BASIC PARMESAN POMODORO



Basic Parmesan Pomodoro image

1/3 cup plus 2 tablespoons extra-virgin olive oil
5 cloves garlic, peeled and smashed
3 large, full stems basil
Three 14-ounce cans peeled cherry tomatoes
1 carrot, peeled and halved
8 ounces Parmigiano-Reggiano rind, cut into 3-inch pieces
Kosher salt
1 pound penne rigate pasta
1/2 cup grated Parmigiano-Reggiano, plus more for serving
3 to 4 tablespoons butter

Steps:

  • Heat a medium nonreactive saucepan over medium-high heat. Add 1/3 cup of the oil and the garlic, and reduce the heat to medium. Cook the garlic, stirring often and mashing gently with a wooden spoon, until golden brown and beginning to soften, 5 minutes. Add the basil, tomatoes and their juices, the carrots and cheese rinds. Stir with a wooden spoon to combine. Bring to a simmer and adjust the heat to maintain a simmer. Cook for 35 minutes stirring occasionally to prevent sticking. Add 1 teaspoon of the salt. Remove from the heat and cool slightly.
  • Remove the rinds, carrots and basil. At this point you can use an immersion blender to puree slightly or leave it as a chunky sauce.
  • Bring a large pot of salted water to a boil. Cook the penne 2 minutes less than the package directions. Meanwhile, rewarm the sauce in a large, straight-sided skillet set over medium heat. Using a spider, strain the pasta from the water and add it directly into the pan with sauce, reserving 1/2 cup of the pasta water. Before stirring, sprinkle the pasta with the grated cheese. Toss the pasta, cheese and sauce together. Add the butter, the remaining 2 tablespoons olive oil and the reserved pasta water and continue to cook until the sauce is creamy and the pasta is al dente. Serve topped with more cheese if desired.

1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
4 small boneless skinless chicken breasts (1 lb.)
1 small onion, chopped
1/4 cup KRAFT Tuscan House Italian Dressing
2 tomatoes, chopped
2 Tbsp. chopped fresh basil
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Steps:

  • Heat oven to 400°F.
  • Add Parmesan to coating mix in shaker bag; shake gently to combine. Coat chicken with Parmesan mixture, then bake as directed on package.
  • Meanwhile, cook onions in dressing in large skillet on medium-high heat 4 min. or until onions are crisp-tender. Stir in tomatoes; cook 2 to 3 min. or until heated through, stirring occasionally. Stir in basil. Keep warm.
  • Top chicken with sauce and cheese.

4 ripe tomatoes, sliced
4 tablespoons mayonnaise
4 tablespoons Parmesan cheese
1 tablespoon Dijon mustard
1 tablespoon brown mustard
1 teaspoon dried oregano
salt and pepper to taste
1 teaspoon chopped fresh parsley
¼ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange tomato slices in a single layer on a baking sheet. In a small bowl, mix together mayonnaise, parmesan, Dijon mustard, and brown mustard. Season with oregano, and salt and pepper to taste. Use a spoon to top each tomato slice with a small amount of the mayonnaise mixture. Sprinkle with mozzarella , and then top with parsley.
  • Bake in preheated oven for approximately 15 minutes, or until golden brown. Serve immediately.

I'm showing you how to make a tomato sauce using fresh tomatoes. You'll often hear me say in these videos that what we're making is way better than what you can buy at the store and with this, not only is it better, but you literally can't get this at a store! If you've never done this before, I think you'll be surprised at how simple and easy it is-in fact, the hardest thing will be finding vine-ripened tomatoes.

3 tablespoons olive oil
3 cloves garlic, thinly sliced
8 leaves fresh basil
5 pounds vine-ripened tomatoes, seeded and quartered
1 teaspoon kosher salt, or to taste
⅛ teaspoon red pepper flakes

Steps:

  • Heat olive oil in a saucepan over medium heat and add sliced garlic. Cook and stir for about 30 seconds before adding basil leaves. Sizzle garlic and basil in olive oil until the thinnest slices of garlic just start to turn golden. Quickly transfer in tomatoes. Add salt and pepper flakes and increase heat to medium-high.
  • Cook, stirring occasionally, until the mixture simmers and the tomatoes have completely collapsed and liquefied. Turn off the heat.
  • Using a strainer or colander, strain the sauce into another pot, pressing everything through with the back of a ladle or spatula, until nothing is left in the colander except the skins and seeds.
  • Place strained sauce back over medium heat and reduce to about 5 cups, or until desired thickness. Taste for seasoning and use immediately, or store in an airtight container until needed.

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, combine all remaining ingredients except cheese.

This is not spicy! For a main dish I have added the Imitation crabmeat to this before and served over linguini. You can add any kind of seafood or even chicken and serve over pasta. Or for a side dish you can serve without meat and mix the sauce over the pasta. Try adding a variety of veggies! Possibilites are plenty!

3 tablespoons olive oil
1/2 cup diced onion
3 teaspoons garlic, minced
1/2 teaspoon savory

1/4 cup white wine
1 can tomato sauce (1 cup)
2 cups half-and-half
1/2 cup parmesan cheese
1/2-1 cup frozen green pea (cooked and drained)

Steps:

  • Saute onions and garlic and seasonings (savory, rosemary, salt, pepper, bay leaf, Blackened Redfish Seas) in butter and olive oil.
  • Add wine and cook 1 minute.
  • Add tomato sauce and half and half; simmer for 5-7 mintes, stirring frequently.
  • Add peas and Parmesan, simmer until cheese is melted, 3-5 minutes.
  • Serve tossed with your favorite pasta.

After being unable to find a suitable creamy tomato pasta sauce recipe, I came up with my own, and by golly it's good. Easy to make too :)

1 (400 g) can chopped tomatoes with juice
1/2 cup cream
1/4 cup parmesan cheese
1 garlic clove
100 g shredded bacon
1 tablespoon olive oil
500 g fettuccine pasta

Steps:

  • 1. Cook fettucine as directed
  • 2. Crush and chop garlic clove finely.
  • 3. Heat oil in a frying pan on medium-high, add garlic and bacon and cook until they start to brown.
  • 4. Add tin of tomatoes to the frying pan and stir.
  • 5. Reduce heat to medium and simmer for 15 minutes.
  • 6. Reduce to low heat and add cream.
  • 7. Stir until cream is fully mixed inches.
  • 8. Stir parmesan cheeses into the sauce.
  • 9. Add fettucine and stir until heated through and covered with sauce.
  • 10. Serve, sprinkling a little parmesan cheese over the top of each serve if you wish.

2 tablespoons olive oil
1 brown onion (large)
2 garlic cloves, crushed
2 kg medium tomatoes, peeled and chopped
1 teaspoon salt
1/2 cup dry red wine
2 teaspoons brown sugar
2 tablespoons tomato paste
2 tablespoons fresh basil leaves, finely chopped
2 tablespoons fresh parsley, finely chopped
2 tablespoons fresh oregano, finely chopped
1/2 teaspoon cracked black peppercorns
2 bay leaves

Steps:

  • Heat the oil in a large saucepan, cook the onion and garlic together, stiriing until the onion is soft. Add the tomatoes, salt and wine and simmer uncovered for about 15 minutes or until the tomatoes are soft.
  • Add the remaining ingredients, simmer uncovered for 10 minutes or until thickened. Remove bay leaves from sauce.
  • When cooled refrigerate for up to 3 days.
  • Use sauce as desired.
