This recipe is inspired by amatriciana sauce, a hearty Italian classic that is often made to go with the extra-chewy, hollow pasta called bucatini.

Coarse salt and ground pepper
12 ounces bucatini or spaghetti
1 slice pancetta (6 ounces), diced
1 medium onion, chopped
1 garlic clove, minced
1 can (28 ounces) whole tomatoes in juice
1/2 cup grated Pecorino Romano (2 ounces)

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente. Reserve 1 cup pasta water. Drain pasta; return to pot.
  • While pasta is cooking, heat a large skillet over medium-low. Add pancetta, and cook until browned and crisp, about 15 minutes, stirring occasionally. Using a slotted spoon, transfer pancetta to a paper-towel-lined plate to drain, and set aside (leave fat in skillet).
  • Increase heat to medium. Add onion and garlic to skillet; season with salt and pepper. Cook until onion begins to soften, 5 to 6 minutes, stirring occasionally. Add tomatoes (with juice); cook, breaking them up with a spoon, until sauce has slightly thickened, 5 to 8 minutes. Add sauce to pasta in pot; toss, adjusting consistency with pasta water if necessary. Serve pasta topped with pancetta and Pecorino.

1 1/2 cups 1/4-inch diced pancetta
1 cup 1/4-inch diced yellow onion
Kosher salt and freshly cracked black pepper
5 large eggs
1 cup grated Parmigiano-Reggiano
1 pound bucatini pasta
1 tablespoon chopped Italian parsley

Steps:

  • Cook the pancetta in a large nonstick skillet over medium heat until crisp and the fat has rendered, 5 to 7 minutes. Remove the pancetta to a paper-towel-lined plate and set aside. Add the onions to the pan with the drippings and cook until translucent, 3 to 5 minutes. Season with salt and pepper, and then reduce the heat to keep warm.
  • Separate the eggs and place the yolks in a large bowl (reserve the whites to use in another recipe). Whisk together the egg yolks and half the Parmigiano-Reggiano and season with salt and pepper. Add the egg mixture to a large stainless bowl with the onions and mix well.
  • Cook the pasta in salted, boiling water until al dente (according to pasta directions). When the pasta is just about finished, strain the pasta and transfer directly from the pot of water to the mixing bowl with the onions. Using tongs, mix well so the egg mixture coats the pasta evenly and cooks from the residual heat. Add about 3/4 cup of pasta water to fortify the sauce. Fold in the remaining Parmigiano-Reggiano, crisped pancetta (reserve a little for garnish) and season with salt and pepper.
  • Serve immediately, garnished with the reserved pancetta and parsley.

3 tablespoons olive oil
2 medium chopped onions, chopped finely
8 ounces pancetta, chopped (side bacon will also work fine)
28 ounces canned tomatoes, drained,chopped
5 ounces bocconcini or 5 ounces mozzarella cheese, grated
1 green onion, finely chopped

Steps:

  • ADD pasta to large pot of boiling water; Boil uncovered until tender; Drain.
  • HEAT oil in pan, add onions and pancetta; Cook, stirring until onions are soft.
  • ADD tomatoes, stir over heat for 2 minutes then add cheese and pasta; Stir until heated through; Top with chopped green onion.

1 (35 ounce) can Italian plum tomatoes (San Marzano)
salt
5 tablespoons extra virgin olive oil
1 medium onion, sliced thin (abou 2 cups)
6 ounces pancetta, sliced 1/4 inch thick, cut into 1 1/2 inch julienne strips
2 whole dried red peperoncino hot red peppers (or 1/2 t. crushed hot red pepper)
1 lb bucatini pasta or 1 lb perciatelli
1 cup grated pecorino romano cheese, plus more for passing

Steps:

  • Pass the tomatoes and their liquid through a food mill fitted with the fine disc; set aside.
  • Bring 6 quarts of salted water to a boil in an 8-quart pot.
  • In a large skillet, heat 2 tablespoons oil over med-high heat; add in onion; cook/stir until wilted, about 4 minutes.
  • Stir in the pancetta; cook 2 minutes.
  • Add in the hot red peppers and the tomatoes; bring to a boil.
  • Adjust the heat to a simmer and season lightly with salt; cook/stir occasionally until the sauce is thickened, about 20 minutes.
  • Meanwhile, stir the bucatini into the boiling water and cook, stirring occasionally, until done, about 12 minutes.
  • Check the seasoning of the sauce, adding salt if necessary (remember the Pecorino is mildly salty).
  • Reserve about 1 cup of the pasta cooking water; drain pasta, return it to the pot, and pour in half the sauce.
  • Bring the sauce and pasta to a boil and drizzle in the remaining 3 tablespoons oil.
  • Add some of the pasta cooking water, if necessary, to make enough sauce to coat the pasta lightly.
  • Check seasoning again and add salt if necessary.
  • Remove pan from heat; stir in 1 cup grated cheese, and transfer to a large heated serving platter or bowl.
  • Spoon the remaining sauce over the top and pass additional grated cheese separately, if desired.

