Steps:
- Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for about 30 seconds, until fragrant.

- Add the pasta and spinach and cook for about 1 minute, until spinach starts to wilt.

EASY TUNA PASTA BAKE
Steps:
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and toss pasta with 1 tablespoon olive oil.
- Preheat the oven to 350 degrees F (175 degrees C). Grease an ovenproof baking dish.

- Preheat the oven to 350°F
- Cook the pasta in salted water until al dente, then drain and refresh in cold water to stop it from over cooking.
- Melt the butter in a saucepan and sauté the onion until soft.
- Stir the corn flour into the water until dissolved, then add to the onion pan along with the tomato soup.
- Bring to a boil, add the herbs and then cook gently, stirring for five minutes.
- Mix in the flaked tuna and heat through. Season to taste.
- Mix into cooked pasta.
- For the cheese and spinach sauce, melt the butter in a saucepan and sauté the onion until transparent.
- Add the flour and continue stirring the mixture all the time.
- Gradually pour in the milk and keep stirring until the sauce is thickened and smooth.
- Add the chopped spinach and stir until wilted.
- Remove from the heat and stir in the 2 c grated Cheddar cheese.
- Grease a baking dish and add the tuna and tomato mixed with the pasta, and then pour the spinach sauce over top.
- Sprinkle with some grated Cheddar cheese and bake in the oven for 25 minutes until golden.
- This can also be frozen. Assemble casserole but do not sprinkle with cheese or bake. Thaw in refrigerator before baking. Sprinkle with cheese and bake according to normal instructions.

PASTA WITH TUNA, SPINACH, AND HOT PEPPER
The original recipe came from the San Francisco Chronicle. The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach. If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use. However, I have used tuna in water when it was all I had in the pantry. Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version. Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!! I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it. This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.). I look forward to reading your comments with your add ins :)

- Bring a large pot of well-salted water to a boil over high heat. Add the pasta and boil until al dente.
- While pasta cooks, heat olive oil in a large skillet on medium-low heat. Add the garlic and hot pepper flakes and cook until garlic is fragrant and sizzling. NOTE: start with the 1/4 teaspoon of red pepper flakes, then work up from there with your taste.
- Add tuna and shred it into fine flakes with a spoon in your sauce. Season with salt and lemon juice, if desired. Lower the heat and keep warm while waiting for the pasta to cook.
- Just before the pasta is ready, set aside 1 cup of the pasta water. Drain pasta and return it to the warm pot set over moderate heat.
- Depending on the size of your pot and skillet: add the spinach and the tuna mixture to the pasta in the pasta pot, or add the drained pasta to the skillet with the tuna mixture and add the spinach.
- Toss all of this together with tongs, moistening with some of the reserved pasta water. The spinach will wilt in the heat of the pasta. Divide among warm bowls and serve immediately.
- Top with some parmesan cheese (if desired) and enjoy!

- Put a large saucepan of water on the stove, and bring to the boil.
- Prepare your ingredients:Flake your tuna into bite-size pieces if necessary.Zest and juice the lemon. Finely chop the dill and garlic.
- Add a teaspoon of salt to the saucepan of boiling water and add your pasta, stirring regularly to ensure it does not stick together.Cook the pasta - check the cooking time on the packet, but test the pasta prior to that to make sure it is cooked to al dente.Whilst the pasta is cooking, prepare your sauce.
- In a frying pan on a medium heat, melt the butter and add your finely chopped garlic. Stir for 1-2 minutes, being careful to not let the garlic burn;
- Add the cream, lemon juice and zest, dill and season with salt and pepper. Cook for 2-3 minutes.
- Once the pasta is cooked, reserve a little of the pasta water for later, and drain your pasta well.
- Add your cooked pasta to the sauce, and toss through to combine.If you need a little extra liquid, add some of the reserved pasta water.
- Add the tuna into the dish. Stir to combine and serve.

- Cook pasta in large pot according to package directions. Meanwhile, drain tuna, set aside. Mince garlic, set aside.
- When pasta is done, drain and set aside. Reduce heat to medium. In same pot, add olive oil. Add garlic. Saute garlic over medium-low heat, stirring frequently until garlic takes on color. When garlic is colored to a medium golden brown, add spinach. Lid pot and reduce heat, stirring occasionally. When spinach is shiny and wilted, add tuna. Stir. Lid and let simmer for one minute.
