cheese blend
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
4 poblano peppers
1 pound ground beef (preferably 80 percent lean)
Two 10-ounce cans red enchilada sauce
8 medium flour tortillas
1 cup shredded Mexican cheese blend
1 cup crushed nacho cheese flavored tortilla chips, such as Doritos (regular or spicy)
Shredded lettuce, for serving, optional
Sour cream, for serving, optional
Salsa, for serving, optional
Sliced pitted black olives, for serving, optional

Steps:

  • For the queso béchamel: Melt the butter in a medium saucepan over low heat. Stir in the onion and pickled jalapeños if using and cook until fragrant, 1 to 2 minutes. Whisk in the flour. Slowly whisk in the milk, whisking until no clumps remain. Continue to cook, whisking frequently, until thickened, about 5 minutes.
  • Switch to a wooden spoon and stir in the cheese and cumin, season with a pinch each of salt and pepper and stir until the cheese is completely melted, 2 to 3 minutes. Transfer the sauce to a bowl, cover with plastic wrap, placing the plastic directly onto the surface of the sauce, and refrigerate while you prepare the enchiladas.
  • For the enchiladas: Preheat the oven to 375 degrees F.
  • Roast the poblano peppers, holding them with tongs, over an open flame on the stovetop until heavily blistered and charred, about 2 minutes per side (see Cook's Note). Place the poblanos in a bowl and cover with plastic wrap. Let steam until cool enough to handle, 10 to 15 minutes.
  • When the peppers are cool enough to handle, cut in half and use the back of a knife or a spoon to scrape the seeds and the skin off the peppers. Roughly chop the peppers and set aside.
  • Heat a large skillet over medium heat. Add the beef and cook, breaking up the meat with a wooden spoon, until fully cooked, 5 to 7 minutes. Drain off any excess fat from the pan. Stir one 10-ounce can of enchilada sauce into the beef.
  • Pour 2 to 3 tablespoons of the remaining can of enchilada sauce over the bottom of an 8 1/2-by-11-inch baking pan. Layer tortillas over the bottom of the dish so it's covered, overlapping as necessary. Spoon in half the beef mixture to cover, top with about 3/4 cup béchamel sauce, and sprinkle with half the poblano and 1/3 cup of the shredded cheese. Repeat the layers again, ending with a layer of tortillas.
  • Cover the top layer with enchilada sauce and sprinkle with the remaining 1/3 cup cheese. Bake until browned and bubbling, about 45 minutes. Remove from the oven, sprinkle with the crushed tortilla chips and bake for an additional 5 minutes.
  • Allow the casserole to cool 15 minutes before serving. Slice into pieces and serve with the toppings of your choice for diners to garnish their servings. Enjoy!

1 (4 ounce) can mild diced green chilies
1 (20 ounce) can enchilada sauce
10 flour tortillas
1 cup shredded cheddar cheese

Steps:

  • Brown ground turkey and onion together. Drain any liquid.
  • Add green chilies and about 1/2 cup of the enchilada sauce.
  • Place a couple spoonfuls of meat mixture into each tortilla and roll.
  • Place into a 9x13 baking dish.
  • Cover rolled enchiladas with remaining enchilada sauce.
  • Top with cheese.