4 ounces guanciale, speck, pancetta or bacon, 1/4-inch dice
3 to 4 cloves garlic, chopped or sliced
2 medium or 1 large red bell pepper, seeded and chopped
2 cubanelle peppers, seeded and chopped
1 red onion, chopped
1 Fresno pepper, seeded and chopped
About 3 tablespoons hot pickled Italian cherry peppers, chopped, plus 2 tablespoons of their pickle juice
One 28- to 32-ounce can D.O.P. San Marzano tomatoes
2 cups passata or tomato puree or tomato sauce
A few fresh leaves basil, torn
A handful of fresh flat-leaf parsley leaves, chopped
Salt and freshly ground black pepper

1 pound bucatini pasta (hollow spaghetti)
2 tablespoons butter
Pecorino cheese, to pass at table

Steps:

  • Heat a deep skillet or Dutch oven with the EVOO, 2 turns of the pan, over medium-high heat. Add the guanciale and brown until lightly crisp. Add the garlic, bell pepper, cubanelles, onions and fresno peppers, and cook until tender, 7 to 8 minutes. Add the pickled peppers and a big splash of their juice, about 2 tablespoons, and deglaze the pan - hold your head back or you'll really clean out your sinuses. Add the tomatoes and crush up a bit, then stir in the passata and basil. Simmer to thicken 30 minutes or so. Add the parsley, season with salt and pepper. Cool and store for a make-ahead meal. Reheat over medium flame.
  • To serve: While the sauce heats, bring a large pot of water to a boil. Salt the water and cook the pasta to al dente. Reserve a ladle of the starchy cooking water and drain. Toss the pasta with the butter and half the sauce. Add a little starchy water if too thick. Serve the pasta in shallow bowls, topped with the remaining sauce and pecorino cheese.

Made this for dinner twice so far, and the second time it tasted even better. Cheesey and smokey works so well together in a rich tomato sauce:D Regina Schrambling says "starch is comfort" and "cheese is seduction" and when they're combined the result is pure pleasure. BF and I have to agree wholeheartedly. I can usually only find crushed tomatoes in puree, and that worked out very well so I added that as an option. I am vegetarian so I substituted vegetarian bacon for pancetta. Another recipe of the week from The Week magazine, originally from LA Times.

2 ounces pancetta (optional, or bacon or veggie bacon)
1 tablespoon olive oil, best quality
1 small red onion, peeled, quartered and thinly sliced
1/2 teaspoon hot red pepper flakes (to taste)
1 (14 ounce) can Italian tomatoes (whole in puree) or 1 (14 ounce) can Italian tomatoes (crushed in puree)
kosher salt or sea salt
1/2 lb pasta (buccatini or perciatelli)
2 teaspoons unsalted butter
1/2 cup ricotta salata, finely crumbled

Steps:

  • If using, cut pancetta into i/4 inch dice. Heat oil in a deep skillet over medium-low heat. Add pancetta and cook, stirring, until it crisps and renders its fat, about 10 minutes. Remove pancetta and set aside. Break into small pieces when cooled. Remove all but about 1 tablespoon of fat from the pan and discard.
  • Add oil and onion and cook, stirring often, until tender and translucent, about 10 minutes.
  • Add red pepper flakes then add tomatoes and crush against the pan if using whole. Cook, stir and crush tomatoes into small bits, for 5 minutes.
  • Simmer 40 minutes, stirring occasionally.
  • While sauce cooks, bring large pot of water to a rolling boil with salt (about 1 Tbsp for every 2 quarts - it should be salty). Fifteen minutes before sauce is done, add pasta to water. Stir and then cook until al dente, 11-12 minutes or according to package directions.
  • Reserving 1/2 cup of cooking water, drain pasta in colander. Add butter and toss quickly, then transfer to pan with sauce. Stir until strands are thinly but evenly coated. Add a little cooking liquid if pasta seems dry. Add half Ricotta Salata and stir to combine well.
  • Transfer pasta to large bowl or platter and sprinkle with pancetta and remaining cheese. Serve hot.
  • For Vegetarian omit the pancetta or use vegetarian bacon.
