Quesadillas with Chutney and Brie image

Make good use of Thanksgiving leftovers in this updated quesadilla.

4 flour tortillas, (10-inch or burrito-size)
4 tablespoons Dijon mustard
3/4 pound sliced leftover turkey
1/2 cup leftover Cranberry Chutney, plus more, for serving (optional)
8 slices thick Brie cheese (8 ounces)
Coarse salt and ground pepper
1 tablespoon olive oil

Steps:

  • Preheat oven to 425 degrees. Spread one side of each tortilla with 1 tablespoon mustard. Divide the turkey over one half of each mustard-coated side; dress with cranberry chutney (about 2 tablespoons per quesadilla). Layer each with 2 Brie slices, and sprinkle with salt and pepper. Fold and press to seal edges. Brush on all sides with olive oil; transfer to two rimmed baking sheets.
  • Bake, rotating the baking sheets halfway through, until cheese has melted and tortillas are golden brown, 10 to 15 minutes. Let cool for 5 minutes before slicing into wedges. Serve topped with more chutney, if desired.

8 flour tortillas
5 ounces brie cheese, sliced and divided
1/2 lb turkey, thinly sliced and divided
1/2 cup apricot preserves, divided
1 cup shredded monterey jack cheese, divided
2 cups fresh mixed herbs
1 tablespoon lemon juice
salt and pepper

Steps:

  • Lay out four tortillas.
  • Top each tortilla with brie, turkey, preserves, and cheese.
  • Top with remaining tortillas.
  • In a bowl, toss herbs with lemon juice, salt, and pepper; set aside.
  • In a large skillet over medium heat, spray with non-stick spray and cook quesadilla on both sides for 2-3 minutes, or until golden brown.
  • Serve hot topped with mixed herb salad.
  • Enjoy!

MANGO BRIE QUESADILLA

1 ripe mango
1/3 pound Brie, frozen
2 flour tortillas (a no lard style, preferably)
1 tablespoon butter
Avocado Salsa, recipe follows
1 medium avocado
2 tablespoons red onion, diced fine
Pinch garlic powder
1 tablespoon fresh lime juice
1 tablespoon fresh chopped cilantro
1/2 teaspoon jalepeno, chopped fine (optional)
Kosher salt and black pepper, to taste

Steps:

  • Remove Brie from freezer to let warm up. Carefully remove skin from mango and cut away from seed as much of meat as possible (remember mangos have a flat seed, so you should be able to get 2 large meaty pieces) Carefully slice mango into thin strips. By this time the Brie has begun to thaw, and should slice easily into very thin strips. (Brie, being such a soft cheese, could never otherwise be sliced, unless frozen first.) Lay a tortilla on a work surface and place 2/3 of the Brie slices on the tortilla. Add about 6 to 8 of the mango slices, and top with remaining Brie. (This will glue the quesadilla together when cooked.) Top with remaining tortilla and press together.
  • Heat nonstick 10-inch saute pan and add butter on medium heat. Saute quesadilla until golden brown on both sides. Remove from heat and allow to cool 5 minutes, cut into 8 slices and top with Avocado Salsa.
  • In a large bowl, mix together all salsa ingredients. Let sit at room temperature for at least 15 minutes to let the flavors mingle.

MELTED BRIE AND APRICOT PETITE CROISSANTS



Melted Brie and Apricot Petite Croissants image

6 small croissants
5 ounces wedge of brie, rind removed, cut into 1/4-inch slices
3 tablespoons Smucker's® Apricot Preserves
3 tablespoons glazed pecans*, chopped
3 teaspoons dark brown sugar
Crisco® Butter Flavor No-Stick Cooking Spray
Cinnamon sugar, if desired

Steps:

  • SLICE and lay the croissants open. Cover each croissant bottom with slices of brie to cover. Spread with 1/2 tablespoon preserves, sprinkle with 1/2 tablespoon chopped glazed pecans and 1/2 teaspoon brown sugar. Cover with top of croissant.
  • HEAT large skillet over medium heat. Spray sandwiches with no-stick cooking spray. Place sandwiches, sprayed side down, in heated skillet. Cover skillet and brown sandwiches 4 to 5 minutes or until golden brown. Spray tops of sandwiches before turning to brown second side.
  • REMOVE sandwiches from skillet. Allow to rest covered, about 3 minutes. Cut diagonally, sprinkle with cinnamon sugar, if desired, and serve warm.
  • *Glazed pecans can be found in the nut section of your grocer's snack aisle.

