TUNA SPAGHETTI SALAD
This is an excellent change from the traditional creamy tuna pasta salad. Makes a great main course for a light dinner or lunch, and is also great on a bbq buffet or to take to a potluck. Note that you can prepare the sauce while the pasta is cooking, making this quick too. While it keeps well for a day or two, you can also cut it in half to feed two.

Steps:
- Put on a large pot of salted water to boil; cook spaghetti until al dente stage; drain well and set aside.
- Meanwhile, in a large bowl, whisk together oil, garlic, hot pepper flakes and salt and pepper until well combined.
- Stir in tomatoes, roasted peppers (you can substitute raw red bell peppers if you wish, but the taste will be a little different; still good, just different), tuna and olives (I use greek kalamata olives).
- Next, stir in parsley and basil (do not substitute dried) and green onions.
- Add the well-drained spaghetti to bowl and thoroughly combine with sauce.
- Taste; add more salt and pepper if you wish.
- This is best served either warm or at room temperature; if you wish to make it ahead of time, cover well and refrigerate, but bring it back to room temp before you serve it.
TUNA PASTA SALAD
Here's a potluck idea to please a crowd! Easy tuna pasta salad is made with convenient canned tuna and frozen peas, plus an extra-fun topping: potato chips!

- Cook the pasta according to the package directions. Drain and rinse under cold water to cool the pasta. Let stand 5 minutes.
- Whisk together the mayonnaise, sour cream, lemon juice, parsley, salt, garlic powder, and pepper in a large bowl. Add the pasta, tuna, peas, celery, bell pepper, and onion. Gently fold together until well coated, making sure not to break up the tuna too much.
- Cover and refrigerate for 30 minutes. Spoon into a serving bowl lined with lettuce leaves. Top with chips just before serving.
SPAGHETTI WITH TUNA, TOMATOES, AND OLIVES
This fresh take on tuna pasta salad is just as good warm as it is straight out of the refrigerator.

- Combine tomatoes, tuna, olives, parsley, pepper, 3 Tbsp. oil, and 1 tsp. salt in a large bowl.
- Cook spaghetti in a large pot of boiling salted water, stirring occasionally, until al dente. Drain and add to tomato mixture. Stir vigorously and add more oil as needed to fully coat. Season with salt.
- Transfer pasta to a serving bowl or platter. Drizzle with lemon juice and serve.
CHILLI TUNA PASTA SALAD
One of my favourites...for best results be sure to use good quality tuna. I usually use Sirena brand tuna.

Steps:
- Cook the pasta in a large pan of boiling water, uncovered, until it is just tender. Drain the pasta, then rinse it under cold water.
- Meanwhile, boil, steam or microwave the beans until just tender, then drain. Drain the tuna over a small bowl, reserving the oil for the Dressing. Flake the tuna into large chunks with a fork.
- Just before serving, combine the pasta, beans tuna, herbs and capers is a large bowl then drizzle with the Dressing. Serve the salad topped with rocket leaves.
- DRESSING.
- Combine all of the ingredients with the reserved chilli oil in a jar and shake well.

- Cook pasta according to package directions. Drain and rinse under cold running water. Drain again.
- Place pasta in a large bowl. Add vegetables, olives, salad greens and tuna. Pour on vinaigrette, toss to coat.
- Sprinkle with feta cheese.
