This German Chocolate Cake is made with a rich, moist chocolate cake, chocolate ganache drizzle, and coconut pecan frosting.

2 cups granulated sugar
½ cup canola oil
1 cup milk
2 eggs
1 teaspoon vanilla
1 ¾ cup all purpose flour (fluffed and leveled)
¾ cup cocoa
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon baking powder
1 cup hot coffee ( or water)
1 cup cream ( or evaporated milk)
1 cup granulated sugar
3 egg yolks
½ cup unsalted butter
1 ½ cups sweetened shredded coconut
1 cup pecans (finely chopped)
1 teaspoon vanilla extract
100 grams dark chocolate ((about ¾ cup chopped))
¼ cup heavy cream

Steps:

  • Grease and flour three 8" round cake pans, tapping firmly to remove any excess flour once coated. Turn the oven to 350°F.
  • In a large bowl, whisk together sugar, and oil until combined.
  • Add milk, eggs, and vanilla and whisk until smooth.
  • Add flour, cocoa powder, baking soda, salt, and baking powder and whisk until combined.
  • Slowly stir in hot coffee until batter is smooth.
  • Divide evenly between prepared pans and bake for 20-22 minutes, until a toothpick in the center comes out dry or with moist crumbs. Set aside to cool completely.
  • In a medium saucepan, whisk together cream, sugar, and egg yolks.
  • Add butter, and cook over medium heat, whisking often, until thickened, about 5-10 minutes.
  • Remove from heat and stir in coconut, pecans, and vanilla.
  • Let cool completely to room temperature (to a spreadable consistency) before frosting cooled cakes. If you need to cool quickly, pour into a clean bowl and place in the refrigerator for 20-30 minutes, stirring often.
  • In a small pot, melt chocolate and cream together over low heat, stirring often. Set aside to cool slightly.
  • Place one cake layer on a serving plate. Top with ⅓ of the coconut pecan frosting.
  • Repeat with remaining two layers, spreading chocolate ganache on the top cake layer and letting set completely before topping with remaining frosting (optional: you can reverse the order, and spread remaining frosting on top cake layer, then spread and drip the ganache on top). Let chocolate cool completely before slicing.

1 cup (200 g) sugar
1 ½ cups (200 g) all purpose flour
¾ cup (50 g) unsweetened Dutch-process cocoa (use a good quality cocoa!)
¾ tsp baking soda
¾ tsp baking powder
¼ tsp salt
3/4 cup (175 ml) buttermilk
6 Tbsp (85 g) unsalted butter, melted
2 large eggs
¾ tsp vanilla
½ cup (118 ml) boiling-hot water
3 cups (200 g) unsweetened, flaked coconut
1 cup (115 g) finely chopped pecans (use the nut of your choice)
14 oz (400 g) can caramel sweetened, condensed milk
1 tsp vanilla
⅔ cup (150 ml) heavy cream
¾ cup or 5 oz (150 g) good quality semi-sweet or dark chocolate chips, chunks or pieces

Steps:

  • Sift together the first six dry ingredients (sugar, flour, cocoa powder, baking soda, baking powder and salt) into a large bowl and set aside.
  • In a measuring jug, whisk together the next four ingredients (buttermilk, melted butter, eggs, and vanilla), and pour into a mixing bowl.
  • Add the sifted dry ingredients onto the liquid in the bowl.
  • Beat at low speed on a stand mixer, whisk by hand or use a hand mixer; scrape down the sides with a spatula, then mix at high speed for one minute.
  • Return the speed to low, and pour in boiling-hot water and mix well, using spatula to scrape the sides so the thin batter is evenly mixed.
  • Divide the mixture evenly into the 3 prepared pans. Bake 2 pans in the upper third of the oven, and one in the lower third.
  • After about 13 minutes, reverse the trays, and turn them 180 degrees so they bake evenly. Continue to bake for another 7 to 12 minutes, or until a tester comes out clean
  • Cool cakes in pans about 15 minutes, then run a thin knife around the edges and remove from the pans. Peel off the paper and allow to cool completely on a metal rack.
  • Put the caramel condensed milk in a medium sized pot and warm gently.
  • Stir in the coconut. Then add the chopped nuts into the condensed milk and mix well. Keep warm until ready to fill cake.
  • Place the heavy cream and chocolate in a pot over low heat and stir until evenly combined and smooth.
  • Remove from heat immediately, and allow to cool slightly, stirring from time to time
  • You can choose to put the cake together on your cake plate or stand, or, if you want to go heavy on the ganache, assemble the cake on the cooling rack with a tray underneath to catch the excess. If you don't have a large cake lifter, I would advise putting the cake on the serving plate to decorate.
  • Spread half of the coconut filling on top of one layer of cake while still on the cooling rack. Using a wet spatula helps the filling not to stick.
  • Top with another cake layer and repeat with the remaining coconut filling, and top with the last layer of cake
  • Place the cooling rack with the cake on top, over a tray to catch the dripping ganache. Make sure the ganache is not too warm, or all of it will run off the cake, but not too cool, or none of it will spread. You can check by pouring it onto the back of a spoon to see how it runs off.
  • Slowly pour the ganache onto the center of the cake, allowing it to run off the sides. You may need to tip the tray a little to "help" the ganache run off all the edges evenly
  • After all the ganache is poured, place the Inside Out German chocolate cake and tray in the fridge for at least an hour.
  • Once the chocolate ganache has set, place the cake on a serving plate. I have a cake lifter which works extremely well to move cakes.
  • Keep refrigerated and bring the cake to room temperature before serving.
  • Cake freezes well.

