2 tablespoons mayonnaise
1 tablespoon ranch dressing
8 slices soft Italian bread (about 1/2 inch thick)
4 oz shaved cooked turkey breast (from deli)
4 slices cooked bacon, halved
4 slices tomato, halved
2 slices (1 oz each) Cheddar cheese, halved
2 tablespoons butter or margarine, softened

Steps:

  • In small bowl, mix mayonnaise and dressing. Spread on one side of each slice of bread. Top each of 4 bread slices with turkey, bacon, tomato, cheese and remaining bread slices, mayonnaise mixture side down.
  • Spread butter on one side of each sandwich. In 12-inch skillet, place sandwiches, butter side down. Spread butter over top of each sandwich. Cover; cook over medium-low heat 6 to 8 minutes or until bottoms are golden brown.
  • Turn sandwiches; cover and cook 5 to 6 minutes longer or until bottoms are golden brown and cheese is melted.

4 tablespoons barbecue sauce
8 slices sourdough bread
8 slices monterey jack cheese

Steps:

  • In a large skillet, saute onions in 1 tablespoon of butter until tender; remove and set aside.
  • Spread barbecue sauce on four slices of bread.
  • Layer each with one slice of cheese, 2 slices of Canadian bacon and turkey, pickles, onions, and top of with another slice of cheese.
  • Cover with remaining slices of bread.
  • In the same skillet over medium-low heat, melt remaining butter as needed.
  • Cook sandwiches on both sides until golden brown and cheese is melted.

This is one delicious sandwich that I concocted when managing the restaurant. It was one of our biggest sellers. I don't make it often enough to suit my family. It's quite filling and could be shared. Enjoy!

1 1/2 Tbsp butter, softened
2 large slices of good sour dough bread
3- 4 slice each - good deli turkey and deli off the bone ham or virginia baked
2 slice each swiss cheese, american cheese & provolone cheese
1 small ripe tomato sliced
2 slices, sweet onion
3 slice crisp bacon - optional ( i was in a hurry so didn't take time to cook the bacon )
kosher salt and cracked black pepper
mayonnaise , mustard or your favorite sandwich spread

Steps:

  • 1. First, let me say that I used my cast iron griddle to make this sandwich and weight it down with a cast iron skillet and my cast iron dutch oven. The heavier the better. Just be careful that you keep sandwich in tact when going to flip it as the butter will stick from top bread to whatever you're weighing it down with. This can also be made on a grill or Panini press.
  • 2. First, Get your skillet or griddle warming. I coat with oil as well. Butter the 2 slices of bread on one side each.
  • 3. On one un buttered side. Start by laying 2 slices of American cheese side by side. Top with folded slices of turkey - evenly across the bread.
  • 4. Next, spread out the tomato slices, salt & pepper.
  • 5. Add the onion.
  • 6. Next the provolone cheese, then folded ham slices.
  • 7. Top with Swiss cheese ( I used shredded ) and other slice of bread, buttered side up. ( When I use bacon I place it on top of the Swiss cheese.)
  • 8. Carefully place into hot griddle. Weight down with whatever you have heavy, being careful to balance the weight equally, so not to fall off. Continue cooking until golden on the bottom.
  • 9. With a wide spatula, carefully flip the sandwich to the other side and weight it as well. Continue for roughly another 5 minutes. When is golden and cheese is melted, remove from pan to a cutting board. Slice in half and serve with your favorite spread.
  • 10. It's so oooey gooey good!

2 slices of bread (white, whole wheat, whatever you have)
1 slice swiss cheese
1/2 tbs mayonnaise
Few slices of tomato

Steps:

  • Preheat your Foreman Grill for 5-10 minutes on high with lid closed. Assemble your sandwich but don't put condiments or mayonnaise on. Spread margarine on outside of both slices of bread and place sandwich on your George Foreman Grill. Press down lid with moderate pressure (not too hard) to press all ingredients nicely together. Grill for approximately 4 minutes or until bread is nicely toasted and cheese is melted. Remove from grill and spread inside of sandwich with mayonnaise.
  • Delicious additional ingredients include fresh sliced tomatoes and cooked bacon slices, both which can be added prior to grilling the turkey melt sandwich.

