WHITE-HOT HOT CHOCOLATE
Hot chocolate could warm you up on a cold day, but what about those unmercifully cold sub-zero days? This recipe uses a combination of spices and creamy chocolate to create a smooth drink with a lingering warmth. Garnish with a candy cane or cinnamon stick if desired.

- Place the white chocolate in a medium metal bowl over a pan of barely simmering water, or in the top half of a double boiler. Allow the chocolate to melt, stirring occasionally until smooth. Stir in cayenne pepper and cinnamon. Whisk in the egg until smooth.
- Gradually whisk in one cup of the milk until completely incorporated, about 2 minutes. Gradually whisk in remaining milk, and heat until hot, but not simmering. You do not want a skin to form on top of the milk. It will be ready to drink when either the taste of the cayenne is masked by the temperature of the milk (the spiciness of the pepper will remain), or when the hot chocolate is at your desired temperature. Ladle the hot chocolate into mugs and garnish with a sprinkle of cinnamon.

- Using a vegetable peeler, shave milk chocolate into curls; set aside.
- Place white chocolate in a medium heat-proof bowl; set aside. Place milk and cream in a medium saucepan set over medium heat until bubbles begin to form around edges of pan, about 4 minutes. Immediately pour mixture over white chocolate. When chocolate begins to melt, stir to combine. Whisk in vanilla. Continue whisking until a light foam forms.
- Serve immediately garnished with peppermint sticks, whipped cream, and chocolate curls.

- Add enough milk to fill your desired cup.
- Warm milk in the microwave for around 2 minutes, be careful as the cup and the milk will be quite hot when you come to take it out.
- Boil some water in a small saucepan.
- Add 50g of white chocolate into a heatproof bowl and warm until the chocolate has nearly melted, keep stirring to prevent it form burning.
- Remove the chocolate from the pan, keep it in the bowl as the remaining heat will fully melt the chocolate, keep stirring until fully melted.
- Pour the chocolate into the cup of hot milk and stir until they have blended together and the milk has turned to a white chocolate colour.
- Sprinkle some cocoa powder on top to finish and enjoy.