Three 8-inch layers Devil's Food Cake (*see note)
4 large whole eggs
12-ounces evaporated milk
1 1/4 cup dark brown sugar
1/2 tsp salt
6 tablespoons unsalted butter, cut into six pieces
3 teaspoons pure vanilla extract
7 ounces (approximately 2 & 1/3 cups) sweetened shredded coconut
1 3/4 cups pecans, toasted and chopped into pieces about the size of a pea (*see note)
6 ounces milk chocolate chips
6 ounces heavy cream

Steps:

  • Crack the eggs into a medium size saucepan and whisk to combine. Slowly pour in the evaporated milk, whisking it into the eggs as you pour. Add the brown sugar and salt and whisk to combine.
  • Add the butter and set the pan over medium-high heat. Bring the mixture to a boil, stirring constantly. Turn the heat down to medium and continue to cook, stirring constantly, until the filling is slightly thickened, about 6-8 minutes.
  • Pour the filling into a bowl and stir in the vanilla and coconut. Let cool to room temperature then cover and refrigerated until completely cool - at least 2 hours, and up to 3 days.
  • Put the chocolate chips into a small bowl. Heat the cream in a saucepan or in the microwave until small bubbles start to appear around the edges. Pour the hot cream over the chocolate and let stand for 5 minutes. Stir until the chocolate and cream are completely blended. Refrigerate for at least 1 hour and up to 3 days.
  • Stir the toasted pecans into the filling.
  • Place one layer of Devil's Food Cake onto a serving platter or cake plate. Spread the cake with 1/3 of the coconut pecan filling, spreading the filing to within a half inch of the edges of the cake. Top with a second layer of Devil's Food Cake. Spread the second layer with another third of the coconut pecan filling. Top with the third layer of cake and spread the top with the remaining filling.
  • Drizzle the milk chocolate ganache over the top of the cake. If you're using frozen cake layers, let the cake sit out at room temperature for 1-3 hours before serving. The assembled cake can be stored covered in the refrigerator for up to 24 hours. Bring the cake to room temperature before serving.

1/2 cup water
1 cup butter, softened
2 cups sugar
4 large eggs, separated, room temperature
1 teaspoon vanilla extract
2-1/2 cups cake flour

FROSTING:
1-1/2 cups sugar
1-1/2 cups evaporated milk
3/4 cup butter
5 large egg yolks, room temperature, beaten
2 cups sweetened shredded coconut
1-1/2 cups chopped pecans
1-1/2 teaspoons vanilla extract
ICING:
1 teaspoon shortening
2 ounces semisweet chocolate

Steps:

  • Line three greased 9-in. round baking pans with waxed paper. Grease waxed paper and set aside. In small saucepan, melt chocolate with water over low heat; cool. , Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in 4 egg yolks, 1 at a time, beating well after each addition. Blend in melted chocolate and vanilla. Combine flour, baking soda and salt; add to the creamed mixture alternately with buttermilk, beating well after each addition., In a small bowl and with clean beaters, beat the 4 egg whites until stiff peaks form. Fold a fourth of the egg whites into creamed mixture; fold in remaining whites., Pour batter into prepared pans. Bake 24-28 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a small saucepan, heat sugar, milk, butter and egg yolks over medium-low heat until mixture is thickened and golden brown, stirring constantly. Remove from heat. Stir in coconut, pecans and vanilla extract. Cool until thick enough to spread. Spread a third of the frosting over each cake layer and stack the layers. , In a microwave, melt chocolate and shortening; stir until smooth. Drizzle over cake.