3/4 lb deli style smoked turkey
6 slice swiss cheese
12 slice cranberry wild rice bread (country hearth makes one that i like)
6 slice bacon, cooked crisp
1 large tomato, thinly sliced
4-6 Tbsp softened butter
CRANBERRY AIOLI
1/2 c canned cranberry sauce
1/2 c mayonnaise
1 clove garlic, minced
2 tsp prepared spicy brown mustard (i use guldens)

Steps:

  • 1. Mix Aioli ingredients and refrigerate. Can be made several hours or even several days beforehand.
  • 2. Butter one side of each piece of bread and place butter side down on pan. On six of the slices place a slice of swiss cheese.
  • 3. Divide the turkey and place on top of the cheese and then top this with once piece of bacon (works good to divide each slice into 3 pieces).
  • 4. Turn heat to medium. On the 6 pieces of bread with nothing yet on them spread approx 1 Tablespoon of the aioli.
  • 5. When the bread is toasty and the cheese is melting place the tomatoes on top of the bacon and close each sandwich by placing the aioli side onto the bacon.
  • 6. Serve with additional aioli on the side.

1 large onion, thinly sliced
1/2 teaspoon kosher salt
Freshly ground black pepper
4 (4-ounce) turkey patties
8 slices multi-grain bread
8 slices Monterey Jack or American cheese
2 to 3 tablespoons unsalted butter, softened
Serving suggestion: Cranberry Sauce

Steps:

  • Heat 1 tablespoon of the oil in a large cast iron skillet over medium heat. Add the onion, season with some salt and pepper, and cook until golden, about 7 minutes. Put in a bowl and set aside. Wipe out the skillet and add another tablespoon of oil. Season the turkey patties with salt and pepper, and cook in the remaining oil until well browned, about 3 minutes per side. Remove from the skillet. Wipe out the pan.
  • Divide the onions among 4 bread slices, and top with a slice of cheese, a patty, another slice of cheese, and a slice of bread. Spread the top and bottom of the sandwiches with some butter. Heat the cast iron skillet over medium heat. Cook the sandwiches, in batches if needed, turning once, until lightly browned and the cheese melts, about 2 minutes per side. Steps:

  • Toast your bread, if you wish, and allow it to cool for a few minutes. This helps to avoid wilted lettuce.
  • Spread the 3 pieces of cooled toast with mayo.
  • On one slice, add your lettuce and tomato. Go ahead and add a little salt and pepper to those tomatoes.
  • Put a 2nd piece of bread, mayo side down, on the sandwich. Then add a little more mayo to the top of that piece.
  • Next, stack your meat and cheese, and top with the last slice of bread, mayo side down.
  • Use a well-sharpened knife to cut the sandwich into triangles, using toothpicks to hold everything together.

Roast Turkey, Avocado and Bacon Sandwich image

2 sprigs thyme
2 sprigs tarragon
1/2 cup unsalted butter, room temperature
1 (4-pound) turkey breast
Sea salt and freshly ground black pepper
6 slices country bread
1/2 pound fontina cheese, sliced thinly
1 large ripe avocado
2 teaspoons fresh lemon juice
1 teaspoon extra-virgin olive oil
6 slices maple bacon, cooked until crispy
Pepper lettuce (watercress)
Butter, for sauteeing

Steps:

  • Preheat the oven to 400 degrees F.
  • To prepare the Roast Turkey: toss the herbs and butter into the bowl of a food processor and pulse until green and smooth. Rub the turkey breast with half of the herbed butter and with salt and pepper. Place the turkey on a rack in a roasting pan and put in the oven. Let the turkey cook for 1 hour, basting every 20 minutes with the butter and pan juices. The turkey is done when it reaches an internal temperature of 165 degrees F. Let rest for 15 minutes on the cutting board.
  • To assemble the sandwich: spread a thin layer of the remaining butter on 1 piece of the bread. Place 1 slice of the cheese and several slices of the turkey breast on unbuttered side of the bread. Peel and slice the avocado, toss with the lemon juice, olive oil, salt and pepper. Add avocado slices, crispy bacon slices, lettuce and another slice of fontina cheese to the top of that. Sprinkle again with salt and pepper. Slather the remaining piece of bread with the butter and place on unbuttered side out, on top of the bacon.
  • Heat a cast-iron or other heavy skillet over medium-low heat. Add 1 tablespoon of butter and let it melt, swirling the pan around to coat. Put the sandwich in the pan and weigh it down with a heavy pot or can (or wrap an ordinary brick in aluminum foil and set it on top to compress the sandwich.) Toast for 1 minute, turn the sandwich over before the bread begins to burn. Repeat with remaining sandwiches. Cut the sandwiches in half and serve.