5 ounces brie cheese, sliced, divided
3/4 pound smoked turkey breast, thinly sliced, divided
1/2 cup apricot preserves (recommended: Smuckers), divided
1 cup shredded Monterey Jack cheese (recommended: Kraft), divided
2 cups fresh mixed herbs (parsley, basil, tarragon, chives, mint, oregano)
1 tablespoon fresh lemon juice
Salt
Freshly ground black pepper

Steps:

  • Set up grill for direct cooking over medium heat and oil grate when ready to cook.
  • For Quesadilla:
  • Lay out 4 tortillas; top each tortilla with brie, smoked turkey, apricot preserves, and Jack cheese. Top with remaining tortillas.
  • For Salad:
  • In a bowl, toss to combine herbs and lemon juice. Season with salt and pepper; set aside.
  • Place quesadillas on hot oiled grill for 3 to 4 minutes per side or until cheese has melted flipping with a spatula. Serve hot topped with mixed herb salad.
  • Indoor:
  • Prepare quesadillas as directed. In a skillet large enough to fit tortillas, heat 1 to 2 tablespoons of vegetable oil over medium heat. When oil is hot, carefully fry both sides of quesadillas for 2 to 3 minutes or until golden brown; turning with a large spatula. Garnish, as directed.

2 tablespoons Dijon mustard
2 tablespoons dried ancho chile powder
1/4 teaspoon salt

3 ripe avocados, peeled, pitted and finely chopped
1/2 small red onion, finely chopped
1 jalapeno pepper, seeded, finely chopped
3 tablespoons finely chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 (1 1/2 lb) package fresh boneless turkey breast tenderloins
nonstick cooking spray
12 (8 inch) flour tortillas
1 lb brie cheese, rind removed, cut into 16 pieces
1 small red onion, thinly sliced
1 tablespoon canola oil

Steps:

  • Marinade: Combine maple syrup, horseradish, mustard, ancho chile powder, 1/4 teaspoon salt and 1/8 teaspoon black pepper in small bowl; set aside.
  • Relish: Combine avocados, onions, jalapeno peppers, 3 tablespoons cilantro, the lime juice, olive oil, 1/4 teaspoon salt and 1/8 teaspoon black pepper in medium bowl; set aside.
  • Quesadillas: Place the Marinade in large resealable plastic bag. Add turkey; seal bag. Turn bag over to evenly coat turkey with marinade. Refrigerate 30 minutes to 1 hour to marinate, turning bag occasionally.
  • Spray cold grate of outdoor grill with grilling spray. Prepare grill for medium heat. Remove turkey from marinade; discard bag and marinade. Grill turkey 14 to 18 minutes, or until tenderloins are no longer pink in centers (170°F), turning occasionally. Place on cutting board; let stand 10 minutes. Cut into thin slices.
  • Place 8 of the tortillas on a clean work surface; top evenly with cheese, onion slices and turkey. Then stack 4 of the prepared tortillas (layers) on the other 4 prepared tortillas (layers).Cover with the remaining 4 tortillas. Brush tops with half of the canola oil. Place, oil-sides down, on grill grate. Cook 2 to 3 minutes, or until golden brown on undersides. Brush remaining tops with the remaining canola oil and carefully turn quesadillas over. Grill until cheese is melted and undersides are golden brown. Remove from grill. Cut each quesadilla into 4 wedges. Serve with the Avocado-Red Onion Relish.