1 (18 1/4 ounce) box German chocolate cake mix (I use Betty Crocker)
1 1/3 cups water
1/2 cup vegetable oil
3 eggs
2 cups heavy whipping cream
1 (23 ounce) package milk chocolate chips
1 tablespoon vanilla extract
1 (5 ounce) hershey symphony chocolate bars with almonds and toffee (this is the big bar)

Steps:

  • Prepare cake according to package directions.Pour into a decorative Bundt pan, and bake according to package directions.
  • Remove cake from oven, cool in pan 10 minutes, remove cake frompan and cool on wire rack completely.Place cake on serving plate.
  • Pour heavy whipping cream into heavy sauce pan. Cook, over medium heat, stir occasionally, so not to scorch. Cook just until cream begins to boil.Remove from heat.
  • Add chocolate chips to whipping cream, stir constantly until chocolate is completely melted and smooth. Stir in vanilla extract.
  • Pour chocolate into a bowl. Place in refrigerator, stir every 10 minutes, for 1-2 hours ( It seems to be different for me everytime), until chocolate is amost spreading consistency, but will still drip from sides of cake.
  • Spread ganache over entire cake, be generous.
  • With a potato peeler, shave chocolate bar over cake, making chocolate shavings, fall over frosted cake. Do as many as you like.

Try and use the best quality chocolate you can-it does make a difference. For a variation on the ganache, try adding some grated orange zest or chopped mint or even some finely chopped nuts.

150 g dark chocolate chips
250 g butter
200 g caster sugar
5 eggs (separated)
100 g sifted cornflour
200 ml double cream
200 g dark chocolate chips
25 g butter

Steps:

  • Preheat the oven to 170 degrees/gas 3.
  • Melt the chocolate in the microwave on low (or in a bain-marie).
  • In a bowl, cream together the butter and 100g of the sugar until light and fluffy. Beat in the egg yolks, one by one, mixing well.
  • In a separate bowl, whisk the egg whites until stiff. Add remaining sugar to them; whisk until thick and glossy.
  • Pour the chocolate into the creamed butter mixture and mix well.
  • Using a metal spoon, fold in the whisked whites and cornflour in two batches.
  • Pour into a lined 20cm cake tin, and bake for approx 40 minutes until set and cooked through.
  • Remove from oven and allow to cool in the tin for 15 minutes, then invert onto a serving plate.
  • For the ganache:.
  • In a pan, bring the cream to a boil. Place the chocolate into a heatproof bowl and pour in the cream, mixing well. Mix in the butter and spread ganache over the cake.
  • Allow to cool before serving.

Steps:

  • Bake the cake: Heat oven to 350 degrees. Butter three 8-inch round cake pans. Line the pans with parchment and butter the parchment. In a medium bowl, sift together flour, cocoa powder, baking powder, baking soda and salt, and whisk to combine well. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugar on medium-high until light and fluffy, about 3 minutes. Scrape down the sides and bottom of bowl. Turn the mixer down to medium and add the eggs, one at a time, beating well after each addition, again scraping down the bowl as necessary. Beat in vanilla and melted chocolate until smooth. In a small bowl, combine coffee and yogurt.
  • With the mixer on low, add half the flour mixture to the butter mixture, and mix to combine. Add the coffee mixture and mix to combine. Then add the remaining flour mixture, scraping the bowl one more time to make sure everything has been combined. Divide the batter between the prepared pans, smooth the tops and bake until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Transfer cakes in the pans to a rack to cool for 5 minutes. Run a knife around the edges to loosen the cakes and invert them onto racks to cool completely.
  • Meanwhile, prepare the filling: On two separate trays lined with parchment paper, toast coconut and pecans at 325 degrees, stirring occasionally, until coconut is deep golden brown and nuts are fragrant, about 5 to 10 minutes. Watch carefully - coconut and nuts can quickly turn from golden to burned. Remove from oven, roughly chop the pecans, and transfer both coconut and pecans to a large bowl.
  • In a medium saucepan, cook evaporated milk, egg yolks, brown sugar and salt over medium heat, whisking at first and then stirring constantly, until the mixture has thickened enough to leave a line on the back of a wooden spoon, 5 to 7 minutes. Be careful not to let the mixture curdle. Lower the heat as necessary.
  • Remove from heat and add the butter, stirring until it has melted. Add vanilla and stir to combine. Add the milk mixture to the coconut and pecans, stirring to combine. This mixture will thicken slightly as it cools.
  • To assemble the cake, set one layer on a serving plate. Top with 1/3 of the coconut mixture. Repeat two more times, so the top of the cake is covered in coconut.
  • If desired, finish with ganache: Heat heavy cream over medium heat until very hot. Place the chocolate in a medium bowl, and pour the hot cream over the chocolate. Let stand 5 minutes. Add salt and whisk until smooth. Let this mixture stand at room temperature, stirring occasionally, until it is thick enough to spread around the sides of the cake.
